The funniest arguments are the ones where one country tries to claim a food or type of clothing is solely theirs and shouldn’t be associated with another country pointing out it also exists somewhere else. Even if ‘somewhere else’ is a neighbouring country that a century ago was a part of the same place, somehow this calls people to violence

First Step
To cook a delicious biryani, you need to season the chicken the night before. For this, put the chicken in a suitable container, then add yogurt, gramsala spice, red pepper, cumin powder, oil, turmeric, nutmeg powder and salt to it and mix, then cover the container and refrigerate overnight. Keep.
Second Step
Soak the rice with warm water and a little salt.
Third Step
Choose a large pan, put it on the gas flame and put some butter and oil in it, then let it heat up.
When the mixture of butter and oil is hot, add the precious onion to the pan and fry.
When the onion turns golden, add 1/4 glass of water to the pan and wait until the pan water is absorbed, then add the crushed garlic and grated ginger to the pan along with the spices and fry for another 2 minutes.
Fourth Step
Add the chicken with all its ingredients to the pan, then fry the chicken until its color changes.
Fifth Step
Grate the tomato and add it to the pan along with plums and bell peppers and fry until the ingredients are well mixed.
Add 1/2 cup of boiling water to the pan, reduce the gas flame and let it simmer.
Cook the ingredients for 20 to 30 minutes on low flame.
Sixth Step
In this step, you have to drain the rice. For this, pour about 8 glasses of water into a pot.
Put the pot on the stove and wait for the water to boil.
When the water starts to boil, add salt, a little oil and lemon juice.
Pour the rice into the pot and let the rice boil for 5 minutes.
When the rice is half cooked, drain it.
Seventh Step
Choose a large pot. Pour some oil into the pot, then put a layer of rice on the bottom of the pot.
Put a layer of biryani stew on the rice, then sprinkle some of the spices (cardamom, cinnamon, gramsala spice and other spices) on the stew layer.
Repeat these steps. Add some brewed saffron to the last layer, which should be rice.
Final Step
Put some mint, cilantro, and lemon on the rice, then cover the pot and let the rice brew. After 30 minutes, your delicious Pakistani Biryani is ready; Put in a serving dish and enjoy!

Cam and Iseul head out of the room and join Piper in the kitchen. Iseul says she’ll make dinner, and Cam grins. “Sure, Is. If it’s not too much of a bother.” She says and Iseul grins. “It’s not. I took a southeast Asian cooking class and I want to try a recipe for you guys.” She says, and she gets out some ingredients and makes sure she has everything. Cam watches her auntie start to prep everything, smiling as she sees how calm and confident Iseul looks while cooking.
As Iseul starts to cook, she looks at Piper and says, “You know, when Cammy was a toddler, her parents would drop her off at my old apartment for a few hours and I’d watch her and play with her and take her to the park. Plus, I’d make her this dish called Dak Juk, a rice porridge with chicken in it that isn’t too spicy*, and she’d be so excited when I placed her in her high chair to eat.” Iseul says, her eyes playful as she looks at adult Cam now, and Piper smiles. “I remember that, it was always so much fun to see you cook and grumble when you dropped something.” Cam says, grinning at her auntie. “Yup, I was trying not to curse in front of you so I chose to grumble instead.” Iseul says with a laugh.
The Burmese samosa soup is ready after a while, and Piper takes out the bowls while Cam helps Iseul shift the soup from the pot to a big bowl. Iseul ladles out to soup to the three bowls and sits with Cam and Piper at the kitchen island. “This is so good, auntie Is.” Piper says after taking a bite, and Iseul smiles. “Thanks Pipes. It’s not too spicy is it?” She teases. “No, of course not. Plus, I’m part Pakistani and grew up eating my mom and Nana Maya’s food, so I’m used to it,” she says as Iseul laughs. “Yeah, I can imagine. I had some of your mom’s biryani at a party and it was delicious but definitely spicy as heck.” Iseul says.

Dawat-e-Biryani
Dawat Yan Banquet is proud to present Dawat-e-Biryani, a collaboration between Mariam Magsi and her beloved, Gordan Sumanski. Biryani has the ability to bring people together. The yield is large, enough to satisfy all that partake in the eating of this layered, complex, historical and dynamic rice-based dish. Biryani is enjoyed in a variety of unique ways. In some parts of South Asia, like in the Sindh province of Pakistan, it is consumed with potatoes, while in other parts of the continent, such as South of India, it is eaten with eggs. Depending on the area, community, province and even family, within Pakistan itself, Biryani is created and consumed in many diverse ways and there are many healthy rivalries and culinary competitions amongst varying communities, about whose is the most authentic.
