Ingredients 1/2 lb Italian sausage (hot or mild) 1/2 cup diced yellow onion 2 cloves garlic, minced 2 cups low-sodium chicken broth 1 ½ cups heavy cream 2 ½ cups small broccoli florets 2 cups uncooked small pasta 1/2 cup sun-dried tomatoes, chopped 1/2 cup grated Parmesan basil for garnish Instructions In a large skillet, brown the sausage and onion over medium-high heat until the sausage is no longer pink. Add the garlic and cook for 30 seconds. Use a slotted spoon to remove the meat mixture to a plate, draining excess fat while leaving 1 tablespoon in the pan. Add the chicken broth, cream, broccoli, pasta, and sun-dried tomatoes to the skillet. Bring to a boil, then reduce heat to a simmer and cover with a lid. Cook for 7-9 minutes at a low simmer, stirring occasionally but replacing the lid quickly. Cook until the pasta is tender; you may need to add more liquid and cook longer if necessary. For crisper broccoli, add it later in the cooking process. Return the meat mixture to the skillet and stir to combine. Add the Parmesan cheese and salt and pepper to taste. Garnish with basil before serving.

Ingredients: 250g pasta of your choice. 1/2 cup sun-dried tomatoes, chopped. 1/4 cup olives, sliced. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. Fresh basil leaves for garnish. Grated Parmesan cheese for serving.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Put olive oil in a pan and heat it over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. Cut up some sun-dried tomatoes and put some sliced olives in the pan. Stir every now and then for another two to three minutes. When the pasta is done, add it to the pan with the tomato and olive mixture. Toss to mix and heat all the way through. Add pepper and salt to taste. Add fresh basil leaves and grated Parmesan cheese on top while the dish is still hot. Have fun!

Ingredients: 1 medium spaghetti squash. 1/2 cup sundried tomatoes, chopped. 1/4 cup fresh basil leaves, chopped. 2 tablespoons extra virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Set oven temperature to 400F 200C. After cutting the spaghetti squash in half lengthwise, remove the seeds. Squash halves should be placed face down on a baking sheet after being drizzled with olive oil and seasoned with salt and pepper. Bake the squash for forty to forty-five minutes, or until it is soft and easily shredded with a fork. Take the squash out of the oven and allow it to cool down a bit. Scrape the squash flesh with a fork to create spaghetti-like strands, then transfer to a large mixing bowl. Combine chopped sun-dried tomatoes and basil with the spaghetti squash in the bowl. To make the dressing, combine the olive oil and balsamic vinegar in a small bowl. After pouring the dressing over the squash mixture, toss to fully incorporate. If necessary, add more salt and pepper to taste. Serve right away or put in the fridge until you're ready to serve.
