The inspiration to do this breakfast is from @sangeetaamkhanna 's rather alluring post about Koraishutir Kochori , a few days earlier. I had asked her whether I could use whole wheat flour for this and she had opined that the commercial atta might work. So out we set to work following the fantastic @bongeats video on it & to pair with it , I made a fulkopir roast which is a fabulous @pikturenama recipe. This is essentially a celebration of winter produce in Bengal and as @susmitafoodguide tells me, @kandybarty looks forward to this with aloo dum. Koraishutir Kachori is typically made with maida ( refined wheat flour) , which gives its translucent , light as air quality but we were okay with sacrificing that for the nutrition from whole wheat flour . The Nigella seeds, ginger, green chilli and asafoetida flavored sweet pea filling is just delightful and frankly we felt all it required was our cucumber and mint raita to go along with it since it is so sultry here. The fulkopir roast I had bookmarked to do since I love cauliflower . Even though we Malayalis have made carrots and cabbages our own, cauliflower is still fairly rare unless it is a Gopi Manjoori ! 😆 Due to the distinct sattvik spicing of the roast , it tastes quite similar to Kashmiri Pandit Krai Gobi, but I quite liked the pairing with the Kochuri. So much so that I ended up having 4 instead of my usual two. Notun Aloo or newly grown (product of new harvest actually) potatoes are indeed winter delicacy. Those are special and using the notun aloo turned potato-based dishes more tasty for sure. Notun Aloor Dum is one such Bengali Dum Aloo prepared with no onion and no garlic! I made this year's first batch yesterday with the Notun aloo. This Potato based dish is a bliss and goes perfectly with Koraishutir Kochuri or Pulav. By the way, a few days back @poutpretty 's mom sent me a "Kouto" (container) full of Notun Aloor Dum along with Pulav and Doi Maach 😍😍. A weird but lovely way of returning containers is to fill that with homemade delicacies. Needless to say, it was beautifully cooked by Kakima. I, in fact, was suggesting Poutpretty to ask Kakima to start a food blog.
