Classic Eggnog Recipe with Ceylon Cinnamon
Ingredients:
· 4 large eggs
· 1/2 cup granulated sugar
· 2 cups whole milk
· 1 cup heavy cream
· 1/2 teaspoon pure vanilla extract
· 1/2 teaspoon ground Ceylon cinnamon (adjust to taste)
· 1/4 teaspoon ground nutmeg
· 1/4 cup rum (optional, adjust to preference)
· 1/4 cup brandy (optional, adjust to preference)
· Pinch of salt
Instructions:
Prepare the Egg Mixture:
In a medium bowl, whisk together the eggs and sugar until smooth and creamy.
In a saucepan over medium heat, combine the milk, cream, vanilla extract, Ceylon cinnamon, nutmeg, and a pinch of salt. Stir frequently until the mixture is warm but not boiling.
Temper the Eggs:
Slowly pour a small amount of the warm milk mixture into the egg-sugar mixture while whisking constantly to avoid curdling. Gradually add the rest of the warm mixture into the eggs, whisking continuously.
Cook the Eggnog Base:
Return the combined mixture to the saucepan over medium heat. Cook, stirring constantly, until it thickens slightly (about 5-7 minutes). It should coat the back of a spoon. Be careful not to let it boil.
Cool and Add Alcohol (Optional):
Remove the saucepan from heat and let the eggnog cool for about 30 minutes. Once cooled, stir in the rum and brandy, if using.
Chill:
Refrigerate the eggnog for at least 2 hours before serving to let the flavors meld together.
Cinnamon Sugar Rimmed Glasses:
Mix equal parts ground Ceylon cinnamon and granulated sugar in a shallow dish (about 2 tbsp of each).
Rub a slice of lemon or orange around the rim of each glass to help the cinnamon sugar stick.
Dip the rims of the glasses into the cinnamon-sugar mixture, ensuring it sticks evenly.
Pour the eggnog into the prepared glasses, garnish with a sprinkle of ground cinnamon or nutmeg if desired, and enjoy!

I have five squirrels that come to visit me: Eeny, Meeny, Miny, Gus, and Cheatah. The problem is they bury the walnuts I give them in my potted plants and then dig them up. Absolute rascals! The cheekiness of it! Biting the hand that feeds them. Well, the best way to deter them is to spray some Ceylon Cinnamon Leaf Oil, diluted to 10% with water, on the topsoil. Do not use the more expensive Ceylon Cinnamon Bark Oil. The much cheaper Ceylon Cinnamon Leaf Oil is better here because it has a harsher aroma. Not to worry, it will not damage your plants when diluted. You have to apply a thin layer to the topsoil twice a week or so. Okay, I cheat sometimes. Sometimes I apply it undiluted because I’m a bit lazy. That’s okay as long as you don’t spray any plant leaves because, at 100%, the Cinnamon Oil will burn the plant leaves. I tried applying the Cinnamon Leaf Oil on the edge of the planters, but this way it evaporated too fast. It is best to apply it to the top layer of soil. Once they get used to it (in about two weeks), you can apply it sporadically. Then the squirrels and other bugs will get the message: Do not dig up your plants.

After spending a frustrating amount of time trying to make ice pops or popsicles, we finally perfected it courtesy of ChatGPT. The AI suggested adding cornstarch or arrowroot powder to prevent the sweet syrup from sinking to the bottom, leaving just plain ice on the top. Not ideal, right? Adding cornstarch makes the flavor even. The AI duly came up with a recipe. Pretty neat, right? But it needed some fine-tuning. We discovered that adding too much alcohol for the spiked version was not ideal, as alcohol has a lower melting point. We berated the AI, and it suggested a modification. It made a few other mistakes and got another telling off from us. But together, we came to the final result. We think it is near perfect. Can you do it better? Give it a try.
