Maple Shitake Quiche (Vegetarian)

Hearty and tasty, this delicious Maple Shitake Quiche makes an excellent dinner on a rainy night.
Ingredients (serves 4):
1 tablespoon unsalted butter
1 tablespoon olive oil
a dozen and a half shitake mushrooms
a large Green Onion
a small bunch Garden Parsley
a garlic clove, minced
1/4 teaspoon fleur de sel or sea salt flakes
1/4 teaspoon freshly cracked black pepper
1 1/2 tablespoon pure (Grade A) Canadian Maple Syrup
300 grams/10.5 ounces chilled Pâte Brisée (Water Shortcrust Pastry)
5 large eggs
¾ cup double cream
¼ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
2 1/2 tablespoons pure (Grade A) Canadian Maple Syrup
In a large, deep skillet, melt butter with olive oil over medium-high heat.
Thoroughly dust shitake mushrooms with a paper towel or clean brush; then, cut them into thick slices.
Once the butter is just foaming, add shitake mushrooms slices, and sauté, shaking the pan often, to coat in butter and oil, until the mushrooms start browning.
Finely chop Green Onion. Add chopped white part of the Green Onion, saving green part for later, to the skillet and cook, 1 minute.
Finely chop Parsley as well, and stir into the mushrooms. Cook, a few minutes more.
Add minced garlic, and cook, 1 minute.
Season with fleur de sel and black pepper. Cook, another minute, then deglaze with Maple Syrup. Cook, a few seconds more, and remove from the heat. Let cool completely
Preheat oven to 200°C/395°F.
Roll Pâte Brisée out thinly onto a lightly floured surface. Fit into a buttered 20cm/8″ tart tin, letting the pastry overhang on the edges. Prick the base with a fork. Place a sheet of baking paper onto the Pâte Brisée and fill with dried beans or rice. Blind bake the Pâte Brisée crust  at 200°C/395°F, 5 minutes. Carefully remove the beans and baking paper, and bake another 5 minutes, at the same temperature. Remove from the oven. Let cool slightly before trimming the edges.
In a medium bowl, whisk eggs together with double cream. Season salt and black pepper. Then, whisk in Maple Syrup until well-blended. Set aside.
Scatter cooked shitake mushrooms onto the crust. Pour Maple egg and cream mixture evenly all over.
Place in the warm oven, and bake, at 200°C/395°F, 25 to 30 minutes, until cooked through and crust is beautifully golden brown.
Serve Maple Shitake Quiche warm, with dressed lettuce.

Cheesy Spinach Quiche Recipe!

New recipe time! This time, I tried out a recipe for making spinach mushroom quiche!

The crust came apart easily, being graham, but it still came out delicious!
One thing I didn't realize while buying my ingredients was that the recipe actually calls for making your own pie crust, but I just went with a pre-made graham crust from a store. This worked out fine, let me skip the first four steps of the recipe and get right into making the quiche filling. when you DO pour it all in, the pie crust and tin may end up really full and almost overflowing, so I strongly suggest putting your quiche in a larger surrounding baking pan before putting it in the oven. I also did fine using pre-shredded cheese that comes in the little baggies, not wanting to deal with the awful mess that comes form cheese graters. And for the garlic, I didn't need to cut it super small, just make sure you remove as much of the flaky skin as possible and cut off the hard/pointy ends on every little garlic bit! With cooking they should come out nice and soft no matter the size.

This recipe is not vegan friendly (contains eggs and milk), nor gluten free (contains a pie crust), but it is vegetarian safe.

Sage Balsamic Mushroom and Feta Quiche (Vegetarian)

After spending a day on the road, returning from our holiday, this rich and flavourful Sage Balsamic Vinegar Quiche, fragrant with herbs, makes a more-ish and deliciously comforting dinner to tuck into! Happy Sunday!
Ingredients (serves 4 to 6):
375 grams/13 ounces chilled Rosemary Pastry
2 tablespoons unsalted butter
1/2 tablespoon olive oil
1 Green Onion
200 grams/7 ounces cremini and button mushrooms
a dozen leaves fresh sage
1 1/2 tablespoon Modena Balsamic Vingar
a pinch of salt and freshly cracked black pepper
4 large eggs
1 1/2 cup crème fraîche or sour cream
¼ teaspoon salt
½ teaspoon freshly cracked black pepper
4 small leaves fresh sage
100 grams/3.5 ounces Feta Cheese
Preheat oven to 200°C/395°F.
Roll Rosemary Pastry out thinly onto a lightly floured surface. Fit into a buttered 20cm/8″ tart tin, letting the pastry overhang on the edges. Prick the base with a fork. Place a sheet of baking paper onto the Rosemary Pastry and fill with dried beans or rice. Blind bake the Rosemary Pastry crust  at 200°C/395°F, 10 minutes. Carefully remove the beans and baking paper, and bake another 5 minutes, at the same temperature. Remove from the oven. Let cool slightly before trimming the edges. Set aside.
Whilst the Pastry is blind-baking, melt butter with olive oil in a large, nonstick skillet, over medium-high heat. 
Thinly slice Green Onion. Once the butter is just foaming, add white part of the Green Onion, and cook, a couple of minutes.
Slice cremini and button mushrooms into thick slices. Add mushrooms to the skillet, and sauté, coating in butter and oil, about 3 minutes.
Finely chop sage leaves, and stir them in as well. Cook, a minute more or so, until mushrooms are well-browned. 
Then, deglaze with Balsamic Vinegar. Cook, 1 minute. Season with salt and black pepper. Remove from the heat and allow to cool.
In a medium bowl, whisk eggs together with crème fraîche. Whisk in salt and black pepper. Finely chop sage leaves, and whisk them into the batter, along with chopped green part of the Green Onion. Set aside.
Scatter Balsamic mushrooms onto the tart crust. Crumble Feta liberally on top. Pour egg and cream mixture evenly all over.
Place in the warm oven, and bake, at 200°C/395°F, 25 to 30 minutes, until cooked through and crust is beautifully golden brown.
Serve Sage Balsamic Vinegar Quiche warm, with dressed lettuce.
