I still do more research almost every day. I’m running out of materials related directly to keto, so I’m studying the bio-chemical reactions in the human body.... more specifically so I can respond to people who are afraid for me eating saturated fats. My brother still doesn’t approve of that part, but he does like Keto as a whole.
I feel a lot of foods are fairly sweet and flavorful on their own now. It seems like my taste buds were dead until recently. All I wanted before was something sweet, but I look forward to spaghetti squash with ground beef which has become a staple. It’s the favorite recipe for 3 people here and I change it up occasionally. There are times where the family is too busy and ends up eating out instead of coming home, so I end up eating it by myself practically. If I cook 1 squash, I’ll mix it with 2-3 other veggies in the house and 2 4lb packs of ground beef. This will last me 3 days. It makes everything so much easier when I don’t have to think about it everyday and just make bulk meals.
I’ve also just picked up an instant pot from Costco yesterday. I really love yogurt and want to try making some with heavy whipping cream. The bacteria eat most of the sugar, but not all of it. I want to see if I can make it even less sugary. For the most part I eat no carbs unless it comes from a vegetable, in which case much of it is fiber. Yogurt has been my exception since milk has milk sugars in it(lactose).
I have a few other things I want to make in the instant pot as well. I have an oxtail bone broth in there right now. I also want to try making a cheesecake.
