Suji Sandwich Recipe
Rawa, potatoes and a variety of spices are used to make this delicious and easy sandwich recipe. It is a simple and solid alternative to the famous bread-based sandwich, in which the bread is prepared using semolina and is stuffed with a tangy potato stuffing. It is usually served as a street snack treat, but can also be served as a simple breakfast or a light dinner. Semolina Sandwich is a popular and delicious snack that you can easily make as your breakfast or lunch. This dish is very popular in Indian cuisine and can be prepared in different ways.
Dishes made from rava, or semolina, have always been popular in India. it is generally used to make morning breakfast but can also be used to make snacks, sweets, desserts and chaat recipes. Also, it can be creative and can be made as a sandwich. sooji sandwich recipe is an example of an inventive no-bread sandwich recipe.
I have shared few recipes of breadless sandwich but this must be one of the complete meal. i basically made the dhokla batter with rava dhokla batter and then cut it in half. It is then stuffed with spicy spiced potato stuffing, making it one of the best sandwich fillings. Unlike other breadless sandwich recipes, in which toaster sandwiches are coated in bread batter, this one uses steamed bread. Potato stuffing is served with vegetables for a complete meal, but plain rava bread can also be served with spicy green or red chutney. however, similar potato stuffing can also be used for vada pav or masala dosa. furthermore, some additional tips, ideas and variations to this creative sooji sandwich recipe. first and foremost, the stuffing used in this recipe is potato but this sandwich is not limited to this. You can use or develop the recipe to use a vegetable mixture, cheddar, or even chunks of vegetables or meat, like a traditional sandwich. moreover, after the potato stuffing, i cooked the sandwich in little oil. Although this is optional and can be skipped, this step enhances the flavor of the sandwich. lastly, i would strongly suggest to use coarse or bombay rava for this bait. Try Stuffed Soya Bell Peppers.
Ingredients
1 cup finger millet (ragi/ nachni) flour.
1/4th cup semolina (suji/ rawa – optional).
1/4th cup rice flour (for binding and crisp).
1/2th cup curd (diluted with water)
Some water.
Salt as per taste.
Some finely chopped carrots.
Some finely chopped fresh chillies.
Some finely chopped green onions/ red onions.
Some finely chopped coriander.
Some finely chopped tomatoes.
Some finely chopped cashews/ peanuts (optional).
Some grated coconut (optional).
1/2 tsp Fruit salt/ baking soda.
Oil.
Some sesame seeds.
Methods
Take a mixing bowl
Add 1 cup finger millet (ragi/ nachni) flour (it’s a healthy grain since it contains rich fibers which helps in weight loss).
Add 1/4th cup semolina (suji/ rawa – optional it gives a crunch).
Add 1/4th cup rice flour (for binding & crisp).
Add 1/2th cup curd (diluted with water) mix it well.
Add some water to it until the mixture becomes thicker as to pouring consistency.
Rest the mixture for min half and hour to one hour.
If the consistency of the batter is thicker than before, add some water to get the pouring consistency.
Add some finely chopped carrots.
Add some finely chopped fresh chillies.
Add some finely chopped green onions/ red onions.
Add some finely chopped coriander
Add some finely chopped tomatoes.
Add some finely chopped cashews / peanuts (optional).
Add some grated coconut (optional – it gives a very good taste and a bit of sweetness).
Add a small packet of fruit salt/ half a tsp baking soda (can avoid using it, by keeping the batter for 3-4 hours, it will get naturally fermented).
Keep mixing it.
Now take a appe pan put some oil in all cavities and put batter in each cavity. (can put some sesame seeds in all cavities along with oil to taste it better n crispy from the top)
Cover the lid, cook it on slow to medium flame for 7-8 mins.
Then open the lid and brush some oil over each piece, flip them on the other side cover the lid and again leave for cooking.
And then your super healthy Ragi Appe will be ready. Finger millet (nachni/ ragi) is a rough grain so it becomes harder keeping it for a long time.
Serving it warm tastes heavenly with pudina/ coconut chutney.

