A lot of places are named after historical events, battles, and people, so keep that in mind. God/Goddess names tied to your world also work well. Places are also often named after things that the area is known for, like Georgia being known for its peaches.

So, where was I with our story? Oh yes! We had finally reached California! We were all pretty excited about that. MadMac and I had both visited California previously before we had ever met each other, so being there together and with our kids was an awesome new experience. And now our kids had also gotten to see and experience Arizona and New Mexico’s geography on our journey to the Golden State. Watching the changing landscapes from Savannah, Georgia all the way to Texas, and now the desert and mountain terrain changes through the southwest has all been great learning experiences about the geography of our country that they could have never gotten through textbooks. We also took time during our travels across these states to learn fun facts about them as well as their history and how they fit into the history that we had also learned for Texas. Roadschooling is awesome!
Pio Pico RV Resort
Once we were settled into our new spot in the Pio Pico RV Resort & Campground we took some very needed rest and relaxation days after traveling for a whole week. We explored the resort we were now staying in and found it very much to our liking. This Thousand Trails Resort has a north side and a south side on either side of the main road that runs through the area. It is nestled into the mountains here about 20 minutes from Mexico, so it’s a common sight to see Border Patrol driving through the RV park and up along the mountain trails around the resort. The north side of Pio Pico is right along the San Diego National Wildlife Refuge and the south side is located north of the Otay Mountain Wilderness which is in the San Ysidro Mountains. According to the Allstays App this resort is at an elevation of 633 feet, putting you a partial way up into the mountains, which makes them look like rolling hills around you during your stay. It is a very beautiful location! Pio Pico allows ATV’s and dirt bikes to be ridden on the mountain trails, which is probably quite fun, but some visitors might find this very noisy.
Amenities
Since the Pio Pico Resort is made up of sections on two different sides of the road, it is quite spread out and large. The south side is the busiest and nicer looking section of the park. The pools and lodges are on this side including a Youth Center with toys and gaming consoles to play on. They have a Country Store that is very well stocked and then there is also the Coyote Canyon Cafe inside the Activity Center with delicious meals all day, with different home cooked style meals for supper each night….the kids wanted to go there all the time! The south side gets full really fast and has sewer hookups, if it’s full you have to go to the north side with no sewer and check each morning if any sites have opened up on the south side, that is, if you want to be on that side. Personally, for us that was just more trouble than we wanted to deal with, so we chose a spot on the north side (since the south side was full when we arrived) and we stayed there for the entire visit.Our site on the north side of Pio Pico.

No Sewer? No Problem!
With the north side not having sewer hookups, we got on Amazon and ordered a waste tote and had it delivered to the park. Quite a few of the California Thousand Trails do not have sewer hookups, so having a portable waste tote was going to be a must while we explored this state. When one of your tanks is full you just hookup the waste tote, dump your tank into it, then you pull the tote with your vehicle to the dump station instead of having to drive your whole RV to the dump. Glamorous isn’t it? LMAO! It’s part of life, thankfully the hubster takes care of all that :P The horror stories of how he has seen some people dumping their waste at the dump station is very cringe worthy though!
Internet, Cell Service?
With this resort being inside the mountains the way it is, cell services are pretty hit and miss, signals bounce around the mountains and go nowhere. Some have claimed to find luck with signals in the parking lot of the family pool and youth center, as well as in sections E and H on the south side, especially if you have a booster. Thankfully, the park offers internet for you to purchase based on the duration of your stay, so it’s affordable, and not too terribly bad…except for busy weekends when it gets bogged down.
Playground?
The north side of Pio Pico had a playground that was hidden away and a little hard to find. It was a bit of a walk to get to from our spot, but was good exercise getting out and walking to it. This playground was similar to the one at Colorado River TT. On the south side they had a newer type of playground near the family pool, and another very basic playset by the adult pool.
Wildlife!
Staying in campgrounds and preserves like Thousand Trails out in the wilds of nature, you HAVE to be aware of what kind of wildlife you may come across. As I’ve mentioned in previous posts other parks have had deer, scorpions, crazy spiders, and of course snakes. Being in desert regions means you will most likely come across rattlesnakes at some point! So be on the lookout! One evening the hubster noticed a trail in the dirt/gravel around our truck that was obviously made by a snake that must have traveled through our spot. Yikes! Thankfully we never came across anything ourselves.
Sightseeing
Eventually we got out and took the beautiful scenic drive into Chula Vista (one of the suburbs of San Diego), which is a very pretty city and is about 8 miles from downtown San Diego. There were times when the roads we were driving on were level with the roofs of houses in neighborhoods just below the road because of how the neighborhoods are stair stepped up the hills! On the drive into town you can often see people parachuting overhead! Such a sight to see the skydivers falling overhead! This neat experience is due to Skydive San Diego being located on the main road into Chula Vista from the Pio Pico RV Resort.

