Creamy seafood soup. Not something I go for on any given day, but I suppose that's why I'm doing this.

The combo of brandy, sherry, shallots and cream really screams culinary school. Time for some sea-bug soup, featuring the seafood stock I spent the whole previous day making.

Keep all the shrimp shells and simmer them with the seafood stock to make fortified stock. Extra fancy culinary school move there. Boil 3 shrimp in water on the side for the garnish.
The shrimp paste has a fair amount of steps, but it boils down to "sautee the alliums until soft, add the alcohols, cook down for a few minutes, then add the shrimp right at the end". Tony says to puree this in a food processor, but I only made a half batch. I figured with such a small amount, it would just get pushed around the processor, so I used my immersion blender straight in the pot.

Still wasn't the finest puree I've ever made, but I blitzed the entire soup at the end as well, for good measure. The rest is just making a roux for your fortified stock, thicken it up, add the puree back in and stir in the heavy cream. Soup is just soup, even fancy soup.

One of his two suggested garnishes (he calls for one or the other, not both). The other option is tempura shrimp, and I didn't want to be dealing with deep frying while I was making this somewhat convoluted soup. I'll make the tempura as a stand alone dinner soon, I love that shit.

Mince up some shallot and chives, dice your reserved shrimp, add some oil and lemon and season. Easy peasy.

This could be used in so many ways. Simple but good. Plop a good spoonful of this in the middle of your bowl of bisque, and serve. I sprinkled on more chives as well, since I had 'em.

Terrible lighting in bowls that are way too deep, but I need bowls with handles. I'm a millennial, I don't own a dinner table, we eat on the couch.

Taste is a 4 out of 5. Rich as fuck, if a little on the salty side. The seafood stock turned out really well.
Difficulty is a 3 out of 5. Sauteeing, pureeing, deglazing and making a roux, as well as good knife skills. It could be a tricky one.
Time was about 90 minutes. Faster than I expected.
I totally thought I would dislike this one, but shrimp is one of the only seafood items I'm a fan of, so I should've seen this potentially working out. If the stock wasn't such a pain in the ass, I would probably make the soup again.
Going to make a shrimp risotto with my leftover stock, if the lobster ravioli recipe doesn't obliterate the rest of it.