Within one Pakistani household, some members of the family may enjoy plums in their Biryani while others forego the dried fruit. Some folks like it plain, while others drown their Biryani in Raita (yogurt with cucumber). Some people eat it with their hands, while others prefer to cradle the colourful grains of rice with spoons and forks. Some like it sweet and spicy, and may even mix Zarda (a vibrant, colourful, sweet rice-based dish) with their Biryani, while others find the sweet and savoury mix to be an absolute abomination.
One aspect that qualifies Biryani for the Dawat Yan Banquet is the dish’s unique ability to unite people from all backgrounds, in feast, and in community, making the basis for the Dawat Yan Banquet. The food is inclusive, historical, and has connections to the Old Silk Road. Regional variations have all the common elements, the cause and effects of historical trading, and colonialism in the South East Asian subcontinent. Biryani brings a unique perspective to Dawat Yan, making the viewer question borders, race, culture and authenticity.
Dawat Yan Banquet is virtually hosted by Eric Chengyang and Mariam Magsi between the months of February and April, as part of the Art Gallery of Ontario's AGOxRBC Artist in Residence program, 2022.  The Flavorful Journey of SpoonSome
Biryani: A Culinary Tale
Introduction:
SpoonSome Biryani, a culinary delight that transcends borders and unites taste buds, has a journey as rich and diverse as its aromatic flavors. From humble beginnings to becoming a symbol of culinary excellence, the story of SpoonSome Biryani is a testament to the passion and dedication of its creators.
Biriyani
Biryani, a fragrant and flavorful one-pot dish, has captured the hearts and palates of millions across India. Whether it’s a festive occasion, a family gathering, or a simple weeknight dinner, biryani graces the table with its aromatic presence. In this article, we’ll explore the rich history, diverse variations, and the magic behind this beloved culinary masterpiece.
Origin of Biriyani
Biryani’s origins are shrouded in mystery, with various theories tracing it back to Persia, the Mughal courts, or even ancient India. Regardless of its beginnings, biryani has evolved over centuries, blending local ingredients, spices, and cooking techniques.
The Mughals, known for their opulent feasts, elevated biryani to an art form. They combined Persian pilaf techniques with Indian flavors, creating a harmonious symphony of rice, meat, and spices.
Regional Variations
Hyderabadi Biryani: The Nizams of Hyderabad perfected this style. It’s a marriage of Mughlai and local Telugu flavors. The raw biryani involves layering marinated meat and partially cooked rice, sealing the pot, and slow-cooking it.
Lucknowi Biryani: Awadhi biryani is fragrant and delicate. It uses saffron-infused rice and slow-cooked meat, often garnished with fried onions and raisins.
Malabar Biryani: Kerala’s Malabar coast offers a spicy version with coconut milk, curry leaves, and a hint of sweetness.
Sindhi Biryani: Influenced by Pakistani cuisine, Sindhi biryani features marinated meat, potatoes, and aromatic spices.
Origin Story:
The tale of SpoonSome Biryani begins in the bustling streets of Trivandrum, where a young man named Vysakh honed their craft in the art of biryani-making. Inspired by the rich culinary heritage of the region, a group of young entrepreneurs set out to create a biryani experience like no other. Thus, SpoonSome Biryani was born, blending traditional recipes with modern innovation.
On streets in India, where flavors collide and cultures intertwine, there exists a biryani that defies convention. Spoonsome Biryani, born from the creative mind of entrepreneur Vysakh, is more than just a dish – it’s an experience.
Spoonsome, a maverick in the culinary world, envisioned a biryani that would transcend boundaries. Our journey began with a simple question: “What if we reimagine the classic biryani?”
Spoonsome Biryani emerged as the answer – a fusion of tradition and innovation, where every grain of rice tells a story.
Early Beginnings
Recipe Perfection:
At the heart of SpoonSome Biryani's success lies its signature recipe, carefully crafted over years of experimentation and refinement. The secret blend of aromatic spices, tender meat, and fragrant basmati rice creates a symphony of flavors that dance on the palate with every bite.
Each ingredient is meticulously selected to ensure the perfect balance of taste and texture, making SpoonSome Biryani a true culinary masterpiece.
Magic of Biriyani
Basmati Rice The canvas for Spoonsome Biryani, aged basmati rice, forms the foundation. Each grain absorbs the essence of spices and marinated meat.
Marinated Meat Whether succulent chicken, tender lamb, or fragrant fish, the choice of meat defines the biryani. Spoonsome secret lies in the marinade – yogurt, spices, and love.
Spices of Cinnamon, cardamom, cloves, and star anise dance together, creating a symphony of flavors. Spoonsome spice blend is a guarded treasure.
Herbs Fresh mint, cilantro, and curry leaves add brightness and balance. Their whispers infuse every layer.
