Anchoïade

Anchoïade is a tasty spread made with anchovies and capers, a staple of Cuisine de Provence, it is a fragrant, flavourful appetizer to spread onto crusty bread or to dip crudités in; and it also takes me back to my recent holiday on la Côte d'Azur... (Was it only last Friday, I was drinking lemon-y cocktails by the sea?!) Have a good one!
Ingredients (makes about 1/3 cup):
a small garlic clove
a dozen anchovies, kept in oil
1 tablespoon capers
1 1/2 tablespoon extra virgin olive oil
a small bunch fresh Parsley or Chervil 
Peel and halve garlic clove. Add to a mortar, and grind into a pulp with a pestle.
Thoroughly drain anchovies and capers, and add them to the mortar as well. Grind energetically with the pestle, until mixture becomes a paste. Gradually stir in olive oil, emulsifying.
Finely chop Parsley or Chervil, and stir into the mixture until well-combined.
Serve Anchoïade with crudités, such as radishes, Baby Carrots, Cherry Tomatoes or cucumber, or spread onto toasted Baguette.

As a special treat during my cooking classes in Provence, we often have a catered picnic lunch under the pine trees near the belvedere above the village of Gigondas. It is chef Johannes Sailer and his staff who drive up the hill (we often hike) and deliver a sumptuous picnic of fresh foods, usually including a giant platter of vegetables to accompany this exquisite anchovy dip, a typical Provençal sauce made up of salt-cured anchovies, olive oil, vinegar, and garlic. I like to serve anchoïade with freshly steamed whole cauliflower showered with a touch of fresh parsley from the garden.
Ingredients
Makes about 1¼ cups
8 plump, salt-cured whole anchovies (or 16 oil-packed filets)
2 plump cloves garlic, peeled
2 tsp. best quality red wine vinegar
1 cup extra virgin olive oil
Fine sea salt
Freshly ground black pepper
Instructions
Step 1
If you’re using salt-packed anchovies: At least 5 hours (and up to 24 hours) before preparing the anchovy dip, soak the anchovies: Rinse them, cover with cold water, and refrigerate until ready to prepare the dip.
Step 2
Remove the anchovies from the water, drain, and separate into fillets, pulling them apart and removing the central bones. Rinse and drain.
Step 3
In the bowl of a food processor or blender, combine the drained anchovies, garlic, and vinegar. Process to blend. With the machine running, slowly pour the oil through the tube and process again. Season to taste. Stir again before serving.

Cannellini-Tahini Canapés

This recipe was inspired by someone I know. He made a simple crostini snack for himself with heirloom tomatoes and anchovies, and it looked wonderfully salty and savory. I usually keep a few tins of anchovy fillets for pasta and anchoiade, but this was an interesting way to finally eat them in a filet form.
Not everyone likes anchovies. Or hell, fish in general. The anchovy is just a topping, so feel free to omit it and use something else instead. [Blistered cherry tomatoes would be fantastic.]
This recipe is in two parts: making the purée and assembling the actual canapés.
Cannellini-Tahini Purée
For about 1 1/2 cups:
15.5 oz can cannellini beans, drained and rinsed
2 tbsp. tahini
2 tbsp. lemon juice
2 medium cloves garlic, minced
1/2 tsp. kosher salt
In a food processor, purée the beans until mostly smooth and creamy. Add remaining ingredients and purée until incorporated.

For 8 servings:
1 baguette
Cannellini-Tahini Purée (see recipe above)
1/3 c. minced fresh parsley
4 oz. anchovy fillet in olive oil, optional
Slice baguette into 16-20 slices, about 1/4-inches thick. Note: Feel free to toast the baguette if you like — I didn’t want to include this step because the baguette I buy has this perfect crunchy crust to it; I feel like it’s unnecessary.
Spoon about a tablespoon of purée on top of each baguette slice. Sprinkle a pinch of parsley on top. If desired, add a whole or half of an anchovy filet.