Tourists Living Like Locals
You may notice throughout our travels that we don’t rush from place to place like some families seem to do, trying to cram everything into a short amount of time. That’s just not us, LOL! I’m sure it’s an awesome way to see so much of our country, especially if you’ve only got a year or less to do it, but that’s just too fast for us. We like to settle into each place and relax, and really take in the atmosphere and life of that area. Staying 3 weeks at a time (and sometimes longer) really allows us to soak up the new environment we find ourselves in.
Sightseeing in our new locations and experiencing each new place that we stay in as if we are locals through the need to shop for groceries, clothes, gadgets, and other such daily life things….really adds layers to our lifestyle that you just couldn’t get by going on vacations to visit these places. Soaking in the new area and living like locals really helps in getting a feel for what it’s like in each destination, but we also do touristy things and use our tourist’s eyes to take it all in and not take it all for granted like so many of us often do when we live somewhere for years.
More Downsizing!
During our stay here, we did some more downsizing and purged the STUFF that was in the tough boxes we were still carrying around in the bed of our truck. The hubster ended up giving the boxes to various rangers in the park. Yay for purging and downsizing! It’s an ongoing life choice for sure :) We were freeing our lives of more junk that we had thought we needed, but 6 months down the road we found we didn’t really need those THINGS after all! We also needed to make room for bikes! While we were staying here at Pio Pico we began to realize that we really wanted each of us to have our own bicycles. Bikes would give us all more exercise as well as making it easier to travel around in the RV parks. As other RVer’s will tell you, when you buy new things in this lifestyle you have to get rid of other things to make room for the new! So we did :) And bicycles are much more useful and important than random STUFF we didn’t really need!
Important Things to Know When Traveling to California
Another layer added to the experiences of traveling full-time is learning about the different do’s and don’ts in each state. The differences between each state can be quite interesting as well as educational.
Water Conservation
When we arrived in California it was a REQUIREMENT to conserve water. The state had water restrictions set in place because they had been under a drought for so long, but as of my writing this the restrictions have been lifted and each water district sets its own conservation standards. Some of the RV parks are more strict about it than others, but all of them mentioned (in the paperwork they hand to you) the need to practice water conservation. When living in a typical house the average American is able to flush, pour, and drain gallons upon gallons of water into the city sewage system or even their own septic system in their backyard without much thought about the amount they might be using. However, while having to dump your black and grey water tanks every time they get full you really become aware of just how much water you use on a daily basis and it really helps with learning how to conserve and use less water. This is something we feel is very important for the kids to learn, as well as ourselves.
Fires
Another restriction in California because of the drought is that you can’t have wood campfires, it’s too dangerous. Fire pits have to be up off the ground and can only be propane, fake fire logs, charcoal, etc…..you don’t want to be the cause of a catastrophic forest fire! Also of note, California campgrounds will have ‘Spare the Air’ no burn days; this means that nothing is allowed to be burned on these days to help cut down on air pollution, so it’s your job to check and find out if it’s a no burn day before you start up a campfire.
Border Patrol Check Points
Another travel tidbit about coming to California that many people may not be aware of are the border patrol check points that you have to pass through before entering California, and I’m not talking about illegal immigrants, that’s not the only thing they are looking for. Depending on the time of year they will ask you if you are carrying any fruit or vegetables, or even plants! This is very important, because these items can pose risks to the agriculture in California. If you are not aware of it, a huge quantity of the United States’ produce comes from California, so this is a BIG DEAL. Plants and produce being brought into the state can potentially have pests in them that could inadvertently spread to crops and cause damage!
We have seen in discussions online where people argue and complain that this is ridiculous, California is stupid, etc. etc., but it is very important to preserve so much of the produce that our country depends on. Therefore, if you have a house plant of some kind that you have had for many many years, or you are growing your own traveling produce/garden and you don’t want to have it confiscated, you may need to research if it could be considered a risk to bring it, and leave it with family or friends or come to the state when this potential problem won’t be an issue.

We enjoyed our stay at Pio Pico very much, but eventually had to move on to another destination. Next, on our journey we traveled a little bit eastward in San Diego County, to Oakzanita Springs RV Campground. According to the website, this location is at 4,000 feet elevation in the Cuyamaca Mountains and is right next to the Cuyamaca State Park. It was a beautiful campground, but a little tight maneuvering around with a 34 foot travel trailer. All the sites were up and down hills, and some were even hidden by trees and brush, making some of them quite cozy spots. This Thousand Trails campground is smaller than most of the ones we have visited so far, and there were only a few sites available for us to pick from.
An important note to point out for anyone headed to this campground: When coming from Descanso on 79 you cannot safely turn into this park from this direction and you MUST continue driving past the campground to a turnout location further down the road. Once you’ve turned around and head back down 79 from the other direction you can make the turn safely into the park. When making this reservation they will email you this information to make sure you know before arriving.Our site at Oakzanita Springs.

