Creamy Lemony Chicken Sausage Orzo
This one-pot meal is a great addition to any recipe book. This recipe might be your go-to on nights when your fridge is nearly empty or you just don't have the energy to prepare a fancy dinner. Here, orzo gets toasted in olive oil that’s infused with the flavors of lemon, garlic, and butter before cooking in a flavorful chicken broth amped up with tomatoes and dried oregano. When they simmer, the starch they produce gives the sauce a creamy texture that is reminiscent of risotto. It's a quick and easy dinner to prepare because everything is prepared in a single pot in less than an hour. Topped with fresh Parmesan and freshly ground black pepper.
“Eating is so intimate. It’s very sensual. When you invite someone to sit at your table and you want to cook for them, you’re inviting a person into your life.” — Maya Angelou

Love Is a Command: Choosing to Love Like Christ
When I finally surrendered my life to God—ALL of it—I began to search the scriptures for how to live in a way that would truly please Him. I wanted to know His will, what He wanted from me. In a family devotional, I came across the scripture that would change everything:
“Teacher, which is the greatest commandment in the Law?” And Jesus replied, “ ‘You shall love the Lord your God with all your heart, and with all your soul, and with all your mind.’ The second is like it, ‘You shall love your neighbor as yourself.’ The whole Law and the Prophets depend on these two commandments.”— Matthew 22:36-40 AMP
We’ve all heard this a thousand times, but this time, I realized it wasn’t just advice—it was a command. “Love your neighbor as yourself.” It wasn’t optional. It was an order.
And that realization hit me like a ton of bricks. Loving others like this didn’t just feel like the nice thing to do, it felt like a “requirement”. But I was left with one burning question: why? Why is loving each other so important?
John 13:35 provides the answer:
“By this all people will know that you are my disciples, if you have love for one another.” — John 13:35 ESV
Okay, I get it. We love people to show them a glimpse of God’s love. But my next question was: “How”do I love like this? Because honestly, I didn’t know my “neighbors” enough to love them.
For so long, I thought love was just an emotion—a feeling that comes and goes. But God shows us in 1 Corinthians 13:4-7 that love is an action. It’s a choice. And He gives us clear instructions on how to love:
“Love is patient and kind; love does not envy or boast; it is not arrogant or rude. It does not insist on its own way; it is not irritable or resentful. It does not rejoice at wrongdoing, but rejoices with the truth. Love bears all things, believes all things, hopes all things, endures all things.”— 1 Corinthians 13:4-7 ESV
As someone who needs directions (I’m a recipe-follower in the kitchen, if you know what I mean), I was thrilled to find these step-by-step instructions. Here’s what I learned:
- Love is patient: patience is the capacity to accept or tolerate delay, trouble or suffering without getting angry or upset. So by showing calmness during stressful situations. It’s showing empathy toward others when they are not doing things to our standard.
- Love is kind: It’s about offering generosity and friendliness, no matter who people are or where they come from.
- Love does not envy: It’s about celebrating others’ success instead of being jealous.
- Love does not boast: It’s remembering that every good thing we have comes from God. Anything we’ve achieved is a gift, not a personal accomplishment.
- Love isn’t rude: It’s about treating others with respect and consideration, not letting our emotions turn into harsh words or actions
- Love isn’t self-seeking: It’s not about doing things for praise. It’s about acting out of genuine concern for others.
- Love isn’t easily angered: Self-control is crucial. We need to be slow to anger, and slow to speak and quick to listen.
- Love does not delight in evil but rejoices in the truth: Love celebrates what is good and true. It doesn’t justify wrongdoing
- Love protects: It means we guard others' reputations and well-being, even when we want to vent or gossip, even when they have mistreated us
- Love hopes and believes all things”-We have hope for change in others, just as God has shown us grace and transformation.
1 Peter 4:8 sums it up:
“Above all, have passionate and unfailing love for one another, because love covers a multitude of sins.”— 1 Peter 4:8 AMP
This kind of love isn’t easy. But it’s the love that we’re called to offer—“to everyone” When I see someone hurting or living in a way that’s far from God, I pray, hoping and believing they will come into the fullness of the knowledge of Christ.
My prayer now is that I see everyone as God’s creation, even when they act in ways that frustrate or confuse me. I pray for self-control, to treat people with grace (giving what they don’t deserve), and to remember that I don’t have the right to mistreat anyone. It’s all about love—choosing to love, even when it’s hard, even when it doesn’t feel natural.
