Writing Notes: Herbs, Spices & Seasoning
Herbs and spices can add flavor and variety to your food.
Use a little at first, then add more when you are sure you like the flavor.
To substitute dry herbs for fresh, use ¼ teaspoon powder or 1 teaspoon crushed for 1 tablespoon fresh chopped herbs. Some herbs and spices are expensive.
You might want to buy only a few of the less expensive herbs and spices you will use.
Herbs and spices lose flavor and can spoil or get buggy if kept in the cupboard longer than a year.
If you use herbs and spices slowly, buy small containers, or store them in the freezer.
Uses of Herbs, Spices & Seasonings
Allspice - A mixture of cinnamon, nutmeg and cloves. Use in fruit desserts, pumpkin pie, apple cider, cakes, cookies, chicken, beef and fish dishes.
Basil - Tomato and egg dishes, stews, soups and salads
Bay leaves - Tomato dishes, fish and meat dishes
Celery seed - Juices, soups, salads, vegetables, pot roasts, poultry, rolls and biscuits
Chili powder - Chili, bean and rice dishes
Chives - Potato dishes, soups, dips and sauces
Cilantro - Latin American, Indian and Chinese dishes, salsa, stir fries, (Coriander leaves) legume or rice salads, hot cooked rice, grilled chicken or fish, or a dish of ripe tomatoes. Use fresh if possible.
Cinnamon - French toast, fruit and fruit salads, sweet potatoes, pumpkin and squash, puddings and apple desserts, ham or pork chops
Cloves - Whole cloves on ham or pork roast; ground cloves to season pear or apple desserts, beets, beans, tomatoes, squash and sweet potatoes
Coriander seed - Middle Eastern dishes, spice cakes and cookies, soups, roast pork and salad dressing
Cumin - Mexican, Middle Eastern and Indian dishes; beef and lamb, dry bean dishes, marinades, chili and tomato sauces; ingredient in curry powder
Dillweed - Tuna or salmon salad, potato salad, pickles, dips and sauces
Garlic - Mexican, Italian and Oriental dishes and in salad dressings; can be used fresh or dried, minced or powder
Ginger (fresh) - Oriental dishes, marinades for chicken or fish, fruit salad, dressings
Ginger (ground) - Gingerbread, spice cake, pumpkin pie, poultry or meat, soups, stews, stuffing, squash, sweet potatoes
Ground peppers: black, Cayenne & white pepper - Meats, casseroles, vegetables and soups
Italian seasoning - A mixture of marjoram, oregano, basil and rosemary; use in Italian dishes such as spaghetti

Mustard - Sauces for meat and fish, in marinades, salad dressings, chutneys, pickles and relishes
Nutmeg - Cooked fruits, pies and desserts, baked items, spinach, sweet potatoes, eggnog and French toast
Onion - Any dish where onion flavor is desired; can be used fresh or dried (minced or powder)
Oregano - Italian dishes, chili, omelets, beef stew, meat loaf, pork and vegetables such as broccoli or tomatoes
Parsley - Meat, soup or vegetable dishes; adds color
Paprika - Stew, chicken, fish, potatoes, rice and hard-cooked eggs
Rosemary - Egg dishes, meats, fish, soups and stews, and vegetables
Thyme - Fish, poultry or meats, in soups or stews, vegetable salads

In no particular order:
Ditalini (L) Not only they are the gayest pasta shape, as the word is also Italian slang for “fingering” , but they're my favourite tiny pasta because they're so versatile. Love 'em for pasta and patate especially.
Farfalle (R) Not only their shape gives me joy but it's also fantastic for gripping sauce and other seasoning. I can do amazing farfalle with salmon and parsley u have no idea.
FUSILLI (L) THEEE ultimate short pasta, ngl probably my all time fave. The way the sugo clings to the little spirals... sublime
Bucatini (R) Isn't it sexy the way they're just drowned in that sugo all'amatriciana? Borderline erotic. Look at it. The name means "little holey" because they have a lil hole inside, unlike spaghetti, and I could make so many sex jokes about this it's not even funny. It DOES makes them tastier. To me.
Rotelle (L) Literally what is there not to love about a pasta shaped like a lil wheel. It's sooo cute and sparks so much joy.
Bonus!! Gnocchi (R) They don't really count as pasta ig, because they're technically dumplings, but the they occupy a similar ecological niche as freshly made pasta in italian cuisine. Also in Rome when you think a girl is very hot you say "è una gnocca" meaning that she's delicious and will melt in your mouth. Wink wink nudge nudge