Playgrounds? Sewer Hookups? Amenities?
This campground had a good playground and we were able to choose a site very close to it in Section-A, partially seen in the above right picture. Further back in the picture is the volleyball area and the pool. However, to be close to the playground we had to give up the option of having sewer, which is mainly available in Section-B, there were only 7 sites in Section-A that had sewer and none were available. Also, of note, Section-B was listed as having low voltage problems which can cause damage to the electrical equipment in your rig. They do have a Country Store, and the map says there is a kitchen and dining area in the Activity Center, but we never went to it. There is also a large dance floor outside with a BBQ Area.
Wildlife!
It was at this campground that MadMac once again regaled us with his night time escapades with taking out the trash where he encountered a mountain lion dashing across his path. We of course had to tease him and claim it was just a large dog, HAHA! But, there was indeed a mountain lion roaming around the park even during the daytime! Thankfully it never approached anyone. There were also wild turkeys wandering along the road that leads to the campground.
Internet, Cell Service?
Oakzanita Springs is high enough in the mountains that signals don’t bounce around and disappear, so our Verizon jetpack worked great here. They don’t have internet for purchase, however it is free to use at the lodge.
Sightseeing & Shopping
The Cuyamaca Mountain area is very scenic and the homes and small town of Descanso have a western rustic type feel to them. The town is very small with limited shopping choices, so we ventured out to El Cajon to a western styled Walmart, HAHA! I took a picture but it seems to have disappeared from my photostream I was using at the time :( It was at this Walmart that we each chose the bicycles that we wanted and added them to our travel gear! For our littlest one, we chose a pull behind type carriage instead of a seat added onto the bike, because it felt safer for her. Riding our bikes at 4,000 feet elevation was quite the workout, especially after living at sea level for the last five years, LOL!
A rambling note about stores….The different types of Walmarts that we have encountered in our travels is somewhat fascinating, LOL. As well as how they differ in their bagging choices across states and even from city to city. Surprisingly, some Walmarts only have paper bags, while most use the typical grey plastic bags or white ones, there are a few of them that use a thicker white bag with a green leaf design that is a re-usuable bag; and depending on the city regulations you may have to purchase your bags or bring your own re-usuable bags. Learning the grocery store chains that run across the states is also an interesting observation, many stores are run by the same companies so the rewards/discount memberships from one will work at another.
Birthday Planning
During our stay here we began making plans for our oldest daughter’s birthday. If you read about our traveling adventures going to California, then you might remember she wanted to spend the day at the beach on the Pacific Ocean and watching the sunset. We just had to figure out which beach would be the perfect one to fulfill her wish. We had to decide if we wanted to stick around the San Diego area for her birthday or head up the the beaches around Los Angeles. After researching the different beaches we now had access to on the West Coast, she decided that she would like to see La Jolla Cove in San Diego, that promised to be a fantastic sunset viewing location as well as the best place to see seals and sea lions in nature outside of a zoo. Once we had that figured out we decided to go back to the Pio Pico RV Resort to be closer to San Diego to celebrate her birthday.
Back at Pio Pico – South Side
Sewer Hookups? Amenities? Internet? Wildlife?
When we arrived back at the Pio Pico RV Resort & Campground, we were able to find a site open on the south side this time. Woohoo, sewer hookups! The hubster was pretty happy about that, HAHA! The spot we chose was along the row next to the cabins near the gate, and was very close to the drive up to the Activity Center and Coyote Canyon Cafe. Our new spot also happened to be right next to another family, so the kids got to play a bit with other kids :) Plus there was a wide swath of green grass covered land behind us for them to play around on, which was nice after the last two spots being mostly dirt. We discovered that the park wifi works better on the south side compared to the north side for some reason. And this time around a rattlesnake was spotted next to the nearby dumpster! We really enjoyed riding our new bikes all over the park during this visit!
La Jolla Cove
The time finally arrived to celebrate our oldest daughter’s day of birth! As part of her birthday celebrations she requested to eat breakfast for supper at one of her favorite restaurants, which is Denny’s. We decided to take her to the one in La Jolla, and she got her meal for free because it was her birthday, LOL. Afterwards, we headed to the beach to catch the sunset and see some seals and sea lions. La Jolla is pronounced La Ho-ya, and the origins of the name is disputed by historians. They aren’t sure if it originates from the Spanish word La Joya meaning “the jewel” or from a Native American term Woholle meaning “hole in the mountains”. Either way, it’s a beautiful place to see and experience. We managed to get a perfect free parking spot immediately upon our arrival without having to search for one and our girl was all smiles as soon as she was out of the truck! :D
La Jolla Cove is made up of sandstone cliffs with beach areas in between, and there are sea caves that you can tour with kayaks and paddle boards. The cove is within the San Diego-La Jolla Underwater Park which spans 6,000 acres of ocean bottom and has 4 different habitats making for an abundance in marine life creating a popular location for snorkelers, scuba divers, and swimmers, as well as migrating whales that can be spotted close to shore, in addition to the seals and sea lions.

