Texan slow cooked brisket from Killen's in the Houston area. Oh my my!!! It's delicious 😋 😍 it was sooooooo tender that I didn't need a knife. It was perfect and was beyond my greatest expectations ❤️ if you're ever in the Houston area, you gotta check this place out. But get there early because they close once they're sold out and the food is so good that they sell out quickly. I tried the pulled pork and the brisket, and they were both fabulous!! 😋😋😋🤠❤️ now, I want some more. I should've gotten some to go because it was sooooooo good that I cleaned my plate. Silly me. 😊

We put our food fate into our friends’ hands while we stayed with them, and they over-delivered to say the least. If our first day of local beer and Tex-Mex wasn’t good enough, we were introduced to Texas barbecue culture properly the next morning after having a modest egg, cheese, and bacon sandwich on a biscuit at their house. This was necessary to stave off the inevitable hanger that would come from waiting in line at one of the many excellent barbecue places, but not so filling that we wouldn’t want to eat.
The obvious choice is to go to Franklin Barbecue, but the line there is SO LONG and our time with our friends was so short that I’m glad we were able to spend the morning on their couch, cuddling their adorable dogs, and drinking coffee and tea instead. They had other plans for us anyway; specifically, to take us to Interstellar BBQ, which happens to also show up on the Eater Essential 38 Restaurant List, so I trusted them completely.
(Sidebar: they tried to apologize for taking us to places “in strip malls” and we were horrified that we thought that we’d be upset by that! Good places are good places, period.) 
After having the food, I was not surprised we had to wait in a line to get in here, because the food was incredible. We got a taste of the brisket when we got inside which blew our minds, and we even decided to go for it and try their brined turkey. I’m not a big fan of the whole roasted turkey because most turkeys are too big to cook well, but this smoked breast was actually flavorful and tender and moist and delicious. I’m absolutely ruined for turkey now, which is going to make Thanksgiving a little awkward. 
We were also told that Interstellar was known for their sides, and once again, our expectations were exceeded--the chorizo grits were creamy, the smoked gouda mac and cheese creamy and divine, and the jalapeno slaw a wonderful balance to all of that richness with its sharp and spicy crunch. The best part was that our friends could take all of the leftovers with them to have a second meal (or several meals, for that matter) later.

Gage's BBQ San Saba Texas. Doesn't look like much when you drive by, but I was hungry and BBQ sounded good, so I pulled in. I ordered the slice brisket sandwich and man was it good! Great big toasted bun piled up with thick warm slices of perfectly seasoned brisket. I'm in the retail beef business and know a little about what I'm eating, and this was a good brisket, clean smoke flavor, and a nice rub. Gage's isn't Franklin's or Hurtado's, but it's a quality Hill Country taste.