Hi! Thank you for the health advice! I would love to quit or significantly reduce carbs, I also feel like it's heavy on my body, but so many meals revolve around grains (sourdough bread mostly) and I guess there's a craving aspect to it too... Could you give advice on what you're eating instead?? I have lots of eggs, fish, occasional meat, plenty of fruit, just enough veg haha but i find it hard to imagine going without carbs (or grains more specifically cos I have no prob with vege carbs). Especially in winter 😋 Thank you for any help 🙏🙏
I feel like society has normalised feeling heavy and lethargic after meals, but its amazing you have noticed this and want to change!
You may want to cut carbs gradually (no starches - breads, grains, rice, pasta, potatoes).
I would recommend looking into GI index to see what foods are high glucose, following Hormone Balancing recipes, juices etc (usually very low carb and support women's health). Listening to podcasts on microbiome, or even a tiktok search.
Introducing pre/ probiotics: I make sauerkraut (which is basically cabbage / onions in water and salt left to ferment for a few days - lots of variations on this), also just made my first batch of Kefir (I stay away from store bought Kefir as its pasturised and all the good stuff has been killed off during this process). I mention these as a healthy gut is going to support you as you remove carbs and introduce more wholesome foods.
Breakfasts:
Omlette (spinach / onion / parsley )
Scrambled eggs w/ coconut oil
Buckwheat porridge w/ blueberries (buckwheat is a seed not a grain so low glucose index)
Avocado salad (seeds, olives, rocket, tomatoes, cucumber) +tahini
Snacks:
Nuts, olives, blueberries, blackberries, watermelon
Main meals:
Veg + Protein (Broccli, kale, butternut squash, courgette, carrots, asparagus, cabagge, peppers). I do different variations of veg to mix things up, sometimes i do Chinese style stir fry, I try to add garlic and ginger as much as possible into the veg. Protein is usually grass fed steak, whole fish - seabream, sea bass, mackerel, cod fillet, wild salmon fillet, or turkey breast fillet. I make chimichurri sauce to add some extra flavour to the fish.
Protein + lentil / chicpeas dish. I have a stew a few days a week to break up the veggies because they do get boring after a while.
Bone broth. I boil the bones, and have as a little side dish with veggies but this isn't really filling enough for a main meal.
I make beetroot juice, and also watermelon juice, tumeric + ginger shots throughout the week. I try to throw in flaxseed and chia seeds where possible.
I cut coffee/ decaf all that and now only drinking fresh mint tea, slice of lemon + hot water, fresh juices (within the hour of making), and water ensuring 2l per day.
Number one thing that had to go was oats. So if you are having a morning crash I suggest cutting the carbs first thing. I know there are suggestions (glucose goddess) that fat with carbs or when you eat them (having carbs after veg can help) but personally i think its best to cut them.
I hope this helps! Its a full lifestyle change that has honestly helped so much! It's a commitments, but investing in feeling good and your health will make you feel so good and wholesome! xoxoxo

Maltosio
Maltosio is a restaurant located in Linkon City. It's where the protagonist and Dr. Zayne meet for a late lunch (in the Falling For You: "A Frozen Promise" Bond story). The protagonist mentions that she used to walk by this street often on her way home.
Apparently, the location was previously a pet store. From what I could see, there are two separate Honest Coffee locations right next to it (one across the opposing street and one across the street directly to the right of it). And, according to Zayne, there's a bookstore nearby.

Smoked Salmon and Garlic Dip
Hey, do you like holiday parties or just eating dips by yourself under a table? me too! one of those! Anyways here's my favorite dip recipe, and people tend to think it's really fancy. It's not. But it seems fancy!
So that's good enough for the holidays.
Smoked Salmon and Garlic dip
Ingredients:
1-2 heads of garlic
1 block room-temp cream cheese
1 small tub sour cream (or a tube, you know the squeezy tubes?)
1 decent-sized chunk of smoked salmon.
(the one I used is a local place so they didn't put on the weight of it. it's the length of my hand from middle finger to heel, but narrower
[You can use the cured thin-cut stuff if you want, but you'll have to chop it. This works best with the chunks of smoked salmon that flakes when you pull it apart.])

