Ingredients: 1 cup quinoa, cooked. 12 rice paper wrappers. 1 cucumber, julienned. 1 carrot, julienned. 1 red bell pepper, thinly sliced. 1 avocado, sliced. 1 cup fresh mint leaves. 1 cup fresh cilantro leaves. 1 cup cashews, soaked. 3 tablespoons soy sauce. 2 tablespoons rice vinegar. 1 tablespoon maple syrup. 1 tablespoon lime juice. 1 teaspoon sesame oil. 1 garlic clove, minced. Water, as needed.
Instructions: Cook the quinoa and put it in a bowl. Add the carrot, red bell pepper, avocado, mint, and cilantro. Put a rice paper wrapper in warm water for about 15 seconds, and then pull it out. Place the wrapper flat on a clean surface and add some of the quinoa mixture to the bottom third of it. To make a spring roll, fold the sides of the wrapper over the filling and then roll it up tightly from the bottom. Do it again with the rest of the wrappers and filling. Using a blender, blend soaked cashews, soy sauce, rice vinegar, maple syrup, lime juice, sesame oil, garlic, and water until smooth and creamy. You may need to add more water to get the right consistency. Put the cashew sauce on the side and serve the spring rolls with it.

Ingredients: 4 large russet potatoes, scrubbed and cut into fries. 2 tbsp olive oil. 1 tsp paprika. 1 tsp garlic powder. 1/2 tsp onion powder. 1/2 tsp chili powder. 1/2 tsp salt. 1/4 tsp black pepper. 1 cup vegan chili. 1/2 cup vegan cheese, shredded. 1/4 cup vegan sour cream. 2 green onions, thinly sliced. 1/4 cup pickled jalapenos, sliced. 1 avocado, diced.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, onion powder, chili powder, salt, and black pepper until evenly coated. Spread the fries in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. Bake for 25-30 minutes, flipping halfway through, until fries are golden and crispy. I’m so thankful to God that I was able to make these chocolate covered cherries and that it went safely!! I found a recipe online that said to first coat frozen cherries with vanilla yogurt, then freeze for about 15 minutes. While waiting is when we mix chocolate chips (from @enjoylifefoods) with a little coconut oil (I used a little butter instead bc I didn’t have coconut oil, but I wouldn’t specifically recommend this bc the chocolate solidified again pretty quickly (😂) and I had to re-heat it with some (almond) milk to make it thinner, which resulted in the whole thing clumping up a lot which is why some of the cherries look kind of messy 😂😂 but it still tasted nice bc eventually the cherry juice and yogurt melted into the chocolate which gave it a nice flavor haha). So anyway, I melted the chocolate on the stove to be ready at the end of the 15 minutes. Then I coated the frozen yogurt-covered cherries with the melted chocolate and froze it overnight! I was also curious what it would taste like without the yogurt coating, so the photo with the yellow plate shows cherries with solely a chocolate covering! On my gluten free vegan journey I've tried new and interesting recipes and foods Today I want to share with you a really easy gluten free bagel recipe you can make at home in the air fryer or oven with two simple ingredients. Ingredients: 1 cup gluten-free vegan yogurt, I like @foragerproject 2 cups gluten-free flour, I like @bobsredmill gluten-free flour. Instructions: Preheat your oven to 400°F 1. In a large mixing bowl, combine the self-rising flour and yogurt. Mix until a dough forms. 2. Knead the dough on a lightly floured surface for a few minutes until it becomes smooth. 3. Divide the dough into 4 equal pieces and shape each piece into a ball. 4. Softly flatten each ball of dough into a circle and poke a hole in the center of each one with your finger. 5. Place the bagels on a baking sheet lined with parchment paper. 6. Bake for 15-20 minutes, or until the bagels are golden brown. 7. Remove from the oven and allow the bagels to cool for a few minutes before serving. Optional: You can spread some gluten-free vegan butter on the bagel and top with your favorite seeds or spices before baking, such as sesame seeds, poppy seeds, or garlic and onion powder.
