How to Make Homemade Cucumber Lemonade(Using Blender) ! Healthy Drinks
-Ingredients:
1 large cucumber, peeled and chopped
Juice of 2 lemons
4 cups cold water
2 tablespoons honey or maple syrup (optional)
Ice cubes
Fresh mint leaves for garnish (optional)

After a long day of fully indulging ourselves in the blue zone between meeting the locals, tasting honey, and enjoying the beautiful beach of Mesakti, we finished our fantastic day at a cooking class at Thea's Ikaraian Cuisine kitchen. It was so fascinating to see the things and the people we read about before our trip come to life. We started trailing up the mountain pathways, picking fresh lavender off the side of the paths- it smelled so fresh. Further up the mountain, we reached our destination, which looked like a movie scene—the most quaint outdoor kitchen with the perfect shade and the best scents from nature around us. Around the corner were goats and sheep scaling the mountain in their fenced area, and they were pretty social! After touring around, we got to sit down with Thea (which means divine and goddess in Greek). Thea grew up in America and helped explain her new culture to us in an easier way, making us take in her home in an exciting and more relatable way. She provided the best advice for us, telling us to "live our lives and feel good about living them." She also explained how there is a happy medium between diet and exercise, which is so essential to implement for us back in the United States. It was interesting to see how drastically her life changed from moving from the United States to a farm in Ikaria and all she loves about it- such as getting to know and love your neighbors no matter what. Throughout our day, seeing how vital this community is to the local citizens was terrific.  When it comes to diet, she expressed that the meals don't make you feel bloated, how important it is your meals consist of foods from every group, and how eating is all about moderation. On the farm, they eat lots of greens and meats and prioritize fresh ingredients such as butternut squash, beans, green onions, lettuce, tomato, cucumber, chickpeas, and so much more. She also explained seasonal food differences and how they only eat cabbage and other certain vegetables in the winter. This seasonal change can help positively affect how your body tolerates and digests food. For tonight's meal, we prepared zucchini croquettes, balls of shredded zucchini, and carrots fried in olive oil. We also hand-made tzatziki with carrots, cucumbers, oil, vinegar, and Greek yogurt. We prepared soufiko, a massive pan of mixed vegetables cooked in olive oil, which included a lot of eggplant in tonight's dish. This dish has a fast preparation time and can be an excellent substitute for potatoes in the diet. We prepared these main courses but also had chickpeas mixed with mint, dill, black-eyed peas, and bread. We quenched our thirst with some of the best freshly squeezed lemonade.  As a nutrition and food systems minor, I enjoyed everything about this experience and look forward to returning home, showing these recipes to my friends and family, and implementing more in the United States. I love how this can show us that diet is a massive aspect of longevity and that hard work pays off for good health! Being able to enjoy such fresh food prepared in an environment so different from ours, where preservatives are not familiar, was almost once in a lifetime- my body could get used to this!

The Adeia - a new festival for Demeter
It's here, it's here, the Adeia is almost here!! In about 16 hours I'll be starting the festival of the Adeia as proposed by the ever lovely @thegrapeandthefig & @iliosflower . I've gone ahead and modified little bits, but the essence remains the same, which I will summarize as told by Aurora:
On a global scale, we’re dealing with a climate crisis that is putting food sources at risk. On a more local level, conflicts and abnormal weather are creating risks of bad harvests, resources shortages and/or inflations. We are aware that not everyone is impacted directly by the current ongoing issues, but we hope that this festival (or at least the idea) can be useful beyond these and be seen through a wider scope of praying for food security at large. We named the festival Adeia, from the ancient Greek ἄδεια, which conveniently can signify both “abundance”/”plenty” and “freedom from fear”/”security”. All things the festival aims for.
Who is being celebrated & invoked?
While both Demeter Soteira (the saviour) and Herakles Alexikakos (averter of evil) were originally mentioned, I will be holding this festival in honor of Demeter Soteira and Ares Karpodotes (giver of fruit) based on my praxis and personal relationships with the gods.
Offerings & Libations
I've decided to go a bit extravagant with my offerings for this as food is at the heart of this festival and if I learned anything from my Southern mom, it's that you always bring out the best food for your honored guests.
Appetizers: Figs drizzled with honey and a plate with goat cheese, apples, dolmas, and nuts Main Course: Pork Ribs (honey & brown sugar), Pork Ribs (olive oil, butter, & herbs), potato Salad, grilled whole corn, and artisanal bread loaf (not for me as I have celiac, all for Demeter!) Desert: GF honey cakes and oat milk ice cream Drinks: Cucumber-lime lemonade, mint mojitos, honey and warm milk
Rough Outline of The Adeia
Go to farmers market to buy produce, baked bread, & flowers for Demeter Soteira & Ares Karpodotes
Stop at the river on the way home & give an offering to the Potamoi (the Columbia River is the lifeblood of our valley & provides us with the water we need to survive)
Come home, start preparing food & prepare outdoor area for feast & ritual later in the evening
Visit local nurseries and buy some native plants, to be dedicated to both Demeter and Ares; specifically anything that is beneficial for pollinators given the scope of the Adeia
buy canned goods & donate to local food bank in honor of Demeter Soteira & Ares Karpodotes
Finish preparing food offerings. Light bonfire & start ritual (basically normal worship with the offerings; include the Homeric Hymn to Demeter as well as my own written devotionals)

Before I began on my impossible journey of becoming a plant-based eating guru anytime soon, I’m slowly easing into things. And it’s all starting with less sugar and eating a minimum of one salad every day.
But let’s be real. simply because you’re eating salad, you’re not necessarily eating healthy. There are tons of “salads” which will have even more calories, fat, and sugar than if you’d just eaten a burger. you'll blame it on the toppings, but most salad dressings, albeit they’re not sweet usually have sugar added to balance the flavor of acidic ingredients like vinegar.

I started with my all-time favorite Asian inspired Carrot-Ginger dressing. like a Japanese Restaurant dressing, it’s a mix of ingredients like carrot, ginger, yellow bell pepper, rice vinegar, miso paste, and vegetable oil. This dressing does need a touch a little bit of sweet to stay balanced. So to form it as low-carb as possible, I ditched the sugar and used my absolute favorite sugar substitute far and away –SPLENDA Stevia Naturals. THE INGREDIENTS YOU’LL NEED

Miso may be a good source of B vitamins, vitamins E, K, and vitamin Bc, and since it’s a fermented food (from soybeans) it also adds a lift of probiotics to the present dressing that’s good for your gut. White miso paste will help keep the color of this dressing vibrant, but any miso will do. If you can’t find miso, substitute tamari or soy.
Rice vinegar – If you’re watching your carbs or sugars make certain to use rice vinegar which has zero carbs or sugar and not seasoned rice vinegar which has sugar and salt added.
Avocado or Neutral vegetable oil – full of healthy fats and high in vitamin E and lutein avocado oil is my go-to for salad dressings once I don’t want the taste of additional virgin vegetable oil. Grapeseed oil also will work.
Sesame Oil – a couple of tablespoons of vegetable oil add a pleasant toasty flavor to the present dressing. make certain to store this within the fridge after opening to preserve freshness.
Stevia Taste Tip: Many stevia products on the market commonly contain an extract called Rebaudioside or Reb A which may have a bitter or strange aftertaste. Just remember Reb D is what you would like for the foremost sugar-like taste.