Directions:
Roast your garlic. 1 head is fine, 2 heads is better.
To roast garlic, set your oven to 350, and chop off the tops of the garlic. If you have a really staggered garlic (peaks in the middle, then little cloves around the edges) cut off the top, and then just gently nip off the tops of the smaller cloves, so you're not chopping off a ton of the middle cloves and wasting food.
Put the garlic heads in tinfoil, drizzle olive oil over the top, and then seal the foil, making a lil parcel.
Chuck it in the oven. It takes about 45 minutes. You can tell it's done when the garlic oozes out easily when squeezed, and the sliced tops should be lightly brown.
(I used garlic confit this time, which also works great!)
Add your room-temp cream cheese to a bowl. Whip until it's very loose and easy to work with, and then add the sour cream. The more sour cream you add, the lighter and tangier it'll be. I generally add about a half cup, but you can go as low as 2 tablespoons if you want.
Whip those together until homogeneous, and then squeeze in all your garlic. Repeat the mixing.
Flake in your salmon, and combine.
You can either pop it in the fridge now for the flavors to meld, or you can add more.
Suggestions: a squeeze of lemon, esp if you went light on sour cream. Worstchestershire sauce if you really enjoy it on seafood for some reason. white pepper! paprika!
A green herb isn't a bad idea at all, and it's pretty flexible on that front. Dill, chives, parsley, even thyme should all work quite well.
Anyways. Then you need an entire loaf of bread and a dark room so no one can witness you eating the entire thing. Good luck figuring out what to take to the party now, genius. The bowl's empty.

Day 26: Low-FODMAP Salmon Cakes
I got a stupidly large amount of salmon from Costco, so I decided to do something different than my typical bake-with-olive-oil-and-birch-syrup situation. These salmon cakes are way easier than they look, but they do force you to get out the food processor, so. I always resent having to take it out (and clean it), but others may not be as petulant about kitchen appliances. To the recipe:
Low-FODMAP Salmon Cakes
~2 slices gluten-free bread
1 1/2 lbs skinless salmon, cut into 1 inch cubes
3 tbsp mayo
3 tbsp minced fresh parsley
2 tsp Dijon mustard
3 tsp minced capers
salt and pepper
Set a rack about 3 inches from broiler and heat broiler. Pulse bread in food processor to coarse crumbs, which should be about 1 1/4 c bread crumbs. Set aside in large bowl. Pulse salmon in food processor until coarsely ground, then add to the bowl with the bread crumbs.
Mix together mayo, parsley, mustard, capers, and salt and pepper to taste, then then fold into salmon and bread crumbs until combined. (You fold it in, David.) Divide into 6 patties that look like hamburger patties, about 1 inch thick, and then arrange on a foil-lined baking sheet.
Broil until browned and patties register 125F, roughly 5 minutes. Remove from oven and let rest for 5 minutes.
The salmon cakes were pretty great, and everyone enjoyed them. I'm not even going to go into how I cooked the potatoes (pictured) because I didn't like how they turned out. I had cantaloupe wedges wrapped in prosciutto as a salad, because I've been craving watermelon salad with feta and mint, but watermelon is on the no list. This diet is still massive bullshit. I'll post a recipe for the banging tartar sauce I made tomorrow.

Nutrient-dense meal prep recipes that are both healthy and delicious -
1. Quinoa and Roasted Vegetable Bowls:
- Cook quinoa according to package instructions.
- Roast a variety of vegetables (such as bell peppers, zucchini, and broccoli) with olive oil, salt, and pepper in the oven until tender.
- Assemble bowls with quinoa, roasted vegetables, and a protein of your choice (such as grilled chicken or tofu).

- Place a piece of salmon fillet on a large piece of aluminum foil.
- Add trimmed asparagus spears, cherry tomatoes, and sliced lemon on top of the salmon.
- Drizzle with olive oil, salt, pepper, and herbs (such as dill or parsley).
- Seal the foil packet and bake in the oven for 15-20 minutes, or until salmon is cooked through.
- Serve with a side of quinoa or brown rice.
4. Chickpea and Vegetable Stir-Fry:
- Sauté diced bell peppers, broccoli, and carrots in a large skillet with olive oil.
- Add in cooked chickpeas and a sauce made from soy sauce, garlic, ginger, and a touch of honey.
- Cook until vegetables are tender and sauce has thickened.
- Serve over brown rice or quinoa for a satisfying and nutrient-dense meal.
These recipes are all packed with nutrients and can be easily prepped ahead of time for quick and healthy meals throughout the week. Enjoy!

Finnish Salmon Soup (Lohikeitto)
Here is an easy and comforting recipe, perfect for cold winter nights: a Finnish salmon soup. Lohikeitto as it is called in Finland is a creamy salmon soup made with leeks, potatoes, carrots and especially plenty of fresh dill!
What I particularly like in this traditional finnish salmon soup is that it is a full meal and especially that you can prepare in advance and reheat easily. It tastes sometimes even better the next day!

