Something that strikes me as I'm planning on hosting some visiting relatives (BTW if I have any New Zealand followers can you please reblog or comment with details about what type of tea is considered standard or a little better than average in New Zealand?) is how much comfort and joy I've given vegetarian and vegan travelers in the past by just serving them some good tasty normal calorie levels vegetarian/vegan food, as unfortunately that can be hard to come by as a traveler in the US and so several of the people I've hosted were obviously running a calorie deficit because they were struggling to find enough food suitable to their diet.
And, I am not vegetarian! I'm low-key ideologically Not vegetarian! But I also believe that 1. It's immoral to intentionally trick someone else into violating their own morals even if you don't share them and 2. Hospitality means serving people good food that they like and can eat.
I've gotten a lot of shocked responses from people in the past when I would say something like, "This recipe can be made vegetarian/vegan if you swap the meat broth with vegetable broth/swap the cheese for vegan cheese or omit it" and then they'd assume that I must be vegetarian/vegan myself, and not understand why I would care about tracking which recipes could be vegetarian or consider it a valuable thing. Other people have dietary restrictions and sometimes I want to make them something nice to eat! It's shitty hosting to invite someone to Thanksgiving and then have like two things out of twenty they can eat, you know?

Koreans are right. Lots of tiny side dishes are The Way.
#Look I cannot fill up on a main dish (especially if it’s a meat dish) even if I eat until I want to throw up#It doesn’t fill in the edges - I still feel hungry in some horrible way and end up snacking incessantly#But if I add a few different side dishes (cucumber kimchi or coleslaw or raita or pickles or sauerkraut or sliced veggies with vinegar…#Whatever I can gather from my limited resources)#suddenly I am not hungry any more not even a little bit#And if i add rice as well then i can go the whole day on two meals#(I tend to eat anywhere from 5-8 times a day so 2 meals a day is absolutely revolutionary for me)

I Am Once Again Asking Why Antibiotics Make Me Feel Like Someone Who Has Never Been Disabled
#Very slight exaggeration but whatever infection I'm being treated for had exactly one symptom#And I'm not sure that symptom actually has to do with the infection. We'll find out tomorrow ig if it's not better#But nearly every time I'm put on an antibiotic no matter which one it is#My mind clears. I have motivation. I feel well rested. I can multitask.#It's like a portion of my Adhd goes away though not all of it#I'm properly hungry and food tastes good.#What the fuck#I listened to critical role and washed a sink full of dishes and cooked rice and meat and two kinds of squash#And I only took the first antibiotic this morning like it's been 5 hours and two of them I slept#My muscles do feel a little weak though#I did read about latent bacterial infections and even pandas as someone who constantly had strep as a kid#But there is so little information on any of that

the amount of effort that goes into figuring out what to cook and eat every day is RIDICULOUS. i used to think people were so weird and boring for eating the same thing every single day but it truly does make life so much easier
#and also it's nice to know exactly what your food is going to taste like before you eat it#like when i get unfamiliar takeout. half the time i'm like. oh.#i'm going to have to eat all of this. or be judged.#so i just do my best to suppress my gag reflex and Get Through It and then it makes me sick so what was even the point#i think my parents spoiled me. and the most annoying thing is they're significantly better at cooking now than when i was a child#so when i go over i eat three delicious home cooked meals + snacks and they're all different and amazingggg#and then i come back to texas and i am like. googling 'how to feed myself healthy vegetarian'#because I do NOT have the time or money or energy to cook three beautiful delicious meals Just For Me#i think this would be easier with a partner#this whole week i bought a fuckton of mediterranean groceries and i have been making and eating food!!#mediterranean is close enough to indian that i like it well enough#unfortunately for me. i am def going to have to learn how to cook indian food to get through life. because i cannot fucking eat american#i don't know HOW you guys do it i'm so spoiled#i'm assuming meat is this really amazing wonderful thing that just adds flavor to everything#(it is physically repulsive to me and the couple times ive accidentally tasted it it's bleh so i refuse to partake)#i think it's an acquired taste but it magically makes ur food better. that is my understanding of how meat works#cause american vegetarian food is the saddest fucking thing i've ever tasted#i still think about my coworker i was talking to about my food issues and he was like. 'do u understand that you have been given a gift#by having constant access to tasty food your entire life. i ate unseasoned green beans every day of my childhood. learn how to fucking cook#indian food already.' truly a horrific thing to hear. but i'm calling my parents more and going HOW TO COOK VEGETABLE? BEAN? PLEASE HELP??#and by god i am not going to turn into my coworker.#anyways we start with baby steps. lentils and rice it is next week .-. going to the indian store to buy pickles to make it more tolerable#and i have my cabinet full of spices already at least#i wish i was less pickyyy#sometimes lalita cooks indian food for me and i'm like wow. i love and appreciate u for feeding me. but this sure is south indian food#i don't understand How they use spices. it feels like they toss as much of as many bottles as they can into every dish#and it's. the taste is just OW OW OW and nothing else. where's the nuance. the flavor.#and i like it when things are spicy!! i can even eat things where the flavor is just Hot. but not when she cooks it.#she will like watch my face when i take a bite and then go 'if you don't like it i'm throwing away all my pots and running away'#which. honestly a fair reaction. the problem is that i am incapable of lying