The waves crashing up onto the rocks were pretty majestic, and watching the seals and sea lions come swimming up out of the waves onto the rocks was pretty cool too!
On the sandy beach area they were piled up in front of the stairs for us people to come up and down, making it a little difficult to get around them without them barking at you! LOL! Sadly, some people weren’t very respectful of them, and were antagonizing them on purpose :( Thankfully, the lifeguards intervened and put a stop to it pretty quickly. The marine life here are protected pretty strongly and this type of behavior is not allowed.
Overall, the birthday girl was pretty excited to be here! :D

The Ultimate Southwest USA Road Trip Itinerary • The Blonde Abroad
Jen Tenzer is sharing her road trip itinerary for the Southwestern region of the USA!
The American Southwest is an absolutely stunning setting for a road trip and offers an unparalleled mix of gorgeous red rock views, national park hiking, mysticism, delicious (sometimes spicy!) food, and a rich culture steeped in Mexican and Native American history.
The dry heat makes it an ideal place to visit in the fall and spring months when you’re looking for a break from colder climates. Don’t forget, temperatures reach well over 100 degrees in the summer and the desert can still get snow in February!
This 2-week itinerary captures some of the best of the Southwest, including adventurous activities, nature walks, opportunities to unwind, foodie destinations, and cultural attractions.
The trip begins in Arizona, travels through New Mexico, and ends in Utah. You could easily travel this itinerary in the reverse direction and/or modify it to include more of Utah’s “Mighty 5” National Parks. There are some optional side trips in case you have more travel time!

