Taxi's Spanish Ramen Recipe

This one is really good for if you're a college student who needs a quick, easy, and cheap way of making food, have a large amount of ramen, but don't want to eat it. It adds more protein and vegetables, as well as flavour. This recipe is a little spicy, so if you want to make it less so, then just half or quarter the spice amounts. Will make regular Spanish Rice when rice is switched with the noodles and a bit of salt is added to the seasonings.

Ingredients:
1 12oz can chicken
1 12ox can diced tomatoes
1/2 cup marinara sauce
1/4 cup milk
5 packs Ramen
1/4 teaspoon cumin
1/4 teaspoon Chile powder
1/4 teaspoon Cayenne pepper
1/4 teaspoon Garlic salt
1 teaspoon pepper flakes
In a large pot set 4-6 cups of water to boil. Then, in another pot, place the tomatoes (lightly drained) and the chicken (fully drained) on low heat. Once hot, pour in milk and add seasonings. Keep on low heat. When first pot comes to a boil, add in the ramen (minus the seasoning packets) and sit it around once soft before draining the water. Mix in about a third of ONE packet of seasoning into your sauce, before adding the ramen and stirring until well-coated. Last, add the marinara sauce till it has a light red hue. Then you’re done!
Time: 10 minutes Serves: 3-6 servings

Joloff Risotto With Spices Shrimp and Tostones

Here's a short recipe for Jollof Risotto with Spiced Shrimp and Tostones:
Ingredients:
1 cup Arborio rice
1 onion, finely chopped
3 cloves of garlic, minced
1 red bell pepper, diced
1 can of diced tomatoes
1 tablespoon tomato paste
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon cayenne pepper (adjust to taste)
1 cup chicken or vegetable broth
Salt and pepper to taste
1 pound shrimp, peeled and deveined
1 teaspoon ground coriander
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
Olive oil for cooking
2 ripe plantains, peeled and sliced
Oil for frying
Prime Planet tostones of your choice
Instructions:
Prepare Jollof rice according to package instructions.
Season shrimp with paprika, cayenne pepper, and garlic powder. Cook in a pan with oil until pink and cooked through.
Fry plantains in oil until golden brown and crispy.
Serve Jollof risotto hot, topped with spiced shrimp. Enjoy with crispy tostones on the side.

Spanish Rice
It took me a very long time to get this to a place where I was happy with it, but here's my spanish rice recipe!
...it'll probably change a few more times. It's still a work in progress.
Ingredients:
1 cup long grain rice*
(1) 10oz can of diced tomatoes with chiles
1 3/4 cup broth of your choice
1/2 onion, diced
2-6 cloves of garlic, depending on how you're feeling, minced
dried oregano
taco seasoning
salt
2-3 tbsp cooking fat of your choice, I'm using lard
*I've tried making this with short and medium grain rice. It can work, but it comes out a lot softer and soggier
Steps:
Melt your cooking fat over medium to medium-high heat. Add the rice and onions and stir to fully coat. Continue to stir and cook the rice until golden
Add the minced garlic, oregano and taco seasoning. Stir to coat and until garlic is fragrant
Add the canned tomatoes, with all juice, broth and salt. Stir and bring to a boil
Once boiling, reduce the heat to low and simmer, undisturbed, for about 20 minutes.
Once cooked, take off the heat, fluff and let sit 5-10 minutes before serving

Low-FODMAP Gluten-free Spanish-ish Rice

After I set the tamales to steaming yesterday, I thought, I really need a side with this. I didn't have all the ingredients for this recipe for Spanish rice I've used forever, but I had a bunch of random stuff to use up instead, so this recipe came into being. I really liked how it turned out!
Low-FODMAP Gluten-free Spanish-ish Rice
1 whole bell pepper, chopped
1/2 lb ground pork
1 c white rice
1 3/4 c chicken broth
1 10 oz can RoTel diced tomatoes & green chilies, drained
1/3 c rough chopped black olives
3/4 tsp smoked paprika
1/2 tsp black pepper
vegetable oil
Preheat oven to 350F. In a Dutch oven or ovenproof pan with a lid, fry the ground pork and peppers until not pink and softened, respectively. Add the rice, stirring to coat the rice, then add the rest of the ingredients. Bring to a simmer, stir, and cover. Bake until all the stock is absorbed, 20-25 minutes. Fluff before serving.
The recipe I've used calls for bacon instead of ground pork, but I was using up what I had, so. I added the olives to make up for the salt in the bacon, so if you used bacon, you might omit the olives. The smoky paprika worked super well with the little bit of heat in the tomato and chilies mix, and I loved the saltiness of the olives. Very good.
As far as FODMAP concerns go: only use red, orange or yellow peppers, as green peppers are bad news. Broth is also questionable because it tends to be made with onions and/or celery, so you could sub with water and a little salt. This could all be made vegetarian by omitting the meat and using vegetable broth.
