The sourness of the orange and the sweetness of the Thai chili sauce come together in this Orange Chicken with Thai Sweet Chili Sauce, making a dish that's perfect for any occasion.
Ingredients: 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces. 1/2 cup cornstarch. 1/4 cup all-purpose flour. 1/4 cup vegetable oil, for frying. 1/2 cup Thai sweet chili sauce. 2 tablespoons soy sauce. 2 tablespoons orange juice. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 2 cloves garlic, minced. 1 teaspoon grated ginger. Zest of 1 orange. Green onions, sliced, for garnish. Sesame seeds, for garnish.
Instructions: Mix flour and cornstarch together in a bowl. Coat chicken pieces in the mixture and then shake off the extra. In a pan, heat vegetable oil over medium-high heat. Cook the chicken all the way through until it turns golden brown. Take it off and let it dry on paper towels. Add orange juice, rice vinegar, sesame oil, garlic, ginger, and orange zest to a different pan. Then add Thai sweet chili sauce and mix them together. Cook until everything is hot and a little thicker. Mix the fried chicken with the sauce by tossing it around. Before serving, top with sliced green onions and sesame seeds.

A colorful and tasty stir-fry with soft chicken, crunchy vegetables, and a sour orange sauce. Great for a quick and tasty dinner during the week!
Ingredients: 2 boneless, skinless chicken breasts, sliced thinly. 1 tablespoon cornstarch. 1 tablespoon soy sauce. 2 tablespoons vegetable oil. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 cup broccoli florets. 1 cup snow peas, trimmed. 3 cloves garlic, minced. 1 teaspoon ginger, minced. 1/2 cup orange juice. 2 tablespoons honey. 2 tablespoons soy sauce. 1 teaspoon sesame oil. 1 tablespoon orange zest. Salt and pepper, to taste. Cooked rice, for serving.
Instructions: In a bowl, mix sliced chicken with cornstarch and soy sauce. Set aside to marinate for 15 minutes. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from skillet and set aside. In the same skillet, heat the remaining tablespoon of vegetable oil. Add garlic, ginger, and sliced bell peppers. Stir-fry for 2-3 minutes until peppers start to soften. Add broccoli florets and snow peas to the skillet. Cook for an additional 2-3 minutes until vegetables are tender but still crisp. In a small bowl, mix together orange juice, honey, soy sauce, sesame oil, and orange zest. Return the cooked chicken to the skillet. Pour the orange sauce over the chicken and vegetables. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through. Season with salt and pepper to taste. Serve hot over cooked rice.

Traveling has its advantages.  It allows me to see this great country, meet phenomenal people who are becoming friends, and explore the occasional tea shop.  A few weeks ago in Seattle, I was able to visit the famous Pike’s Place Market and explore.  Trust me, it’s worth the visit for the variety of foods and great shopping.
I was able to visit World Spice; a great spice shop in the market and decided to pick up their Earl Grey blend.  This has a beautiful aroma of classic Earl Grey with beautiful notes of bergamot.  It was a little light on the brew but you can steep it longer to gain more strength.  I was disappointed until I started to think about it.  This brew is a great price for an introductory Earl Grey for someone getting into loose teas.  More important, I can’t wait for the weather to be over 60 F so I can sun brew this and enjoy it.

This was always my go to takeout order #orangechicken #chinesetakeout
1 lb Chicken thigh or breast 1 tsp grated ginger 1 tsp grated garlic 1 egg 1 tsp Soy sauce 1 tsp oil 1 Tbsp cornstarch 3 Tbsp flour 1 tsp baking powder 1 tsp white pepper Nyeh salt
Sauce Zest of one orange Juice of one orange (about 1/4 cup) 2 Tbsp soy sauce 1 cup chicken broth 2 Tbsp rice vinegar 2 Tbsp Shaoxing wine 1 tsp grated ginger 1 tsp grated garlic 2 Tbsp brown sugar
Additional Cornstarch slurry (1 Tbsp cornstarch + 2 Tbsp cold water) 1 tsp sesame oil
Cut your chicken into small pieces and add your egg, garlic, ginger, soy sauce and oil. Give it a mix before adding in your cornstarch, flour, and baking powder. The batter should lightly coat each piece, if not you can add more flour and cornstarch of the same ratio. Set that aside while you heat up your frying oil and mix together your ingredients for the sauce. Check the oil to see if it’s hot enough by sticking a wooden chopstick, spoon or skewer in. Once it bubbles, it’s ready. Add your chicken one piece at a time and in two separate batches to avoid overcrowding the pan. Fry each batch for 4 minutes and remove. Crank the heat to bring your oil back up to a higher temperature. Add all of your chicken back in for another 2 minutes or until it reaches your desired color. Either switch out your pan or carefully remove your oil. Pour in your sauce and bring it to a boil. Add in your cornstarch slurry, reduce the heat and allow your sauce to thicken to a glaze. Add your chicken back in and toss in the sauce along with 1 tsp sesame oil. Serve over rice, garnish with sesame seeds and green onion razzle dazzle and enjoy!
