Tuesday, April 6th, 2021 — 170.0 lbs
Today was basically a wash when it comes to being productive. I kept the kids alive, but honestly we had a screen day and I’m not sad about it.
We watched some favorites today: Narnia, Finding Nemo, part of the Little Mermaid, part of Shrek, and part of Kung Fu Panda. I got a lot of computer work done while they watched which was great!
I had coffee with 1 T creamer around noon and that was the first thing I had (35 calories)
Then when I fed the kids a snack, I ate a fiber one bar (105 calories)
While I made dinner everyone played outside on the play set and I had a twinge of guilt that we didn’t go outside sooner. It truly was a beautiful spring day. I made pasta with red sauce mixed with alfredo and roasted vegetables: mushrooms, peppers, zucchini, and carrots. I had a bowl of vegetables for dinner (118 calories) I also had 1 golden Oreo and a clementine (89 calories)
I did my normal kitchen and living room cleaning and tidying up. My awesome man folded a load of laundry for me 😏 And I think this is the last day of my period so I might reward him later 😝
Gonna brush my teeth and help the kids brush theirs, put them to bed, take a long, hot shower, shave my legs, and hopefully get to bed early tonight. It feels like we always *try* to go to bed early but we get suckered into a show or movie or just talking.
I really needed this day to “do nothing”. I feel like I have been going going going, a mile a minute. It was nice to wear sweats all day, a messy bun, and not have to worry about dropping/picking up the kids from school (it’s spring break).
So my stats for today are 346 in, 150 out, 196 net. This was such a good day for me. I wonder what I would look like if everyday were like today. Like, what if I net 200 cals for a year straight? Also took an x-lax, but just one! 😍 I hope I wake with a loss tomorrow 🧚🏼‍♀️

Hi! I'm Brittany.
I've been having health problems since I was around 21. It's been a pretty quick decline ever since. But the last 2-3 years have been the absolute worst, and the hardest. It's difficult for me to even get around and do basic tasks. Just standing is difficult and very painful right now. I have been diagnosed with hypothyroid disease, an autoimmune disease, pmdd, severe anxiety and depression. I can't work right now. Just existing is hard, fighting to get by is all I can do right now. Even bathing is a difficult task. I am in the process of applying for disability... But as anyone who's going through it understands it's a long and painstaking process. Even if it was approved tomorrow (which it won't be) it would still take months. I'm doing by very best, but anyone who could help out in any way with my expenses. I would be so grateful for. These expenses include, but are not limited to... And in no particular order.
Medicine Costs per month $150+
Nasonex - $80
CBD per month - $84
Bare minimum. Because I'm still playing with the dosage and it could be even more.
Dr. Visits every 6 months $100/$72 x 2 (This is bare minimum that I have to meet to get my medicines. I have two doctor's I have to see every 6 months. This is not including doctors I NEED to see outside of my psychiatrist and general physician)
Dr. I need to see, (Endocrinologist) and have been told I have to. Because I've well surpassed the amount of synthroid a general care physician is supposed to give, and it's still out of whack. Just to see them is around $100, not including tests/labs.
Dentist - I haven't been to a Dentist in well over 6 years I think? I know I need my wisdom teeth out, but I'd settle for a cleaning.
Debatable Shower Head - I have my chair now. But just trying to reach places is so difficult, and so painful. Having a shower head I can bring to me would be helpful. $30 - $40
Bed Frame - My bed broke few years back and is now on its side. So I sleep on a broken couch that has a stool under the cushion, because the springs/fabric broke. $60 - $80
Groceries $200+ per month.
There's a lot of other stuff, but this is all I can think of right now. It's no one's job to take care of me, but if you have anything to spare while I continue to apply for disability I'd be so greatly appreciative. Anything that eases the burden some is a blessing. ❤

You can build raised beds, retaining walls, stairs, benches, planters, pathways, garden edging, fish ponds, and much much more. They are not only long-lasting and require no treating, but they also significantly enhance your garden aesthetics.

Let’s start with one of the most important tasks ahead of you – cutting your garden sleepers. 
You have to make sure that you are measuring and cutting precisely because oak tends to shrink with time. So to make sure you fix your sleepers  as tightly as possible, measure everything twice.
Cut your sleepers with a circular saw or a chainsaw by slowly making clean, straight cuts. Use a square angle ruler to make sure your sleepers will fit perfectly. Alternatively you can ask for sleepers to be precut which The Luxury Wood Company is happy to do.

Here is what you need to do if you wonder how to fix railway sleepers  to the ground:
Firstly, pick and outline the place where you’ll be laying the sleepers. 
Dig a shallow trench. 
The best option for a foundation is concrete, gravel and sand, which you will use to anchor your sleepers with stainless steel fixings. 
Important notes: Placing sleepers directly on top of soil may cause your wood to rot quicker due to water pooling. Using stainless steel fixings is important or otherwise the natural chemicals inside the oak timber will eat away the screws. 
Make sure to level your foundation as best as you can. 
Use a spirit level to ensure each sleeper is leveled to the ground.

   How To Fix Sleepers Together
As mentioned above, it’s important to use stainless steel crews to fix your sleepers together. You need to choose screws that will penetrate significantly into both sleepers. Don’t forget to pre-drill before putting the screw in, to reduce splitting. Oak sleepers  are very heavy, so you can also use oak rods or stainless steel poles for stability.

Unlike softwood sleepers that usually last from 2 to 15 years, oak sleepers are highly resistant to decay and can last for many more years in the right conditions untreated. They also maintain colour, which is great for rustic beds.