Southwest Road Trip Highlights
Day 1: Arrive in Tuscon or Phoenix
Day 2-3: Sedona, Arizona
Day 4-5: The Grand Canyon
Day 6-8: Santa Fe, New Mexico
Day 9-12: Moab, Utah
Day 13-14: Salt Lake City, Utah
Day 1: Arrive in Tucson or Phoenix
This trip starts in either Tucson or Phoenix depending on convenience and uses either major city as more of a launchpad than a destination.
That being said, I’d highly recommend checking out Saguaro National Park just outside Tucson and/or hiking Camelback Mountain in Scottsdale.
Either city is a fantastic introduction to the scenery and overall laid back attitude of the Southwestern U.S.
Also, if you’re looking to add a bit of luxury to your road trip, both of these cities have gorgeous resorts where you can indulge! Start your trip with some spa time at Miraval Resort outside Tucson or at the Phoenician in Scottsdale; it’s the perfect way to begin a digital detox during your travels.
After you’ve melted into those well-deserved wind-in-your-hair vibes, drive the ~2 hours from Phoenix or ~3.5 hours from Tucson north to Sedona.
Sedona, Arizona
Day 2-3: Explore Sedona
Sedona is an adorable and mystical town set in the middle of the Arizona desert. It truly suits all appetites!
There are 200+ hiking trails surrounding the Sedona area. Slide Rock State Park is a great place for hiking that can also double as your camping spot; just make sure to reserve a campsite in advance.
Vortexes of Sedona
Some of the town’s most famous hiking trails, like Cathedral Rock and Bell Rock, travel through Sedona’s famed spiritual vortexes.
While I’m no expert on vortexes, they are believed to be specific locations on Earth where there is a swirling condensed center of spiritual energy. The Native Americans recognized the power of these places and often used them for sacred ceremonies.
Aside from hiking to them, you can experience Sedona’s vortexes through guided yoga and meditation classes out on the red rocks or from above in a sunrise hot air balloon ride. Even their local airport is an energy vortex you can visit!
What to Do + See in Downtown Sedona
Don’t forget to carve out some time to wander around the strip of downtown stores, which reflect this same woo-woo theme. Cute shops display gorgeous crystals in the windows and there are many spiritual healers available for service from psychic mediums to reiki healers.
I even had my aura read while in Sedona! (In case you’re curious, my aura is bright yellow and green with white light at the crown of my head.)
If the spirituality thing isn’t your jam, I’d highly recommend popping into a hidden gem called Blackbird Vintage, right off the main drag in Sedona. The shop owners have curated a high-quality collection of vintage Levi jeans, rock and roll tees, and other unique accessories.
Personally, I couldn’t resist a 1984 AC/DC tour t-shirt! (Check out their Etsy shop to see if anything new has come in, too!)
Where to Eat in Sedona
When you need to break away from the heat, a cold-pressed juice from Local Juicery is just what the doctor ordered. They also have a variety of colorful smoothies, salads, and bowls – all yummy!
I also recommend The Hudson, Mariposa’s Latin Grill, or Picazzo’s Healthy Italian Kitchen as dinner options.
Day 4-5: Explore the Grand Canyon
Where to Stay at the Grand Canyon
The Grand Canyon’s South Rim is about 2 hours north of Sedona. You have quite a few options on where to set up base camp for your canyon explorations.
Within the park, there are numerous camping options on the rim, as well as hotels run by the park—like The Grand Hotel and El Tovar. If you’re looking to stay down in the canyon, there are additional camping sites you can reserve as well as another park run lodging option called Phantom Ranch.
Just be mindful that any Grand Canyon National Park lodging options often book up roughly a year in advance!
If you don’t have that kind of advanced notice, there are plenty of hotel options located outside the park in Tusayan (~10 minutes drive), Williams (~1 hour) and Flagstaff (~1.5 hours). Tusayan is closest to the Grand Canyon, but is a very small town without many other attractions or restaurants.
Flagstaff is a larger college town with lots of restaurants, breweries, shops, and other activities (like seeing petroglyphs at nearby Walnut Canyon), but is a further drive from the park. Williams is a small historic town on old Route 66 that falls somewhere in the middle of these two in terms of size and distance.
What to Do at the Grand Canyon
You will likely want 2 full days to explore the Grand Canyon itself. Do not underestimate the difficulty of the hikes, particularly if you visit during warm months!
Because the canyon hikes are out-and-back, it’s sort of a reverse mountain; you end up with a hard, uphill battle after you’ve already burned through half the trail. For that reason, the rangers strongly discourage hiking from the rim to the river and back in a single day.
Plan on either hiking down to the river and staying somewhere in the canyon overnight or hiking only a portion of the trail and back up to the rim. There are various stop-off vistas with water sources and bathrooms that make for excellent turnaround points.
I loved hiking both the popular South Kaibab Trail and Bright Angel Trails, but was very happy that I turned around after 2-3 miles to head back up to the rim!
If you have some extra time to kill before heading out of northern Arizona, definitely check out Havasu Falls, Antelope Canyon, and/or Monument Valley as additional side trips!
The crater is massive at 700 feet deep and 3/4 mile wide.
Day 6: Drive to Santa Fe
The drive from the Grand Canyon to Santa Fe is lengthy at about ~7 hours, so you should assume this drive eats up a full day of travel. That being said, there are plenty of stops along I-40 to make the most of it!
For starters, about an hour east of Flagstaff is Meteor Crater where you can see the impact remains of a meteor that crashed to earth 50,000 years ago. The crater is massive at 700 feet deep and ¾ mile wide.
It was used as a training site for the Apollo missions because of its similarity to the moon’s surface. Pretty neat and something you probably won’t see again given it’s in the middle of the desert!
Make a Pit Stop in Winslow, Arizona
Another fun touristy pit stop to fill up on gas and food is Winslow, Arizona. This small town was made famous from the 1972 Eagles’ hit “Take it Easy” with the lyrics:
“Now I’m a-standin’ on the corner in Winslow, Arizona With such a fine sight to see It’s a girl, my Lord, in a flatbed Ford Slowin’ down to have a look at me”
Across the street from your flatbed Ford photo op is Relic Road Brewing where you can pair a solid beer and burger before continuing along I-40.
Painted Desert + Petrified Forest
Lastly, spend a couple of hours checking out the Painted Desert and Petrified Forest National Park where you can see ancient dinosaur-era crystallized logs and gradient-colored teepee mountains.
All of these stops remain en route to your next Southwestern destination!
Day 7-8: Explore Santa Fe
Welcome to New Mexico! From the moment you pull into Santa Fe and see its beautiful Pueblo-style architecture, you know you’ve reached somewhere special. The town is rich with Mexican and Native American culture.
An amazing way to start your day in Santa Fe is at the Sage Bakehouse where you can sample their delicious artisan bread loaves, pastries, sandwiches, and quiches with a giant cup of coffee. I absolutely loved their homemade peach preserves atop some crusty sourdough!
You could spend hours wandering the tiny streets and shops of Santa Fe picking up perfect gifts – I scored a truly unique Mexican blanket, local salsa, and a painted silk scarf which were all absolute hits with friends and family.
Santa Fe is also an art lover’s dream with several local galleries and museums, including the Museum of International Folk Art and the Georgia O’Keefe Museum.
Where to Eat + Drink in Santa Fe
After a long day of walking around, grab a cocktail and a seat with a view at The Bell Tower Bar, a rooftop bar inside La Fonda hotel near the main square.
Santa Fe’s delicious food scene carries through to dinner. I’d highly recommend La Choza Restaurant to try NM’s famed red and green chili tacos. If you’re in the mood for Indian food, Paper Dosa is outstanding – foodies truly can’t go wrong in this town.
Other popular spots include Modern General Feed and Seed, Paloma Restaurant, and The Pantry.
Newspaper Rock has one of the largest collections of prehistoric petroglyphs in the U.S.
Day 9: Drive to Moab
The drive from Santa Fe to Moab is another long day of road tripping at about 6 hours. You can help break up the drive by stopping at various ancient ruins along the way, such as the Pueblo settlements of Bandelier National Monument, the beautiful Puye Cliff Dwellings, and/or Mesa Verde National Park.
Closer to Moab, check out Newspaper Rock where you can see one of the largest collections of prehistoric petroglyphs in the U.S.
If you have some more time to extend this leg of the trip, consider adding on Great Sand Dunes National Park where you can sled down the sand dunes or the Four Corners Monument where you can place your feet in 4 states at the same time.
Day 10-12: Explore Moab
With a Mars-like red rock landscape, two national parks, and tons of adventurous off-roading activities, the town of Moab is a must.
Before heading out for the trails, you will definitely want to fuel up with a flat white or egg sandwich at Moab Garage Co.
I visited this cute café multiple times during my stay to try their salads, sandwiches, and their special Nitroccino (essentially, an espresso milkshake)!
You will want a full day to explore each of Arches and Canyonlands NP’s, but don’t forget to leave some extra time to explore the town and take in a Hummer or ATV tour!
This town is famous for its off-roading trails and you will see loads of ATV’s trolling down the main street alongside the cars.
I took an ATV excursion with High Point Hummer & ATV Tours and had the BEST time speeding around the bumpy terrain outside Canyonlands at the Merrimack and Monitor Buttes. Other super popular off-roading trails nearby include Hell’s Revenge and Fins & Things.
Where to Eat in Moab
An extremely popular (outdoor) lunch spot to check out is the Quesadilla Mobilla food truck where I devoured a cheesy spinach and sweet potato combination that I will never forget!
I’d also recommend Fiesta Mexicana, Miguel’s Baja Grill, Jailhouse Café, and the Moab Brewery (you’ll see their beers on sale throughout Utah)!
Where to Stay in Moab
There are plenty of different places to stay in and around Moab including Airbnb’s with desert vista backyards, camping in Dead Horse Point State Park, and hotels at various price points.
I loved the pool and restaurant at the Hilton’s Hoodoo Moab, but also enjoyed a couple of relaxing nights at an Airbnb just outside town – the stargazing is crystal clear!
Great Salt Lake Desert