What the food pantry on campus does:
- gives me snacks and drinks to supplement my regular groceries, breakfast stuff, maybe ingredients for 1-2 actual meals
What the food pantry is really bad at doing:
- giving me food I can make into proper meals for the week
Oh you want juice? Here’s 2 little juice boxes. Nothing else; they’re limited. You want pasta sauce? 1 can; limited. You want produce? 2 produce item limit, except for the apples which are starting to spoil. You can have all of those. You want frozen chicken? One container only. Oh, they’re all stuck together and frozen? Sorry, you can’t have two; no chicken, I guess. Pasta? One box only. Rice? Two small bags, max. Breakfast bars? Yeahhhh, those are a snack, and you can only have five snacks, total. But if you put those pop tarts back, you could have some! Oh, you want donuts instead? Sure! But that’s a bakery item, and you can only have one baked good, so you’re gonna need to put that bread back. You want ziploc bags? Here, have two. Not two boxes, two bags. Item limits. Sorry. You can come back next week!
How the fuck are people supposed to actually *use* these things for weekly meal planning if there’s not enough to last a week???
I swear I am grateful for these resources I’m sure they’re doing the best they can with what they have I’m just *frustrated*. I’m trying to spend less on groceries bc I can’t really afford them. It’s nice that the food pantry gives me these small portions to last me a couple days. But that still leaves several days with not enough food unless I’m really creative or go grocery shopping, and I simply do not have the energy or time to be really creative.
#blue chatter#yes yes u have pasta noodles that’s GREAT#that’s not a full meal until I have sauce and meat or veggies to go with it#and your produce and meat stock are very limited if they exist#oh you have rice? great! rice on its own is not enough for a meal. what is going Into The Rice.#like obv if I have to I will just eat the pasta or the rice but a lot of the food bank’s stuff focuses on shelf stable staples and not like.#ingredients you can actually make into a full meal. like. protein and fat and vegetables or fruit.#carbs are super important but if you only have carbs then your body is gonna suffer#same if you only have protein or only have veggies/fruit or only have fat. you need all of them.#and like yes. they do have a couple basic staples like peanut butter. if I needed to make a balanced meal I could probably eat a spoonful of#peanut butter and some rice and snag a bag of apples and eat those. and I will do that if I gotta.#but the effort it would take to turn that into a dish I would enjoy and feel full after eating is. so much.#and they don’t have staple ingredients like flour or sugar or eggs#sometimes they have butter. sometimes. they had eggs once but they were rotten.#like I am so grateful for the free food believe me I am but I don’t understand how they expect students who don’t have grocery money to eat#you could get everything they let you take and still go hungry or feel sick from lack of nutrients or be unable to make food bc they don’t#have spoons or the equipment or both#also. the food pantry is SUPER not wheelchair accessible. and the parking situation is DIRE.#why are there only two (15 min limit) parking spots. but 38584847 meter spots. and the closest non-meter lot 10 minutes walk away.#I had a pain flare yesterday from lugging my groceries all the way back to my car. my gosh.#I should not have to pay for the privilege of parking a reasonable distance from the food bank when there’s spots RIGHT THERE UNUSED#nobody goes to this part of campus! everything is closed except for the food bank! why are these meter spots!

i am slow cooking the most delicious of concoctions in the kitchen rn
(my tags are so long lol whole half ass recipe down there)
#idk its some bastardized recipe for something called mongolian beef#well can it really be called bastardized when i actually fuckin improved it#like all there was originally was fucking soy sauce garlic brown sugar and onion#LITERALLY NO SEASONING#so i took my earned skills and actuallly made it good#the sauce is now flavorful and doesnt taste like garlic soywater#(the meat gets slow cooked in the sauce thats how i know how the sauce tastes)#added a teeny bit of mustard powder and cumin(half TBsp) added some ginger and onion powder(TBsp) and upgraded garlic to black garlic(TB)#it contained 1/2 cup of soy and 1/3 cup of Brown sugar#also replaced the water with beef broth(half cup)#theres also some oil(i did reg Veggie oil cause i dont like Sesame/ 1TB)#you serve ontop some seasoned/fried rice and mixed peppers/veggies thatve been lightly seasoned and fried in a skillet#the meat(1 1/4 Lb.) gets cleaned and sliced into strips#you leave the strips in a heavy salt solution to leach it/tenderize it(you can use other methods but this was what i had on hand) then rins#(you leave it in the solution for ATLEAST 30 minutes)#pat the strips down dry and using a 1/4 cup of Corn starch you coat the strips entirely#you then put the meat into your sauce and stir it around until the meat is entirely covered in it#then slow cook for however long you want(im doing 8 hours for some REAL tender shit)#alot of these measurements were eyed balled (except starch and liquids)[im skilled at this]#i will update yall once ive tasted the finished product#i went a little light on the seasoning but i dont have certain ingredients i want/can obtain so i had to make do(plus my parents cant shiit#DO NOT ADD EXTRA SALT TO THE DISH#leaching the meat and the soy sauce already has enough salt content#THE STARCH IS NECESSARY PART OF THE DISH#you can achieve black garlic by slow cooking regular garlic FOR WEEKS#longer = better#also i recommend using minced Ginger instead of powder for better flavour

Here's a picture of another, still frozen salmon fillet I have in the freezer.
#I really like salmon. pretty interesting fish taste wise#and I try to have variety in my diet whenever I can#I don't really eat a lot of meat let alone different kinds. chicken is my to-go. I also like turkey and rabbit (rare dish tho) beef is fine#I don't really like fat in my meat? so I avoid pork or lamb. this escalated sorry#but yeah salmon#here let me drop the 'recipe'#marinate the salmon with some soy sauce. honey. fresh orange juice and let it sit for 30 minutes at least#then put it in a oven pan/tray. spread some mustard on top and bake for ≈25 minutes 175⁰C (time depends on how big or thick is the piece)#boil water. add the rice (the time it needs is probably on the pack). boil water and add some lean green beans#after straining the green beans add salt and butter#put everything on a plate. bon appetite etc#not art#personal tag#if anyone ends up making it I'd love to gear your opinion
