Peel the sweet potatoes and trim off the ends. Slice each into 1/2-inch thick rounds. Using a melon baller, scoop a small well in the center of each slice. Spray or brush a baking sheet with olive oil, arrange sweet potato slices (well-side up), spray with olive oil, and sprinkle with Italian Herb Blend. Ingredients: 2 cups gluten-free rolled oats. 1 cup unsweetened shredded coconut. 1 cup mixed nuts such as almonds, cashews, and pecans, chopped. 1/2 cup dried fruit such as raisins, cranberries, or apricots, chopped. 1/2 cup 88 Acres sunflower seed butter. 1/2 cup honey or maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/2 teaspoon salt.
Instructions: Preheat your oven to 350F 175C. Line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal. In a large bowl, mix together the oats, shredded coconut, chopped nuts, and dried fruit. In a separate microwave-safe bowl, combine the 88 Acres sunflower seed butter, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Microwave for 30-60 seconds until everything is melted and well combined. Pour the wet mixture over the dry ingredients and stir until evenly coated. Transfer the mixture to the prepared baking dish and press it down firmly using a spatula or your hands. Bake for 20-25 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely in the pan. Once cooled, lift the bars out of the pan using the parchment paper overhang and cut into bars or squares. At this point, we’ve all heard that chocolate can be good for you, which sounds perfect. But the truth is that cacao is even a healthier alternative for you. Sadly, most of the chocolate products you find in stores are high in calories, with high amounts of sugar and unhealthy oils.
On the other hand, cacao, the purest form of chocolate, is called a superfood because it offers impressive health and nutrition benefits. For example, unlike processed chocolate, cacao retains its high antioxidant content.
According to a 2008 study published in the “Journal of Agricultural and Food Chemistry,” 60-90% of the original antioxidants in cacao are lost through “Dutch processing”, a technique developed in the early 19th Century to reduce chocolate’s bitterness.