I’m learning, day by day, that love is more than a feeling. It’s a choice. It’s an action. And it’s something we can do—because He first loved us.
So here’s what I tell myself to keep my heart in check:
1. God commanded it—“not suggested it” Loving others is a direct command from Him.
2. I love God, and He loves them, so I do the same.
3. People are flawed, just like me. If I can be forgiven, so can they.
4. God saved me, and He can change anyone’s heart—just like He did mine.
5. If God can forgive me again and again, who am I to hold a grudge?
6. I’ve tried it my way and made a mess. Love never fails, and I trust in that.
7. I pray to be the salt of the earth and the light of the world—let His love shine through me every day.
8. Scripture says he who is forgiven much loves much. I've been forgiven more than I could ever deserve, and that forgiveness fuels my love.
Let’s remember: Love is a choice, and it’s the one thing that never fails.

spent 3+ hours on the phone with liz walking the dogs in the rain and doing chores and making dinner so I’m cured of sadness basically. kind of a hard day but mostly just in the ways I anticipated it would be. job is official official and I’m very happy about it. I’ve decided not to psych myself out about the fact that it’s a big career jump and instead dive into the work with the assumption that 1) I can learn how to do it with practice, 2) not having done this work at this level before means I’ll have to really listen to/observe/build relationships with people around me so I can learn from their expertise (which just seems like a good philosophy in general), and 3) I don’t have to stress about molding myself to some norm I made up in my head! I can decide what kind of professional I want to be and can just go about being that kind of professional. and if it takes a while to figure things out that’s normal—it took me a full two years before I really felt confident and competent in my last university job, so I should expect a similar adjustment period here.
I also just spent an hour paging through the two new cookbooks I ordered and looking at this other one my friend recommended online. this has given me lots of recipe ideas obviously but it’s also making me think about what the next stage in Learning How to Cook is going to look like. I feel like 4-5 months of focused practice has helped me achieved my initial goals of wanting to feel more confident in my ability to make new recipes, to produce consistent results when re-making old recipes, and to be able watch/taste food while cooking and make adjustments (to salt, fat, acid, and heat) as needed to improve the outcome. I’ve also tried a lot of new foods, taught myself to like new things by preparing them in different ways, and amassed a bunch of easy, low-fuss vegetarian/vegan meals that produce great leftovers.
I’d definitely like to continue expanding my repertoire of meals, but I’ve also been thinking that I want to develop a better understanding of how to construct really good meals. to me this means learning…
how to choose dishes that go well together,
how to prep simple starters and sides (both for planned meals & for when you’re just throwing things together based on what’s in the fridge)—idk I am such a one-dish-meal kind of person but I’d love to try a bunch of things and have more ideas to draw on!
how to make little tweaks to existing recipes that will amp up the wow factor of the dish… i feel like I have friends who are good at things like swapping out a run-of-the-mill dressing on a salad with something more intriguing, or preparing sides in ways that make the food feel a lot fancier without making the actual prep part more difficult. I always admire it when people can think of quick little upgrades to a simple meal and I wanna be able to do that someday too.
I think that’s going to be my next area of focus! I know that going back to work in person means I won’t have as much time/energy for extended all-afternoon cooking sessions but I know myself lol if I can make this next phase into a structured ~learning experience~ it will seriously boost my motivation to actually follow through. so I gotta think a bit about what I want this to look like and how I’m going to identify the skills involved & create opportunities for myself to practice them. gonna make myself a curriculum babyyy that’s what life is all about

Garlic Butter Prawns Recipe
Tumblr media
Garlic Butter Prawns is possibly the easiest recipe I have, but also one of my family's favourite rich and flavourful prawns with garlic butter sauce, which is one of those go-to meals for any occasion. If you are in the mood to have a quick weeknight dinner or want something to dress up for entertaining, this should do the trick.
Why You’ll Love This Recipe
Quick & Easy – Ready in under 20 minutes.
Minimal Ingredients – Uses pantry staples like garlic, butter, and lemon.
Versatile – Pairs well with rice, pasta, or even crusty bread.
Rich & Flavorful – The combination of garlic and butter creates an irresistible taste.
