Easy Vegan Peach Cobbler Muffins

Carrot muffins, 12 muffins, bottom of muffin form 4.5 cm diameter.

Ingredients

100 g softened butter

67 g brown sugar

67 g granulated sugar

3 eggs (preferably at room temp)

140 g flour

1 1/2 teaspoon baking powder

3/4 teaspoon vanilla sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

185 g grated carrot (roughly equal to 1 very big or 2 regular sized carrots)

35 g chopped nuts (or raisins or something crunchy without too much flavor)

Nuts can be easily peeled after 5 minutes at 175 C in the oven, if nut peel is something you dislike.

How to:

Ready the forms. Could be paper liners for muffin tin or silicone forms or what have you. Just make sure you can get the muffins out when done

Cream/whisk butter and sugars in a reasonably sized bowl until light brown. Everything goes in this bowl so make sure there's space for it.

Add eggs, one at a time and whisk until incorporated before the next goes in

Sift dry ingredients and stir them in over three rounds

Preheat convection oven to 175 C

Add carrots and crunch and fold them in until incorporated

Add 1 tablespoon batter to each muffin form. It has been calculated to fit perfectly

Bake for 20-25 minutes at 160 C convection. Check for done by putting a toothpick or similar pointy thing in the thickest part of 3 muffins. If toothpick is clean when pulled out they are done.

Cool for 5-10 minutes in the tin and then cool completely out of the tin

When completely cooled you can add a cream cheese frosting to them if that's something you like.

Cream cheese frosting!

Ingredients:

85 g softened butter

1 teaspoon vanilla sugar

85 g powdered sugar

Zest and juice from 1/2 lemon (optional)

85 g soft neutral cream cheese

Finely chopped nuts or other crunchy pretty thing for bit of texture and ✨aesthetics✨ (preferably the crunchy thing you put in the muffins. For continuity of flavor and texture)

How to:

Cream/whisk everything except cheese and sprinkle until white

Gently fold in the cream cheese

Spoon into muffin cups. Bake at 350 for 25 minutes. Remove to racks to cool. Serve with whipped cream cheese.
