Minestrone Soup 🍅🧄🥕🧅

INGREDIENTS:

1 Tbsp extra-virgin olive oil

1 Tbsp plant butter

1 medium onion, chopped

2 sticks celery, chopped

3 medium carrots, peeled & sliced

3 cloves garlic, minced

1 (28 oz) can organic crushed tomatoes

4 cups bone broth or veggie broth

1 small zucchini, chopped

1 cup fresh green beans, chopped

1 (14 oz) can red kidney beans

1 (14 oz) can white kidney beans (cannellini beans)

1/2 tsp Italian seasoning

3/4 cup uncooked whole grain elbow macaroni

Himalayan salt & pepper to taste

(Optional) fresh basil

DIRECTIONS:

1. Add oil, butter, onion, celery, carrots, and garlic to large soup pot. Sautee for 7-10 min.

2. Stir in the broth, crushed tomatoes, zucchini, green beans, red kidney beans, white kidney beans, and Italian seasoning. Increase heat to high, and bring to a boil.

3. Once the soup is boiling, reduce the heat so it’s simmering and cover the pot with the lid slightly open. Cook for 10 minutes.

4. Stir in the pasta. Continue simmering the soup (lid off) for another 15-20 minutes until pasta and veggies are tender. Stir occasionally to prevent pasta from sticking to bottom.

5. Before serving, season with salt and pepper. Stir in basil.

among my long list of allergies I can’t have corn or wheat which is a huge bummer for me because I really love pasta but while I’m a little blase on rice pasta, rice pasta HATES ME it is SUCH A PAIN TO COOK

On a whim I tried this peas pasta and the results were AMAZING. It doesn’t taste like peas, the texture is DELIGHTFUL. It cooks to the right consistency SO FAST and THEN it DOESNT FALL APART/DISSOLVE like my rice pasta always does.

And the soup mix 😭 I am weeping, yall, I am legit currently debating if I want to blow my entire year end bonus on some of harmony house’s bulk soup mixes.

I made an OLIVE GARDEN RIVAL minestrone by doing

1 cup of rotini

1 cup of mix,

4 cups of water

Salt to taste

Cooked that sucker like ramen: threw it in, got it simmering, stirred occasionally til it boiled down to how much broth I wanted, and it was enough for generous bowls for two people