Ingredients
To make this delicious dish, you’ll need:
Main Ingredients:
500g large prawns, cleaned and deveined
4 tbsp unsalted butter
5 cloves garlic, minced
1 tbsp olive oil
1 tsp red chili flakes (optional, for spice)
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
Salt and pepper to taste
Optional Additions:
½ tsp smoked paprika (for a hint of smokiness)
2 tbsp white wine (for extra depth of flavor)
1 tsp honey (for a slightly sweet contrast)
Step-by-Step Instructions
Prepare the prawns First, wash and de-vein your large shrimp If you are using the frozen prawns, defrost them in cold water for about 15 minutes and then use a paper towel to pat them dry. You need to de-moisturize the prawns so they sear properly instead of steaming from their own moisture.
Step 2: Sauté Garlic You will need to use a large pan or skillet and heat some oil with the lowest heat you can then add this to the mixture. Garlic- Add to some heated oil in the pan and sauté for 30 seconds or so or until fragrant. Garlic can get bitter so be really careful not to burn it.
Step 3 – Cook Prawns Place prawns on the pan in a single layer. They should be cooked for 2-3 minutes on each side until they turn pink and slightly tented. As with all prawns you do not want too cook them for too long as they will dry out and turn rubbery.
Step 4: Melt Butter and Season Reduce the heat and melt the remaining 4 tablespoons of butter while also coating it completely all over the prawns. Salt, pepper and red chili flakes (if using ) Sprinkle everything together and stir very well until the prawns are nicely coated.
Step 5: Finish with Lemon & Parsley Use the juice of 1 tablespoon fresh lemon to add color, tang and brightness to the prawns. Sprinkle freshly chopped parsley to garnish both visually and for freshness. If your wine is white, add this now and stir for 1 minute to amp up the sauce.
Step 6 : Serve & Enjoy Take off the heat of prawns just simmer and serve them. They pair beautifully with:
Garlicky Butter Sauce on Steamed Rice — This is perhaps my favourite concoction. Pasta: Add cooked spaghetti to your prawns for a quick gourmet pasta meal. Warm Baguette-crusty Bread – Absorb that creamy sauce Garlic Butter Prawns to Die For
Use Fresh or Manage Prawns– The best taste you can get is bright maintained from days ago fresh prawns. Fresh – Use this particular premium quality large prawns if freezing did not appeal. Do not Over Cook your Prawns – They are quick cook so be vigilant. As soon as they’re pink and they have the opaque, drop them. Give season with salt to taste — If you like a little kick in spicy, then add some chili flakes or just a little cayenne pepper. Double the Butter-Garlic-Lemon — If you like your dish saucier, just up the quantities of butter, garlic and lemon to taste making more delicious liquid to dip. Real Ingredients – Fresh garlic, lemon juice and parsley bring an entirely other level of flavor to the veggies over their processed version.
Garlic Butter Prawns Variations Creamy Garlic Butter Prawns: thick the sauce with ¼ cup of heavy cream Garlic Butter Prawns – For the spice card, toss in more red chili flakes, sriracha or freshly chopped chilies for chili heads. Garlic Butter Prawns with Vegetables: Add bell peppers, Zucchini or Spinach for some nutrition and vibrant colour! Garlic Butter Prawns: Asian style – 1 tbsp soy sauce and spoonful of sesame oil for more depth of flavours. Storage & reheating directions (chili) Refrigerator: Store leftovers in airtight containers for up to 2 days Freezer– Though prawns are at their best fresh, frozen cooked prawns can easily be stored for 1 month. Freeze thaw slightly before reheating. Reheating Hacks: Stovetop: Warm the pan over very low heat for a moist sizzling with just a touch of butter. Microwave – Steat within short bursts (15-20 seconds) Oven: Wrap it in tin foil and bake at 150°C (300°F) for about 10 minutes COMBO-2 PAIRING Garlic Butter Prawns go well with the following sides and drink recipes:
Side Dishes: Garlic Bread- Essential to get the buttery richness out of your sauce. Mashed Potatoes — Make a warming and comforting side that helps to focus flavour. Grilled Vegetables — A new vegetable addition with a touch of colour.
Drinks: Sauvignon Blanc or Chardonnay (to cut through the rich butteryness) — A refreshing (bleached in sauv) white wine like Citrus Lemonade – Kick the Garlic & Butter with this fresh acidity Ice Cold Beer – Perfect pairing for your sea-food, a light lager or pilsner. Final Thoughts Garlic Butter Prawns is a super-easy elegant meal that anyone can make. You can make it so decadent with such simple ingredients, it will make any seafood lover swoon. If you use it as a side or the main course, this recipe has got you covered.
Use this recipe with large prawns from IFBFreshCatch for maximum flavor and texture! Enjoy Your meal 🍤✨
