Laguna Delicacies by Angelica Dapitan
The Philippines differs significantly in terms of food appreciation, especially when it comes to delicacies. Filipinos are accustomed to buying their favorite items whenever they visit a specific location. The Laguna Province, for example, appears to have a range of sweet delicacies that have served as a source of pride in the Philippines.
Laguna's delicacies and food appetizers are popular, in addition to its hot spring resorts, grand festivals, tourist attractions, and cultural heritages. In reality, each municipality in Laguna has its own distinct, delectable offering. The following are some of the most well-known Laguna delicacies.
 We have Espasol, it is a dry cylinder-shaped Filipino rice cake from Laguna province that is traditionally sold during the Christmas season. It's made with parched rice flour that's been cooked with delightful coconut milk and coconut stripes before being poured over a toasting rice meal. The best places to buy espasol are Los Baños, Liliw, Nagcarlan, Alaminos, and Pagsanjan. In Laguna, the cost of Espasol varies from city to city. This is offered in Liliw in three bundles for P100, but it is only available in Los Baños Laguna for P25 per box, which is cheaper than Liliw but of similar quality.

They didn't use any toasted rice flour to dust the product in Pagsanjan, where you can buy the best Espanol. Their Espasol is much more compact and does not have a dry aftertaste, which is why it is so delicious. However, it is possible to purchase in Laguna, especially at transportation terminals.

We also have buko pie, also known as coconut pie, is a popular Filipino coconut custard cake. It is recognized in the city of Los Baños, Laguna province. It's similar to a popular Filipino cream pie, with the exception that Buko pie is made with young coconut, no creams, and custard fillings. Buko Pie is made with sweetened milk that is lighter and denser, and the filling is coconut meat. Buko Pie also contains some unique ingredients, such as macapuno tarts, a thick and sticky kind of coconut. The idea of the buko pie is thought to have arisen in the province of Laguna. The Pahud sisters of Los Baños, Laguna, were the creators of this delicacy. Buko pie was once only available in the Philippines, but thanks to blast-freezing technology, buko pie makers can now export their product. People can purchase it as a pasalubong or a home gift after visiting the Philippines because it is easier to transport and more available worldwide. Buko pie used to be simple, but now it includes flavors such as pandan, cinnamon, and even almonds.  
Another one is kesong puti. It is a cheese made in the Philippines from soft, unpasteurized carabao milk curdled with vinegar, citrus, or rennet juices. It's also possible to make Kesong Puti with goat or cow's milk. Sta. Cruz, Laguna was the birthplace of kesong puti. The Government of Sta Cruz, Laguna has organized this festival to promote this famous Laguna product. It also assists in the promotion of cheesemakers' and other small businesses&#39; goods. It also taught people who wanted to get into the industry or who wanted to supplement their income with such a company how to make this specific white cheese. Kesong puti can be eaten with a variety of breads, depending on your tastes. Hot pandesal is typically eaten with Kesong Puti in Laguna. The taste is salty, and the texture and form are similar to tofu.

  Furthermore, bibingka is a sort of rice cake in the Philippines. It usually consists of damped galapong, dusty cocoa butter, moisture-laden margarine and sweet sugar. Every Christmas, side roads sellers offer the local tourists and even foreign tourists this tasty rice cake along with &quot;Puto bumbong.&quot; Bibingka is a must-try delicacy when you visit Laguna, and the best bibingka is found in Pagsanjan. It can be purchased in Pagsanjan near the city plaza. Bibingka is different from the standard recipe. It&#39;s fast and delicious. It is a simple platter, no toppings. In cooking Bibingka, they use a pot of clay and banana leaves rather than pots. Under the fire, hot coals were present, which makes Bibingka more delicious by the traditional means of food.

Have you heared about Uraró? It is an arro or arrowroot cookie known from the Philippines. The texture is dry, powdery and usually floral. They come from South Luzon, in particular from the provinces of Laguna, Quezon and Marinduque. The traditional treatment of uraró requires heavy labor. It takes a whole day, starting with harvesting arrowroots. The roots are then caught in a process called pag-ilod and smashed on a platform with a stone. The liquids collected from this process are then patinated and stored in the second process, until the stomach is discharged. The water is filled and the layer of starch kneaded to remove more water. Starch was finally dried and tamed into delicacy with katsa. Modern uraró, however, is usually derived from meal, sugar, milk, margarine and eggs. Tapioca or rice meals are even supplemented in some situations with arrowroot flour, which leads to lower cookies. There are also ingredients that may be used in the change of uraró, such as cocoa cream or maple syrup. The mouth of both versions normally lacks the quality of the traditional uraró made with the pure arrowroot flour and lard.