DESCRIPTION
Today we have a healthier version of pizza for you too. The base is made using Truefarm Organic Multigrain Health Flour and has lots of vegetables on the top with a good quality cheese. The flour is a Combining ragi, jowar, oats, millet and almond flour, our multigrain flour is rich in fiber and is a source of protein too.
Now, if you think cheese is bad, I believe you got to change your mindset. Cheese is great for health, it’s packed with protein and calcium. You have to be careful about the quantity of cheese you consume.
The pizza sauce and the vegetables can be of your choice. We have used baby corn, cherry tomatoes basil and rocket leaves.
INGREDIENTS
2 cups of Truefarm Organic Multigrain Health Flour
1/2 cup of Suji/ rawa/ semolina
1 cup warm water
2 tablespoon sugar (you can substitute sugar with Truefarm Organic Jaggery)
2 tablespoon olive oil
2 1/2 teaspoons of instant dry yeast
1/4th cup grated Parmesan cheese
1 teaspoon sea salt
Toppings -
About 1 cup of pizza sauce of choice
2 cups shredded mozzarella cheese
Additional toppings of choice
DIRECTIONS
Whisk water, sugar, oil and yeast in a small bowl. Allow yeast to proof for 5 minutes. It should bubble up.
Add flour, semolina, Parmesan, and salt in food processor until combined. While running the food processor, slowly pour in the water mixture and process until shaggy ball forms, about 1 minute, or you can knead the dough by hand.
Onto a floured work surface knead dough until it comes together.
Let the kneaded dough rest at a warm place for an hour or so. Don’t forget to cover it with a slightly damp kitchen cloth.
On a floured surface, use a rolling pin to roll dough into rounds about 11 inches in diameter.
For best results, roll the dough out about as thin as reasonably possible. Aim for even thickness rather than a perfectly round shape.
At this point, you will need to cook the rolled out dough on a nonstick pan and cook it on both sides. Make sure not to burn it and keep rotating the sides.
Transfer the cooked rolled dough to a baking pan. Brush the outer 1-inch of the dough with a light coating of olive oil.
Add pizza sauce of your choice. Sprinkle with cheese and vegetables.
Bake in a preheated oven at 200* c until the crust and cheese are lightly golden, rotating halfway, about 10 minutes for cheese pizza and 12 minutes for pizza with additional toppings. Sprinkle with smoked sea salt and/or fresh basil and serve.

Bombil/Bombay Duck Fish Fry
.
1.Slit Bombil/Bombay Duck fish medium 8-12, horizontally without cutting through. Pat dry & place them in a bowl.
.
2.Grind together 7-8 Cloves of garlic, roughly chopped 1 inch ginger & 2-3 green chillies with water as required into a smooth paste.
.
3.Add salt, 1/2 tsp turmeric powder, 3 tsp red chilli powder, ground paste & 1 tbsp lemon juice to the fish & mix well. Add 1 teaspoon rice flour & mix well. Set aside to marinate for 15-20 minutes.
.
4.Combine 1 cup Rice Flour & Semolina Rawa/Suji in a bowl & mix well. Dust the marinated fish with the flour mixture & place in the pan. Shallow-fry in hot oil till golden & crisp from both sides. Drain on absorbent paper.

5.Serve hot with lemon wedge.

Rawa Dosa
A popular south indian recipe made with semolina, rice flour and WHEAT  flour. the batter of semolina dosa is thin as compared to traditional rice-based dosa batter which yields crisp and flaky dosa. 
Wheat rava dosa which is super easy to make and taste absolutely delicious. This is a quick dosa recipe to make for breakfast as no fermentation required.

  Ingredients:
·        ½ cup rava / semolina / suji, 
·        ½ cup rice flour
·        ¼ cup wheat  flour
·       salt as per taste
·        2½ cup water
·        1 chilli, finely chopped
·        1 Tsp cumin / jeera
·        2 Tbsp coriander, finely chopped
·        1 medium onion, finely chopped
·        5/6 Cashew chopped
·        1½ water
·        oil, for roasting

Instructions:
In a  bowl take ½ cup rava, ½ cup rice flour and ¼ cup wheat flour.
Add salt and 2½ cup water.
Mix well making sure there are no lumps.
rest the batter for 20 minutes making sure the rava has absorbed water.
Add 1½ cup water(or as required) and prepare a watery consistency batter.
Now carefully pour the dosa batter over very hot tawa.Pour batter from a height. It will form small holes in the batter.Now drizzle with oil.
add finely chopped onions ,chillies coriander and cashews and cover  with a lid.
lower the flame and cook until the dosa turns golden and crisp.
finally, fold the dosa and serve rava dosa immediately with tomato chutney or coconut chutney.
Note :water quantity may vary depending upon your rawa quality.
The tawa has to be very hot when you pour dosa batter. once the batter is poured, quickly turn the heat to low and roast it till it starts leaving the pan.
Batter for rava dosa should be thin and easy to flow. also allow some soaking time for rava.