Day 13-14: Explore Salt Lake City
This city has so much to offer! Depending on what time of year you visit, you can spend your days skiing in nearby Park City or dipping your toes into the cool waters of the Great Salt Lake.
The city is set alongside the mountains so you get the benefit of many hiking trails and nature activities plus a trendy and well-established food scene.
Ensign Peak Trail just north of Capitol Hill is a lovely way to get a lay of the land and see the entire city from above. I loved walking around the Sugar House neighborhood and enjoying al fresco beer flights at the Wasatch Brew Pub.
There is also scooter-sharing all over SLC and it’s a fun way to breeze through different neighborhoods!
Where to Eat in Salt Lake City
I did my fair share of dining in this town and would highly recommend The Rose Establishment for chrysanthemum lattes and sweet treats.
Head to Current Fish & Oyster for incredibly fresh and upscale seafood.
And don’t miss out on Crown Burger! This SLC fast-food spot is famous for its pastrami topped cheeseburgers…which are even more delicious than they sound!
And don’t forget the fry sauce – Utah has a longstanding obsession with this ketchup and mayo combo; you’ll see it on nearly all fried food menus!
Outside of Salt Lake City
A couple of must-do quick drives just outside the city include Antelope Island State Park where bison roam freely, as well as the Bonneville Salt Flats where you’ll feel like you’ve traveled all the way to Bolivia!
Access to these salt flats is free via a rest stop west on I-80. You can even drive on it! The Bonneville Speedway nearby holds numerous land speed records for 400+ mph on the salt surface.
Just make sure to give your car a thorough scrub afterward to scrape off the corrosive salt, as well as whatever other red dirt your car has collected on this ultimate Southwest itinerary!

Discovery Channel Founder, John Hendricks and the history of Gateway Canyons
Gateway Canyons was founded by Discovery Channel Founder, John Hendricks. As a child, Hendricks’ father would tell him tales of the beautiful red rock country in Colorado. It took him a while to finally see it with his own eyes, but when he and his family first came to Gateway, Colorado in 1995, they were moved by the beauty and history of the area, as well as the spirit of its community. Mr. Hendricks knew that he was home. But he also felt compelled to share this special place with others. Soon Mr. Hendricks began the design for a sustainable, outdoor recreation resort that would highlight the beauty and take advantage of the endless adventures capable in this amazing location!

Gateway to Adventure, Luxury and Edu-travel
Gateway Canyons is located in Unaweep Canyon, one of the most unique red rock canyons in the world. The word Unaweep is a Native American term meaning “canyon with two mouths.” It is thought that the ancestral Colorado and Gunnison rivers may have cut through the soft red sandstone of the Uncompahgre Plateau, exposing stone dated to Precambrian times.
This is said to be the only canyon in the world that is drained by two creeks: East Creek and West Creek, sending water off in opposite directions. During your stay at the resort, you receive an edu-travel experience. You will meet their Curator of Curiosity, Zebulon Miracle (that is his real name!), who can set up time to speak with you about the wonders of this area, which touts special recognition in Colorado geology. Mr. Miracle will take you to explore sites that contain elements of more than a hundred million years of geological record, including fossils of dinosaurs and early amphibians. At night, Gateway Canyons offers a session from the Adventure Center to see the constellations – Venus, Jupiter and Saturn – all clearly visible in the evening sky. What a magical experience! Even the rooms at the resort are named after the constellations. Dreams in Heels’ hacienda casita was named Libra, and next to us was Orion.
The room and amenities at Gateway Canyons
Upon entering your room (in this case, Dreams in Heels’ hacienda casita) you will find the comfort of home combined with hotel luxury. From the open living room area, the amazing art on the wall, the giant TV, the table with beautiful fresh flowers, the large comfortable bed and the two bathrooms (with indoor and outdoor shower/bathtub).