Making Delicious Dums
Biryani’s magic lies in the “dum” method. The pot is sealed with dough or cloth, trapping steam and flavors. The slow, gentle heat ensures that every grain of rice absorbs the essence of the spices and meat.
The unveiling of a biryani pot is akin to opening a treasure chest – the aroma escapes, and anticipation reaches its peak.
The Lightness Within
Spoonsome challenges the notion that biryani must be heavy. His creation is a delicate balance – rich in flavor yet light on the palate.
No excessive oil or ghee here. Instead, he achieves depth through spices and technique.
The Aroma
As you approach spoonsome, the air changes. It becomes a canvas, painted with the fragrant strokes of cinnamon, cardamom, and cloves. The spices, carefully measured, release their essence – a promise of what’s to come. The aroma dances around you, teasing your senses.
Spoonsome Biryani: A Culinary Symphony of Flavor
In the heart of bustling markets, where the air is thick with spice and anticipation, lies a biryani that defies convention. Spoonsome Biryani, born from the creative genius of entrepreneur Vysakh, transcends mere sustenance. It’s an orchestra of taste, a symphony of fragrance, and a celebration of culinary artistry.

Whether you’re a local foodie, a traveler, or new to the city, finding the best biryani in Karachi is a must to truly experience its culinary culture. Known for its spices, tender meat, and aromatic rice, Karachi’s biryani is a delicious adventure that draws food lovers from all walks of life. Here’s a comprehensive guide to help you navigate the top spots for biryani in Karachi.
The Love for Biryani in Karachi
Karachi’s food culture is vibrant, and biryani stands at its heart. With origins tracing back to the Mughal era, biryani has evolved over centuries to become a staple that Karachiites can’t get enough of. The best biryani in Karachi features layers of spiced meat, fragrant rice, and just the right kick of heat. This beloved dish is often enjoyed on all occasions, from family gatherings to casual outings, and each place has its unique spin on this classic.
Types of Biryani You Can Find in Karachi
Biryani comes in various types in Karachi, and each has its own distinct taste. Here are a few popular variations you’re likely to encounter:
Classic Karachi Biryani: Known for its intense spices and aroma, the classic Karachi biryani is usually made with beef or chicken and incorporates a unique combination of spices that give it a bold flavor.
Bombay Biryani: This type includes potatoes along with meat, and has a slightly sweeter taste due to the use of dried plums. The addition of potatoes makes it a favorite for many Karachiites.
Mutton Biryani: For those who love mutton, this biryani is rich and flavorful, with tender mutton pieces that blend perfectly with the spices.
Sindhi Biryani: This version is typically spicier, often featuring green chilies, and is packed with bold flavors. It’s a fiery delight for those who enjoy their biryani with a bit of extra heat.
Seafood Biryani: Unique to Karachi, seafood biryani uses prawns or fish, which adds a coastal twist to this traditional dish, making it a refreshing alternative for seafood lovers.
What to Look for in the Best Biryani in Karachi
Finding the best biryani in Karachi depends on a few essential qualities that define this iconic dish. Here are the elements to consider:
1. Quality of Rice
Good biryani starts with quality rice, ideally long-grain basmati that cooks to a light, fluffy texture. The rice should be separate, yet perfectly seasoned and aromatic.
2. Tenderness of Meat
The meat in biryani should be tender, succulent, and fully cooked. Whether it’s chicken, beef, mutton, or seafood, the meat should easily pull apart with a fork, absorbing the spices in each layer.
3. Balance of Spices
Karachi biryani is known for its complex spice profile. The best biryani spots maintain a balanced blend that’s neither too overpowering nor too bland, ensuring every bite is packed with flavor.
4. Aroma
The aroma is often what draws people to biryani. A good biryani has an irresistible smell due to the saffron, cardamom, and other spices that blend during the cooking process.
5. Fresh Garnishes
A touch of fresh garnishes, like fried onions, green chilies, coriander, and sometimes a boiled egg, add the final layer of flavor and texture. These small details often make a big difference in the overall biryani experience.
Why Karachi’s Biryani Shops Stand Out
Biryani Shops in Karachi
Biryani shops in Karachi have a unique charm, offering different styles, spices, and presentation. They are often modest, family-run spots, but their flavors are anything but simple. Some of the biryani shops in Karachi are known to keep secret recipes that have been passed down for generations, creating a one-of-a-kind taste that’s impossible to replicate. Many of these spots specialize in specific types of biryani, like chicken, beef, or seafood, making them experts in their chosen style.
Buffet in Karachi
For those who love variety, buffets in Karachi often feature biryani as one of their main dishes, allowing diners to enjoy it alongside other Pakistani dishes. Buffets are a great option for anyone who wants to sample biryani along with various other foods, making it easy to appreciate how it pairs with traditional sides like raita, salad, and naan.