•Stock – fish stock is the best one to use for lohikeitto. It gives you a solid base of fish flavor, and adding salmon elevates that flavor even more.
•Cream – you can use light cream (half & half) or heavy cream (double cream); it depends on how creamy you want the soup.
•Butter – I used unsalted butter
•Leek – use only the white and light green parts when making lohikeitto.
•Salmon: You need a fresh salmon filet without the skin. I prefer a relatively thick fillet so that I can cut large cubes of fish. You can also use frozen salmon. Since this is one of the main ingredients of this recipe, I really recommend you to choose a high quality fish.
•Dill – I strongly recommend using fresh dill to prepare lohikeitto! But, if you can’t find dill, you can replace it with parsley (Using dried dill will change the flavor of your Finnish salmon soup, so please don’t use it as a substitute)
•Salt and pepper – According to your taste (I added 4 cayenne peppers)
•Lemon: This is not part of the traditional recipe but I like to add a drizzle of lemon juice to give this soup a little freshness.
☝️SALMON: 10 minutes before serving, add the salmon chunks and cream. Cook over medium heat for 3-5 minutes until the salmon is cooked. The cream should not boil. Close the lid and wait another 5 minutes.

Knife - 9 Days of Solomon
Day 3
I was stumped on this prompt for a while, so I decided to play to my strengths and pick up my knife...CHEFS KNIFE THAT IS.
Yes, from Solomon's cookbook to your table, I have for you a recipe for Solomon's Mystery Stew!
aka a modified Cioppino, or Italian-American Fisherman's stew!
Remember to channel your inner Solomon: recipes are guidelines not holy writ (unless you're baking). Always error to your own tastes and judgement. If you don't like an ingredient feel free to leave it out. If you love a certain vegetable, see how it tastes when added! I made a vegetarian version of this last night because I was too lazy to go to the store and buy seafood - it was still delicious!
Solomon's Mystery Stew
1-2 servings
Ingredients
Olive Oil
Kosher Salt
Fish Sauce (optional)
½ Sweet or Yellow Onion, diced
1 medium Fennel bulb, sliced. Reserve fronds for garnish if desired.
1-1.5 tb Tomato Paste
2 cloves Garlic, minced
¼-1/2 tsp Red Pepper Flakes (more or less to taste)
½ c White Wine – Pinot Grigio is what I use because I can buy small half bottles of it. Any light white is fine, but avoid Chardonnay which can be oaked. You can omit the wine if you desire but it really does add a nice layer of flavor. If you leave it out consider adding a squeeze of lemon or a splash of rice wine vinegar.
1 can Petite Diced Tomatoes
2 c Vegetable Stock - You can substitute chicken stock if it's what you have on hand, but not beef stock. Fish stock is awesome if you have access to it.
Seafood: Calamari, Shrimp, Mussels (cleaned). I can buy a small bag of frozen "seafood medley" at my grocery store that contains tiny octopus, calamari, baby shrimp and clams that I usually use. I drop the frozen bits right into the soup as it cooks. If you want to buy fresh that's great too but quality won't suffer if you opt for frozen.
Fish, cut into bite sized pieces and deskinned: Salmon, Cod, Halibut, etc – your choice! I find one filet is usually plenty for me. If you are serving 2 people do 2 filets.
Options for toppings:
Fresh Parsley, chopped
Fresh Cilantro, sprigs
Fresh lemon or lime slices
Tabasco Sauce
Kewpie Mayo
And of course you're going to want a nice crusty bread or your favorite crackers for serving.
Heat a small amount of olive oil in a pot. Heat should be medium to low. You want to sweat the veggies without browning them.
Add onions and sweat until translucent. 5ish min. Add fennel and garlic, stirring occasionally, for 2-3 minutes until fragrant. Season with a light sprinkle of salt. Increase heat to medium if using a low heat. Add tomato paste and red pepper flakes and cook while stirring for 2 minutes. Tomato paste should be lightly sizzling while cooking.
Increase heat to medium-high. Add wine slowly. Let simmer until reduced by half. Stir in diced tomatoes, Vegetable stock. Simmer covered for 15-20 minutes.
Add sea food. Simmer covered until seafood is done – Shellfish should be opened, Calamari should be opaque, Shrimp and fish firm. Taste broth and season broth with salt and more red pepper flakes if you desire. At this point I add a dash of fish sauce (my secret ingredient) but that's up to you.
Serve with lemon, parsley, and fennel fronds. I always drizzle a little Kewpie mayo on top as well. It melts into the broth and adds the most amazing sweet/sour flavor.