Jour 4: Castel San Angelo, Parc Borghese et toujours de la pluie !
Ce matin, on se lève encore un peu plus tôt, belle preuve de notre fatigue grandissante. Après notre petit déjeuner, on ouvre les volets : le climat semble un peu plus clément que la veille ! Allez, on enfourche des vélos pour aller en direction du Castel Sant Angelo : à l’origine, ce château était le mausolée de l’empereur Hadrien, puis devint au VIè siècle une forteresse pontificale. Une grande avenue relie ce château et la place Saint Pierre, ainsi qu’un souterrain permettant d’atteindre le Vatican. Le reste de ce château est aujourd’hui transformé en musée. Autre prouesse artistique, le Pont Saint Ange traversant le Tibre. Ce pont fût bâti en 136 et est recouvert de statue depuis que le Bernin y installa en 1668 dix statues d’anges portant les instruments de la passion du Christ. En étant à proximité du château, on voit une foule énorme au niveau de la place Saint Pierre. Après quelques minutes de réflexion, on se motive et marchons en direction des milliers de personnes qui s’y attroupent. Après 2 minutes de marches, on voit a foule qui commence à sortir de la place et…marcher dans notre direction ! On questionne alors des américains pour nous dire que le pape était présent pour une messe afin de bénir la foule ! Un nouveau fail, on a bien failli rencontrer le pape, ça ne s’est joué qu’à une 15aine de minutes !! On continue notre petite marche en longeant le fleuve, passant devant le grand Tribunal de Rome et traversant pour continuer plein nord. On passe par le mausolée d’Auguste : construit en 28 avant JC, Mussolini le fit restaurer afin d’en faire son propre tombeau. Cet édifice était visiblement l’un des plus imposants de Rome, mais il est depuis plusieurs années dissimulé derrière des barrières pour restauration.. C’était toutefois l’occasion de nous renseigner sur Mussolini, un acteur célèbre de la WWII dont on ne sait finalement pas grand chose ! Nommé Premier Ministre en 1922, Mussolini devint de plus en plus populaire puis se rapprocha de Hitler suite à sa volonté de conquérir des colonies en Afrique. L’Italie et l’Allemagne Nazie entrent donc ensemble dans la Seconde Guerre. Suite à ses très nombreux échecs militaires, Mussolini se fait emprisonner puis fuit à l’aide de parachutistes allemands. Il finira par se faire retrouvé, tué et son cadavre ainsi que celui de sa maîtresse seront exhibés sur une place à Milan….Belle histoire hein ? On était surpris de la chute pour tout vous dire. On poursuit alors notre marche matinale en allant vers la Piazza del Popolo , place très spacieuse et  circulaire sur laquelle 3 églises célèbres siègent : d’un côté de la place, 2 églises quasi jumelles sont situées de part et d’autre de la Via del Corso. De l’autre côté de la place, c’est la Santa Maria del Popolo qui trône, assez compliquée à localiser bizarrement. Mais c’est surtout l’intérieur qui vaut le détour, non pas avec l’architecture, mais plutôt les différentes chapelles qui accueillent des œuvres uniques : mosaïques au sol & chapelle par Raphael, toiles du Caravage (maitre des clairs obscurs), statues du Bernin… Après cette belle visite, on monte quelques marches pour nous retrouver au Pincio, une terrasse qui donne une vue imprenable sur Rome et surtout sur le Vatican. On descend ensuite pour manger une petite glace, et marcher sur la Via del Babuino en direction de la Piazza di Spagna. Une très belle place assez célèbre avec une fontaine depuis laquelle il est possible de gravir un certain nombre de marches (en esquivant les touristes qui s’y agglutinent pour manger) et d’arriver sur une très jolie église blanche. L’aspect de cette place est très reposant notamment grâce à toutes ces fleurs qui la ornent ☺ . Cette place est nommée ainsi car l’ambassade d’Espagne soit à côté, et bien que des fonds français permirent de financer l’escalier menant à l’église (française aussi) de la Trinité des Monts. Après toutes ces visites, nous aussi on a bien faim ! On s’achète alors 2 pizzas à emporter, commandons 2 Tiramisu chez Pompi (le meilleur de Rome visiblement) et marchons vers le Parc Borghese qui surplombe toute la partie Nord de la ville. Après ce petit pic nique dans le parc, on souhaitait à la base se promener à l’intérieur, mais vu l’immensité du parc et l’impossibilité de réserver les musées (c’est ça d’arriver au dernier moment et de ne pas anticiper plus tôt !), on préfère se diriger vers une activité qui a l’air beaucoup plus fun : le petit tuk tuk / vélo à assistance électrique ! On réserve donc ça pendant une heure, faisons quelques tours du parc tout en nous amusant dans les descentes (moins dans les montées), en atterrissant sur des routes ou encore en faisant des dérapages dans les graviers ! 1 heure de fun qui fait du bien si on oublie le pollen qui volait de partout et la belle crise d’allergie qui en a résulté toute la journée ^^ La journée touchant à sa fin, on enfourche de nouveau nos vélos en direction du sud est de la ville afin d’aller y voir 2 petits points d’intérêt : la Bocca de la Verita, qui restera dans notre tête qu’un mythe et pour cause, on est arrivé 2 minutes après la fermeture… Bon, rien de très grave quand on se dit que c’est une plaque d’égout gravée d’un visage et réputé pour « avaler » la main des menteurs. En revanche, un autre point assez proche valait bien plus le coup sur l’une des collines de Rome : le Buco della Serratura di Roma. En arrivant, on voit uniquement une queue de personnes attendant devant une porte. Plus précisément, les personnes sont les unes à la suite des autres pour regarder au travers d’une serrure. Après quelques minutes d’attente vient notre tour, et quelle ne fût pas notre surprise en regardant à notre tour : on peut y observer une allée, certainement au milieu d’un jardin mais entourée sur les côtés et au dessus par des haies, et au bout de cette allée : la coupole de la Basilique Saint Pierre illuminée. Magnifique vision… Après cela,  on termine la soirée par un petit apéritif tous les deux dans le quartier de Tastevere avec un concept assez sympa : en payant une boisson, on a droit de piocher dans un buffet d’antipastis composé de différents mets : croquettes de courgettes, salades, anchoiades… Le tout toujours sous une pluie battante ! On attend un peu que ça se calme pour continuer notre soirée culinaire à Alla Carbonara avec Leonardo, un ami romain qu’Anaïs a rencontré lors de son semestre d’échange à Chicago. On parle de tout et de rien, et nous apprend que par exemple contrairement à ce qu’on a pu lire, beaucoup de romains sont admiratifs du monument à Pierre-Emmanuel. Après cette bonne soirée, on se couche avant d’entamer notre dernière journée !

Friday madness @nammos.dubai It was packed as usual with people either dressed to the nines or in casual beach attire, pumping music and non-stop people watching. Good thing the food was excellent as usual and service pretty efficient despite both the restaurant and the beach packed. • We shared several starters: a classic Greek salad, the tuna tartar with yuzu (from the Japanese selection), fried calamari with sea urchin mayonnaise, Mediterranean spread platter with hummus, white tarama with bottarga tzatziki, anchoiade with burrata and grilled pita, and the fried aubergine millefeuille with a few bottles of @chateauminuty rosé. • Our main course was a grilled Angus tomahawk with grilled padron peppers, grilled pita and the tastiest crispiest vinegar-flavored-double-fried potatoes I have ever had in Dubai.
