A smooth and warm butternut squash soup with a touch of heat from the spices. Toasted cashews on top add extra texture and flavor.
Ingredients: 1 medium butternut squash, peeled and cubed. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1/2 cup cashews, toasted. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1/2 teaspoon ground cinnamon. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, saut until translucent. Add cubed butternut squash, ground cumin, ground cinnamon, salt, and pepper. Cook for 5 minutes, stirring occasionally. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes or until squash is tender. Using a blender, puree the soup until smooth. Serve hot, garnished with toasted cashews.

Instructions: Drain and rinse cashews that have been soaked. Put cashews, coconut milk, maple syrup, coconut oil, vanilla extract, and salt in a blender. Mix until it's creamy and smooth. Move the mixture to a container that can go in the freezer. Mix in the crushed cookies until they are spread out evenly. The food should be frozen for at least 4 hours, or until it is firm.
