decided to try something new from the pho place and got beef stew instead and it’s sooo good it’s literally nihari with rice noodles
#and not just bc it’s beef stew like the flavors are exactly the same and it’s more of a salan than a soup or stew. and w lime and cilantro..#idk the vietnamese name for it (or if it’s even a vietnamese dish) but I’m obsessed#rooh.txt

the man who owns and runs the thai restaurant in my town knows me by name. he is one of the kindest and most thoughtful men i know. i started ordering from his place back in january, which was when i got my fibromyalgia diagnosis. back then i was using a walker, had limited mobility in my entire body but especially my hands, and was very visibly in pain. i always ordered the same thing: yellow curry with no meat, potatoes and carrots only (i have texture and other dietary issues). he always made it a point to make sure i could get out the door and carry the food safely. he had his workers package the food so that it was easier for me to open. as i kept coming back and i told him a little bit about my health status, he would always encourage me to keep going. he told me about how the spices he used were good for inflammation and began to edit the recipe just for me so that spices that were even better for fighting inflammation were used. he’d give me extra portions and despite the fact that i would tip every time, i realized later that he never charged my card for them. as time went on and my condition began to get better, especially with the help of a physical therapist, he would make encouraging remarks and tell me how happy he was for me. the day i came in without my walker, he practically jumped for joy, and despite my insistence, he gave me my meal for free that day. i continue to make progress with my conditions and i continue to go to the thai place. this man who does not know me personally and who i hardly know anything about is one of my favorite people. it’s interactions with humans like these that make loving life easier. and his curry really does help my chronic condition. it’s comfort food taken to the next level.
#good humanity#it takes a lot to make a specific dish for one person#but hey gotta love your regulars#I was a regular at a Vietnamese deli for a while when I worked at my old job#I used to order the same dish most of the time#and one time they came over to ask my opinion because they had a new recipe#I was so 🥺

Green Beans - Braised Green Beans with Fried Tofu You would not believe that this dish is actually Vietnamese! Even my meat and potatoes husband loves it! My recommendation is to have plenty of white rice on hand since the sauce is so tasty! Great as part of an Asian meal.

Vịt quấn (is it??) for lunch and nem nướng for dinner.
That vịt dish. I saw a menu outside saying it was 50k. But damn no. It is nearly 200k (why did I still stay after seeing the menu). And it is not even that good, not worth the price at all. Every thing is cold, seems like they had just pull them out of the fridge. Maybe the price is mostly for the fake duck.
Nem nướng.

ghhh... got lost under mexican cooking tutorials...
#they look so yummy....#i've never cooked mexican food so im not very familiar with how it works#like when i cook from scratch it's often japanese food (and sometimes chinese) so im familiar with those condiments/seasonings#and techniques and such#so you could leave me without a recipe and i'd be able to make something decent#i mean im not like super SUPER familiar with it but that's because i dont cook often enough for that. but as far as cooking familiarity goe#japanese is what i'm most familiar with#cannot say the same about mexican#i want to try out some mexican recipes#and also do some more of the chinese ones#also like middle eastern cooking.#also i'd like to figure out how to cook vietnamese food that doesn't just taste like fish sauce#i'll use like a QUARTER of the fish sauce a recipe says. and i can still. only. taste. fish sauce.#and everything smells like it too.#idk how vietnamese places manage to not get that to happen#unityrain.txt#tw food#also. i am very into finding authentic/traditional recipes for things. which is not at all how my mom would do it lol#if i wanted a recipe for dumplings i would either take my time to find chinese cooking blogs and read the “about” section#or find cooking tiktoks/videos where the grandma is helping and cannot speak any english so the granddaughter translates#and then compare like recipes from multiple places#but my mom would just. go to the first mommy blog that comes up where the suburban mom of three running it's entire asian seasoning#consists of soy sauce garlic ginger power and a fuck ton of cornstarch#needless to say. “”ethnic“” dishes my mom would find did NOT taste great.