“Started” the day by not wanting to get out of bed. Not sad, just super sleepy.
So I woke up late, and was finishing up the section of Jane Eyre that we had been assigned for my Women’s Lit class. Our class has been meeting on web x the past week on tuesdays and Thursdays and I’ve really been enjoying the discussion and the prof.
Legit 30 mins before class we get an email that this class has to be cancelled with options for other classes that would be available to us.
I still signed into the web x class meeting and the prof apologized and explained how her father was dying and she could no longer run the class.
So I’ve been spending the last hour finding a new class and emailing back and forth with my advisor as to what classes would fufuill my requirements so that I can graduate in the spring.
Finally settled on a 200 level course on Human Sexuality and while I guess that does sound intriguing, I’m just really shaken up by the changes that have to happen so unexpectedly. Not only am I joining this class a week already into the semester but I was really looking forward to the books and discussions we were having for Women’s Lit.
Luckily, I didn’t order all of the novels we were going to read, but it looks like this Human sexuality class requires not only a $150 text book but also an online subscription to the website where the class work is to be done.
Feeling a bit stressed and honestly was already feeling pms symptoms of wanting to eat everything and just lay around all day. But now I want to do both of those things and also just completely shut everything out today and do nothing.
Life is always full of unexpected bumps off course and while I always seem to be expecting them they surprise me every time.
I guess one thing I am thankful for was that it got me reading Jane Eyre. I am almost done with it and am going to finish it in spite of no longer “needing to”. As with everything I come across in life I have fell in love with the novel and it may very well be my new favorite book.
I still have one more web x class today in a bit and I really do need to be doing homework for my other classes but... I just don’t know if I have it in me today. Really just want to close all of my blinds, order some takeout and binge movies all day... that’s probably what I’m going to end up doing.
Hope everyone is handling their life hiccups as they happen and I know I’ll be okay too.

Roasted Veggie Grain Platter
Hi, David here. I’ll get to the recipe soon but first I just wanted to share a little scene from last night. Isac was watching a baking program for kids and as I was tucking him in, he thoroughly explained the whole process of making croissants to me. ”You have so much butter in croissants, dad. Like, a lot. You put it on the dough and fold it over the butter like this. And you hit it with the rolling pin like this, bam bam bam”. When it comes to numbers and letters, he can be a little clueless, but the fact that our three year-old had memorized all the details in croissant baking from just watching it once on tv, made me all happy and proud. I’m not saying that mastering a croissant is more important than math, but teaching our kids how to cook has been one of the things I’ve really looked forward to as a dad. And he is really into it. The little kids stove has long been his favorite toy both at home and in kindergarten an he often serves imaginary pancakes to all his friends. I’ve promised him that we will make croissants together tonight so I’m off to prep a dough right after this (making the rye croissants from Green Kitchen Travels). I’ll report back with how it goes.
Today’s recipe doesn’t have anything to do with croissants but Isac does play a little part as kitchen helper in the video below.
So, the recipe. There is one obvious reason why grain bowls have become so popular in the last couple of years. Their looks. If you don’t know what a grain bowl is, it’s basically a mix of roasted and raw vegetables on a bed of grains and herbs arranged in a bowl. The mix of vegetables often make these bowls super colorful and therefore also very popular on instagram. Grain bowls are however more then just pretty. They are hearty and provide a variety of textures and flavors. They are also very easy to adapt to what you have at home and what’s in season. We often make grain bowls for lunch, with any cooked grain, millet or quinoa as the bed, adding leftover vegetables from the fridge on top. In this recipe, we have taken the grain bowl concept and turned it into a platter. It’s topped with roasted and fresh spring vegetables, feta cheese, egg halves and hazelnuts. It’s a beautiful dish and a great one to make for Easter dinner. If you want to take the Easter concept even further, you could add roasted asparagus as well.
We use an organic five-grain mix (emmer wheat, barley, gamut, brown rice and oat groats) from Zeta as the grain base but if you can’t find something similar, go with your favorite grain. Grains thrive with flavor friends, so we have paired these with a quick salsa made from marinated bell peppers, olives, capers, herbs and lemon. And stirred in a bit of feta cheese and toasted hazelnuts as well. It’s all there, flavours, looks and textures.
Roasted Veggie Grain Platter with Bell Pepper Salsa Serves 4
To make this vegan, you can simply skip the eggs and feta cheese.
1 x 250 g bag Zeta 5-grain mix (or grains of choice)
Roasted vegetables: 1 bunch carrots 3 purple spring onions or 2 red onions 2 small zucchini 1 tbsp olive oil sea salt
Bell pepper & olive salsa: 100 ml / 1/3 cup grilled marinated bell pepper 100 ml / 1/3 cup Lecchino olives 3 tbsp capers 5-6 stalks fresh parsley and mint 1/2 lemon, juice 4 tbsp olive oil
Topping: 2-3 medium soft boiled eggs 150 g feta cheese 100 ml / 1/3 cup hazelnuts, toasted and chopped 2 handfuls mache lettuce 6 heirloom cherry tomatoes, halved 1 bunch radishes
Preheat the oven at 200°C / 400°F and cover a baking tray with baking paper. Peal or clean the carrots and trim off the outer layer of the onion. Cut the onion lengthwise and the zucchini in bite-size pieces. Place the vegetables on the tray. Drizzle with oil and salt and roast for 15-20 minutes. Cook the grains in a large bowl of salted water according to the instructions on the package and drain in a sieve once they are ready. Make the salsa by chopping all the ingredients finely. Place in a bowl, squeeze over lemon juice and drizzle with oil. Fold the salsa into the grains, reserving some of it for serving. Crumble 2/3 of the feta cheese into the grains and half of the hazelnuts. Toss so everything is mixed. Pour the grains onto a platter, top with the roasted vegetables, lettuce, tomatoes, radishes, egg halves, feta cheese and hazelnuts. Drizzle with olive oil and serve with the remaining salsa and some sourdough bread on the side.