Outside there’s a fire pit on the patio that turns on via wall switch (no need to worry about wood for the fire) and of course the gorgeous and peaceful red canyon in the background. Dreams in Heels even had furry friends visiting most mornings: a cute bunny and a colorful bird. We all took the time to enjoy a breath of fresh air.
Most activities are in walking distance or you can arrange for a golf cart to pick you up compliments of your concierge.

The food: The Restaurants and bars
Entrada, offers a great power breakfast and then a varied menu selection for dinner. You can choose to eat poolside is a nice brunch option and Paradox Grille which is also open for lunch and dinner.
Colorado Beer Craft Tasting at Paradox Grille
One of the highlights on Friday afternoons is Paradox Grille’s Colorado Beer Craft tasting. Even if you are not a beer connoisseur, you may be converted.

The variety of options will surprise you. Dreams in Heels’ favorite picks are: A Very White Rascal is the only one that contains yeast (and it is pretty light); Great Divide Nomad (German Style Beer) is a very old bohemian style beer (a little more bitter, but still tasty), and one that’s not on the tasting list (but you can order a bottle for two), and not to be missed is the Transatlantique Kriek: it’s combination of sour flavor with a touch of sweetness is said to be the result of its spending 2 years in a barrel in Belgium, prior to its arrival in Colorado, before a brewmaster finishes creating the beer (which includes using sour cherries).

Auto Museum
The Auto Museum Collection must be mentioned as it captures 100 years of American automotive history. Of course, it is quite impressive. It contains many historic and rare automobiles and as we all know, they just don’t make ‘em like they used to. The design, the colors and special, distinctive details made many cars comparable to a piece of art.
Among the presentation is a one-of-a-kind 1954 Oldsmobile F-88 concept car (Our Favorite one!), which is considered a rare American icon. John Hendricks purchased this classic car in 2005, after intense auction bidding, for $3.25 million. Among the cars, you will also find: a 1906 Cadillac Model H Coupe, Duesenberg, Auburn, Cord, and Cunningham marques alongside rare models from Packard, Cadillac, Pierce Arrow and many others. The museum is open daily from 10:00am – 5:00pm, except on rare holidays.
UTV Rides
The Adventure Center offers UTV and ATV guided tours. Dreams in Heels’ selection of the UTV experience was a bumpy, muddy and exhilarating ride around off-the-beaten paths! Get ready to put your helmet on and get dirty! You get to explore countless vistas on ride up. The best part was visiting the John Brown Canyon/Dolores Point Mesa, which provides exceptional views of the zone. Follow the river as it wraps its way across the state border into Utah and enjoy panoramic views of Dolores River Canyon, the Gateway, the towering La Sal Mountains and even, in the distance, the Spanish Valley. You will not be able to take a bad photo from up there!
Pro-Baja Trucks
As far as Dreams in Heels is aware, the Gateway is the only place on the world where you get to ride along with an experienced former Nascar race drivers in a pro-baja truck. The truck can go up to 140 mph but for the safety of the guests, they limit the speed to 85 mph. It is an amazing experience, better than any roller coaster! For those that fall in love with this experience, you can also arrange driving lessons. It is all part of the Driven Experiences’ customized program that combines aggressive styling with advanced off-road technology, to deliver an adrenaline-charged driving experience like no other. Dreams in Heels especially appreciated the fact that the Hendricks family is involved, as the President of Driven Experiences is Andrew Hendricks, the son of Mr. Hendricks. Discovery Channel Founder, John Hendricks and the history of Gateway Canyons
Gateway Canyons was founded by Discovery Channel Founder, John Hendricks. As a child, Hendricks’ father would tell him tales of the beautiful red rock country in Colorado. It took him a while to finally see it with his own eyes, but when he and his family first came to Gateway, Colorado in 1995, they were moved by the beauty and history of the area, as well as the spirit of its community. Mr. Hendricks knew that he was home. But he also felt compelled to share this special place with others. Soon Mr. Hendricks began the design for a sustainable, outdoor recreation resort that would highlight the beauty and take advantage of the endless adventures capable in this amazing location!

Gateway to Adventure, Luxury and Edu-travel
Gateway Canyons is located in Unaweep Canyon, one of the most unique red rock canyons in the world. The word Unaweep is a Native American term meaning “canyon with two mouths.” It is thought that the ancestral Colorado and Gunnison rivers may have cut through the soft red sandstone of the Uncompahgre Plateau, exposing stone dated to Precambrian times.
This is said to be the only canyon in the world that is drained by two creeks: East Creek and West Creek, sending water off in opposite directions. During your stay at the resort, you receive an edu-travel experience. You will meet their Curator of Curiosity, Zebulon Miracle (that is his real name!), who can set up time to speak with you about the wonders of this area, which touts special recognition in Colorado geology. Mr. Miracle will take you to explore sites that contain elements of more than a hundred million years of geological record, including fossils of dinosaurs and early amphibians. At night, Gateway Canyons offers a session from the Adventure Center to see the constellations – Venus, Jupiter and Saturn – all clearly visible in the evening sky. What a magical experience! Even the rooms at the resort are named after the constellations. Dreams in Heels’ hacienda casita was named Libra, and next to us was Orion.

