Thai Vegan Green Curry

Thai green curry recipe for the vegetarian palate. It includes all of the authentic trimmings—lemongrass, green chilies, galangal, kaffir lime leaves, coconut milk—without the meat. Instead, it uses meat substitutes: wheat gluten or tofu, take your pick. This recipe is vegan, and you can also choose to make it gluten-free. Any way you cook it, it is such a tasty meal, you'll tend to forget just how healthy it is. Total:50 minsPrep:20 mins,Cook:30 minsYield:3 to 4 servings
For Thai Vegan Green Curry, You need:
1 stalk sliced finely and minced OR 3 tbsp. frozen or bottled lemongrass1 tablespoon coriander (ground)2 teaspoon cumin (ground)2 tablespoons soy sauce (use wheat-free for gluten-free diets)1/2 teaspoon sugar1 to 3 green chilies (sliced, to taste)1/4 cup shallot (or purple onion)3 cloves garlic1 to 2 inches fresh ginger (grated)1 tablespoon fresh lime juice1 loose cup cilantro (chopped fresh coriander leaves and stems)1 teaspoon saltHandful fresh basil For the Stir-Fry: 1 can coconut milk1 cup vegetable stock (or faux-chicken stock)2 kaffir lime leaves (or substitute 2-3 bay leaves)1 1/2 cups tofu (medium-firm sliced into cubes, or another protein source e.g. chickpeas)1 small sweet potato (cubed)1 small zucchini (sliced)Handful of snow peasGarnish: fresh basil2 to 3 tablespoons oil (for frying)
Let's start making Thai vegan green curry:
Gather the ingredients. Place all of the "green curry paste" ingredients in a food processor or blender. Add 1/3 can coconut milk (or enough to blend the ingredients) and process well. Heat a wok or deep frying pan over medium-high heat. Drizzle in oil and add the processed paste. Stir-fry until fragrant (about 2 minutes). Add stock along with the lime or bay leaves. When the sauce comes to a gentle boil, reduce heat to medium-low or just until you get a nice simmer.Add sweet potato plus tofu or wheat gluten.Simmer 7 to 10 minutes, or until the sweet potato is soft enough to pierce with a fork.Also Add bell pepper and zucchini. Stir and continue cooking for 5 more minutes, or until the vegetables are cooked but still retain their color and form. Reduce heat to low and add about 1/4 cup more coconut milk. Stir to dissolve and do a taste-test. If it's not salty enough, add more soy sauce or salt. If it's too salty, add a little fresh lime or lemon juice. If it's too spicy, add more coconut milk until you reach the desired taste.To serve, transfer to a large serving bowl or individual bowls. Sprinkle generously with fresh basil.

Gluten-Free Options:
It's easy to ensure that this dish does not include gluten; you just have to choose a few ingredients wisely. The biggest culprit is the soy sauce, so be sure to look for a brand that is wheat-free. You do also have to be careful about the stock. In general, the majority of vegetable stock is going to be gluten-free, but some may include a wheat-based yeast extract. Keep in mind that some flavored tofus may include ingredients that contain gluten. In most cases, plain tofu should be gluten-free. Tempeh is an alternative to tofu, but you need to read the labels as some include wheat. Chickpeas are another safe protein source for gluten-free diets and a fantastic choice for this dish. Making my Meatless Monday gluten-free too! I was vegetarian/pescatarian for many years so a #meatlessmonday every so often is a piece of cake, but trying to go gluten-free in my household in these last few months has been a challenge when bread and tortillas (and sometimes even cake) are on the menu. So yesterday at Whole Foods, I picked up Maria & Ricardo's Quinoa Flour Gluten Free Tortillas, some black beans, and $25 worth of organic produce (because Amazon Prime members get an extra $5 off produce when you spend $25…you’re welcome). 🍅But those pretty tomatoes...those are from my garden! 🍅 Now it’s time to make fajitas! ⁠ The Quinoa Flour tortillas from @mariaandricardos are certified gluten-free and made from quinoa flour, tapioca & potato starch and avocado oil- you can’t even tell it’s gluten-free! I have another kind of gluten-free tortillas in the fridge right now and there is just something off about the texture and density, but these get a PASS so will be adding these to my grocery list going forth! Enjoy this super quick and easy vegan pasta bake. You can make it gluten free and put your own spin on it. Best thing yet, NO NEED TO PRE-COOK YOUR PASTA! I like my pasta al dente and I found if I pre-cook the pasta before baking it, it just gets too sloppy for my liking. If I make it this way, with enough liquid it turns out perfectly. Pam Smith’s daughter Nicole, and my daughter Melissa are long time friends. Once I really got into blogging about my recipes, it was important to me to acknowledge those people who inspire me. Pam Smith is at the top of my list. She started out in the area of nutrition, had her own radio program, and now is affiliated with Epcot. She has developed her own line of spice blends and rubs that are AMAZING! My daughter and I have watched her narrate cooking demos, with well known chefs at the EPCOT Food And Wine Festival. Now Pam has gone on to perform her own food demos with her daughter Nicole narrating them by her side. What a tremendous family achievement.

I received an early Christmas package from the girls and was so excited to test a recipe out using this Mocha Chili Spice blend.  I decided to roast some asparagus using the Mocha Chili.

Equipment: 1 1/4 sheet pan Yields: 2 servings Prep Time: 5 minutes Cook Time: 10-12 minutes (time may vary depending on thickness of asparagus) Ingredients: 1 pound of Asparagus 2 tablespoons of Mocha Chili Spice Blend 1 tablespoon Kosher salt 1/4 cup olive oil
Directions: Preheat oven to 450 degrees F. Place asparagus onto sheet pan. Next, add the Mocha Chili, Kosher salt, and olive oil. Using clean hands, toss the asparagus spears so they are coated really well. Then spread them out evenly into one layer so they roast nicely.  WOW!, they were so delicious.