List of things that I HATE about the views of Filipinos part 1
Yes, I am a Filipino. The list below is the reality Filipinos can never accept. Call it an unhealthy amount of Filipino pride if you may. And I just can’t stand on this country sinking deeper and deeper into stupidity. this list will make you go #NOTproudtobepinoy
- The government. For the love of God and Satan. We have government officials who plagiarizes their speeches, steals the money of the people, and we even have homo-phobics running the god forsaken country. Help us please.
- Government’s hospitality. By far, of all the countries that I have visited, this is the only country where we almost kiss the feet of the foreign leaders. They think more of these foreign leaders and civilians into the lifestyle and welfare of the Filipinos. Have you seen how our current government treat China? God bless our Filipino fishermen. My respect is in your strong and beautiful hearts.
- The traffic. The traffic in the Philippines, particularly in Metro Manila, is almost the same with hell. 
- The public transportation. We have the worst public transportation that the government can’t solve. And when they attempt to solve it, they bought wrong fucking trains for the available railways in the country. So. Fucking. Stupid. 
- Making criminals heroes. Just google the Marcos family. I just can’t. 
- Most old-generation Filipinos are homophobic. They think being gay is a fucking sin. They think that being part of the LGBTQ+ is ‘just a phase’ or a ‘confusion’. They often say ‘Pag bakla, salot sa lipunan’ (Being gay is a plague in the society)
- Mental health is not a major concern in the Philippines. They often think that mental illness such as depression is just a way of thinking. Even a well known noon time show host thinks that depression is just for rich people. “ Yung depression gagawa lang ng mga tao yan. Gawa nila sa sarili nila, (Depression is just made up by people)” ,  Huwag ninyong suportahan. Gawa gawa lang nila yun pabayaan niyo, (Don’t support depressed people. They just made up the condition. Leave them alone).”, “Nagpapasosyal lang. Pag mayaman depressed, pag mahirap wala wala ka ng pagasa sa buhay. Ganun ‘yun e, (They’re just social climbing. For the rich, depressed, for the poor you just lost hope, That’s the way it is)”. See the stupidity?
- The victim blaming. For example in the crime of rape, almost everyone blames it on the victim on why such tragedy happen. They blame it on their way of clothing, their lifestyle, even to the parties they attend. ‘Malaswa kasi suot nya, kaya na-rape’ (Their clothes are too revealing that is why why are raped),  ‘Puro lalaki kasi ang kasama kaya narape’ (She is always with some boys that is why she is raped),  ‘Anong oras na kasi umuuwi kaya narape’ (He/she is always coming home late that is why he/she is raped), these are among the comments often heard when a news report about rape is being shown in the television. Even our elected government officials have this same kind of mindset. 
- Most of us think that having white skin is beautiful, and all other colors are unacceptable. In this country, whitening products are commercialized everywhere. And mind you, Filipinos naturally have tan ‘kayumanggi’ skin.
- We always think very highly of ourselves. Just one mistake made by some people, they think they have the right to judge like some perfection they are. as if. 
-Show business. The show business here in the Philippines are mostly consist of Caucasians, white skinned Filipinos, the mestizos and mestizas. They really don’t give emphasis on the talent, but rather on the looks. Even some actors who does not have a talent on singing have freakin’ singing careers. Call it magic and stupid. They also tackle stories by dramatizing it, not sticking to what is the truth. Most ‘true to life’ shows here are just false interpretations of what really happened. Such hypocrisy.

  Ang asignaturang Filipino at panitikan ay naipapamalas sa atin simula nung tayo ay nasa elementarya pa, dito natin natutunan ang kasaysayan at pinagmulan ng ating bansa, kung paano ito lumaki, kung paano nabuo ang wika, kung saan ito nag-mula at iba pa. Datapwat sa kasalukuyang panahon, ang asignaturang Filipino at Panitikan ay tinanggal na ng Korte Suprema sa kurikulum ng Kolehiyo na posiibleng ito ay magdulot ng kawalan sa iba pang estudyante na gusto pa magpatuloy sa pag-aaral ng wika, lalo na sa mga estudyanteng baguhan pa sa wika. Ang Agsinaturang ito ay tumutulong din saatin upang mabatid natin ang mga kapintasan sa ating panitikan at makapagsanay upang maiwasto ang pagkakamali sa paggamit ng Filipino.

   Ang asignaturang ito sa edukasyon ay nagpapakita ng pag-bibigay karangalan sa bansa at sa kapwa Pilipino dahil sa pinapahalagahan ang pinagmulan ng panitikan at wika. Ayon sa dokyumentaryo ng Brigada: Ano ang epekto ng pag-alis ng Filipino at Panitikan sa college curriculum?, “May magiging epekto kaya ito sa pagiging makabayan ng kabataan?”. Sa aking pananaw ang pag-alis ng asignaturang naglalaman ng improtanteng kasaysayan at aral ay posibleng mag-karoon ng “backlash” para sa kinabukasan dahil nawawala na ang pagpapahalaga o di na naipapakita ang pagiging matapat sa sarili mong panitikan, sa mga estudyanteng dayuhan na nais din mag-aral ng wika ay maapektuhan sa gusto man or hindi.
   Ang masasabi ko lang sa isyu ng edukasyon, hindi ako sumasangayon sa desisyon ng Korte Suprema sa pagtanggal nila ng Filipino at Panitikan sa kurikulum, dahil sa pagkawala nito ay parang nilalaglag na nila ang sarili nilang bansa dahil hindi na nila pinapakita ang pagpapahalaga at hindi na nila pinapakita ang karangalan at mahal, sa problema, hindi na nila pinapakita ang kasaysayan ng pinagmula ng wika, panitikan at iba pang katutubong pinagmulan, parang paunti-unti na rin kumukupas ang kanilang isipan sa hindi nila ipinapamalas ang dapat ipamalas.

When we hear Bicol, what comes to our mind is the perfect cone-shaped Mayon Volcano, the beautiful beaches, the waterfalls, the historical attractions for the tourist, and also their cuisine. Bicol Region consists of 6 provinces. That is Albay, Camarines Sur, Camarines Norte, Catanduanes, Masbate and Sorsogon. Bicol region is located at the southern tip of Luzon.