Upon entering your room (in this case, Dreams in Heels’ hacienda casita) you will find the comfort of home combined with hotel luxury. From the open living room area, the amazing art on the wall, the giant TV, the table with beautiful fresh flowers, the large comfortable bed and the two bathrooms (with indoor and outdoor shower/bathtub).

Outside there’s a fire pit on the patio that turns on via wall switch (no need to worry about wood for the fire) and of course the gorgeous and peaceful red canyon in the background. Dreams in Heels even had furry friends visiting most mornings: a cute bunny and a colorful bird. We all took the time to enjoy a breath of fresh air.
Most activities are in walking distance or you can arrange for a golf cart to pick you up compliments of your concierge.

The food: The Restaurants and bars
Entrada, offers a great power breakfast and then a varied menu selection for dinner. You can choose to eat poolside is a nice brunch option and Paradox Grille which is also open for lunch and dinner.
Colorado Beer Craft Tasting at Paradox Grille
One of the highlights on Friday afternoons is Paradox Grille’s Colorado Beer Craft tasting. Even if you are not a beer connoisseur, you may be converted.

The variety of options will surprise you. Dreams in Heels’ favorite picks are: A Very White Rascal is the only one that contains yeast (and it is pretty light); Great Divide Nomad (German Style Beer) is a very old bohemian style beer (a little more bitter, but still tasty), and one that’s not on the tasting list (but you can order a bottle for two), and not to be missed is the Transatlantique Kriek: it’s combination of sour flavor with a touch of sweetness is said to be the result of its spending 2 years in a barrel in Belgium, prior to its arrival in Colorado, before a brewmaster finishes creating the beer (which includes using sour cherries).

Dreams in Heels explored everything from arranging a simple drive (how does driving a convertible Bentley around sound to you? – actually, you can pick from a selection of luxury cars), taking a helicopter tour ride around Colorado and Utah (since the Gateway is conveniently situated on the border of both), UTV rides, Pro-Baja Trophy Trucks ride along experience, Horseback riding (Dreams in Heels’ horse was so sweet and named Sugar!), Auto Museum Collection Tour, mountain biking, hiking, and the list just keeps going. Among our favorites are the Auto Museum Collection, the UTV ride and the Pro-Baja Trophy Trucks experience.
Auto Museum
The Auto Museum Collection must be mentioned as it captures 100 years of American automotive history. Of course, it is quite impressive. It contains many historic and rare automobiles and as we all know, they just don’t make ‘em like they used to. The design, the colors and special, distinctive details made many cars comparable to a piece of art.
Among the presentation is a one-of-a-kind 1954 Oldsmobile F-88 concept car (Our Favorite one!), which is considered a rare American icon. John Hendricks purchased this classic car in 2005, after intense auction bidding, for $3.25 million. Among the cars, you will also find: a 1906 Cadillac Model H Coupe, Duesenberg, Auburn, Cord, and Cunningham marques alongside rare models from Packard, Cadillac, Pierce Arrow and many others. The museum is open daily from 10:00am – 5:00pm, except on rare holidays.
UTV Rides
The Adventure Center offers UTV and ATV guided tours. Dreams in Heels’ selection of the UTV experience was a bumpy, muddy and exhilarating ride around off-the-beaten paths! Get ready to put your helmet on and get dirty! You get to explore countless vistas on ride up. The best part was visiting the John Brown Canyon/Dolores Point Mesa, which provides exceptional views of the zone. Follow the river as it wraps its way across the state border into Utah and enjoy panoramic views of Dolores River Canyon, the Gateway, the towering La Sal Mountains and even, in the distance, the Spanish Valley. You will not be able to take a bad photo from up there!
Pro-Baja Trucks
As far as Dreams in Heels is aware, the Gateway is the only place on the world where you get to ride along with an experienced former Nascar race drivers in a pro-baja truck. The truck can go up to 140 mph but for the safety of the guests, they limit the speed to 85 mph. It is an amazing experience, better than any roller coaster! For those that fall in love with this experience, you can also arrange driving lessons. It is all part of the Driven Experiences’ customized program that combines aggressive styling with advanced off-road technology, to deliver an adrenaline-charged driving experience like no other. Dreams in Heels especially appreciated the fact that the Hendricks family is involved, as the President of Driven Experiences is Andrew Hendricks, the son of Mr. Hendricks. He has over 5+ years of championship road racing pedigree in Grand Am’s Mustang Challenge Series and Continental Tire Grand Sport series as a factory driver for BMW. We also got the opportunity to interact with his partner, Jeff Humberson, who has over 20+ years of professional championship motorsports racing experience. All we have to say is wow, what a Dream Team!
