Water Kefir Grains
Water Kefir Grains are a symbiotic culture of bacteria and yeast that turn sugar into lactic acid during fermentation. The grains are a combination of lactobacillus, brewers yeast, and acetic acid bacteria. Water kefir grains can be used to make a probiotic beverage called water kefir and on the other hand milk kefir grains called Milk Kefir. Water kefir is similar to milk kefir but uses water instead of milk. The result is a fizzier drink with less protein and more vitamin C than milk kefir. are you drinking like dried powdered kombucha or did you brew it with a starter kit?
Neither its store bought however I do need to get into brewing kombucha I’ve just never fermented a liquid before.. but I need to be brave.. though it is disconcerting that so many recipes are like “yeah so your second ferment has a 50% chance of becoming a bomb,”

Think I made nearly-perfect chanterelles tonight for dinner
#slice in half to maximize surface area touching pan & lightly salt to bring out moisture#heat up skillet nice n medium hot so they dont burn but they start to caramelize & bring out their moisture#most importantly skillets completely dry at first#otherwise theyll soak up the oil n u just make mush#wait til water starts to come out#flip very occasionally#have a nice butter lightly browning in the meantime#throw in the evenly-chopped elephant garlic once the mushroom moisture is starting to empty#once the mushrooms start to get shriveled start to add in the butter#add tarragon & dill near the end#creme/kefir would go well i think but cooking for the mildly lactose intolerant#i couldve browned the butter more i think#maybe add the taragon & some garlic to the butter too to infuse it a bit?#next time#might just burn the tarragon/garlic tho 🤷♀️ different sturdinesses

3. After 24 hours, taste test your kefir by stirring in a bit more sugar if needed (it should be slightly sweet). Now you can strain through a cheesecloth-lined strainer into another jar or bottle with an airtight lid (we recommend using mason jars), and refrigerate for up to 1 week!
