what do you think the snow castle that sansa built being destroyed could mean for her?

The happy symbolism of the castlebuilding is already disrupted when Littlefinger turns from helpful mentor to predator, forcing a kiss on an increasingly desperate Sansa. It is this moment that is in turn interrupted by the arrival of Sweetrobin, and the ensuing destruction of the castle and "slaying" of the doll.

Both moments serve to evaporate the whimsical, optimistic quality of the castlebuilding itself. They return Sansa to a proper sense of her own vulnerability and unhappiness in her current circumstances. The castle is only made of snow, the people around her are not benevolent, she is not truly home. Yet. Crucially, GRRM still has her ending in a quasi triumph, destroying the attacking "giant", getting in the last word with Littlefinger. She plots her escape from this new prison until she is summoned by Lysa and her unexpected murderous jealousy creates yet another crisis.

Basically, GRRM can't have Sansa ending the dreamy snow castle scene in peaceful joy. He's setting up the conflict for the next book, Sansa's entrapment, her participation in intrigue and political manipulation. A new learning experience and a new hurdle to overcome. He needs conflict and tension. He needs to emphasize that this was a dream, not the real thing yet, that danger is all around. And he needed a reason for Sansa to slay that giant. To show her react with uncharacteristic vehemence and violence. The castle is destroyed like its real counterpart - but there's heads mounted on walls over it. There's going to be consequences for the people who tried to destroy her home and her family. For the giant that is Littlefinger.