Tips for Finding the Perfect Biryani Spot
To ensure you’re getting the best biryani in Karachi, here are some tips:
Look for Recommendations: Karachiites are passionate about biryani, and local recommendations are often the best way to discover authentic spots. Locals can guide you toward hidden gems or famous spots with a longstanding reputation.
Check for Freshness: The best biryani spots in Karachi prepare their food fresh every day. A good biryani shop won’t serve leftover biryani from the day before, as freshness plays a big role in the flavor.
Observe the Crowds: A busy biryani spot is often a good indicator of quality. If a restaurant consistently has a large crowd, it’s usually a sign that they’re serving some of the best biryani around.
Try Different Styles: Each biryani spot in Karachi has its own style, and trying different types can give you a deeper appreciation of the variations that exist within this iconic dish.
Watch for Seasonal Specials: Some places offer seasonal varieties of biryani, like seafood biryani, which may only be available at certain times of the year.
Making the Most of Your Biryani Experience
Biryani is best enjoyed with the right accompaniments, which add to the overall flavor. Here are a few traditional pairings that enhance the experience of eating biryani:
Raita: A yogurt-based condiment with cucumbers and spices, raita cools down the heat from the spices and adds a refreshing element.
Salad: Simple salads made with onions, tomatoes, and cucumbers add a crunchy contrast to the soft, fluffy biryani.
Shami Kebabs: Many Karachi biryani spots serve shami kebabs on the side, adding a layer of texture and flavor that complements the biryani.
Green Chutney: A spicy green chutney made with mint and green chilies can enhance the flavors of biryani, especially for those who enjoy extra spice.

Box of Spices in Pakistan – Traditional Designs
Box of Spices in Pakistan – Traditional Designs
Pakistan, known for its rich cultural heritage, is deeply connected to spices. From Biryani's flavors to Garam Masala's aroma, spices are an essential part of Pakistani cuisine. However, how these spices are stored has a special significance, with traditional spice boxes playing an important role in every kitchen. These boxes are not just containers but represent art, history, and culture. Let’s explore the traditional designs of spice boxes in Pakistan.
The Role of Spice Boxes in Pakistani Kitchens
In a Pakistani household, spices are a staple. Almost every meal is prepared with a blend of spices that give it a unique flavor. To keep these spices fresh and organized, traditional spice boxes are used. These boxes are usually designed with multiple compartments to store different spices like turmeric, cumin, coriander, and chili powder, all in one place.
Materials Used in Traditional Spice Boxes
Spice boxes in Pakistan are made from various materials, depending on the region and the family’s traditions. Some of the most common materials include:
Wood:
Wooden spice boxes are perhaps the most traditional. Made from sturdy wood like Sheesham (Indian Rosewood), these boxes are often intricately carved and can last for generations.
Steel:
Stainless steel spice boxes are a popular choice due to their durability. They often come with a clear glass lid so you can easily see the spices inside.
Brass and Copper:
In some regions, especially in rural areas, brass and copper spice boxes are used, giving them a more antique and elegant look.
Traditional Designs and Patterns
Pakistani spice boxes are not just functional but also beautifully designed. The traditional designs often feature geometric patterns, floral motifs, and intricate carvings that reflect local craftsmanship. Some of the most popular designs include:
Geometric Patterns:
Hexagonal or circular boxes with multiple compartments often showcase geometric patterns. These patterns are popular in northern areas like Punjab and Khyber Pakhtunkhwa
.Floral Motifs:
Spice boxes from Sindh and southern Punjab often feature floral designs, reflecting the Mughal influence in the region. These boxes are usually hand-carved or painted.
Hand-Painted Designs:
In rural areas, spice boxes are sometimes hand-painted in bright colors, featuring traditional folk art. These designs reflect the vibrancy and warmth of village life in Pakistan.
Modern Adaptations of Traditional Spice Boxes
While traditional wooden and steel spice boxes remain popular, modern adaptations are becoming more common, especially in urban areas. Many manufacturers now offer spice boxes with contemporary designs but with a nod to traditional aesthetics. For example, stainless steel boxes with laser-cut floral patterns or wooden boxes with minimalistic designs are widely available.
The Cultural Significance of Spice Boxes
For many families, spice boxes are more than just kitchen tools. They are a symbol of tradition and are often passed down from generation to generation. These boxes hold the essence of family recipes, and the spices within them carry memories of meals shared with loved ones. In some households, the spice box is an heirloom, reflecting the family’s culinary history and heritage.
Spice Boxes as Souvenirs and Gifts
Spice boxes from Pakistan are not just for local use. They have become popular souvenirs and gifts for tourists. Many shops across the country sell handcrafted spice boxes, offering a glimpse into Pakistan's rich artisanal traditions.
