for those going "what is hotdish"? traditional midwestern US casserole frequently brought to potluck. It's typically a meat (hamburger or tuna are most likely), canned or frozen veggies, canned soup (cream of mushroom most common) and either pasta OR the base is covered with some type of potatoes. Which could be tater tots, hash browns, or even potato chips. It's basically cheap, filling, uncomplicated, and uses a lot of shelfstable items so if you didn't have time to go shopping this week.... time for hotdish!

My thoughts on Waffle House
An Analysis and Personal Essay by Rosie & Emily Stirling-Baybie
So, this morning Emily and I went to Waffle House, and—though I never got the chance to take a picture, and thus create a food review blog—I decided to give a brief history and my personal view on the breakfast fast food chain.
Waffle House was the brainchild of realtor Joe Rogers Sr and his client/best friend Tom Forkner, with their first restaurant opening on the fifth day of September in 1955, coinciding with the rise of the fast food industry. Rogers was the one who suggested that they be open 24/7/365, which—in 2004—would lead the Federal Emergency Management Agency (or FEMA for short) to create the (frequently memed) Waffle House Index. Now I’m sure those of you who haven’t heard of this are wondering “What the hell is that?”, a visual aid.

As stated above, the Waffle House Index is the informal but still official official indicator of the severity of a storm, public disturbance, or other form of disaster based on how the local/nearest Waffle House is running—Code Green meaning “all is well”, Code Yellow meaning “this may be hard, but we’ll get through it”, and Code Red meaning “may the Fates have mercy on y’all’s souls”.
Anyway, with its many locations and its steadfast all-hours service, Waffle House has probably served more food than a lot of the mainstream fast food joints. How much exactly, you ask? Well, since the restaurants founding, Waffle House has served 2,501,866,574 eggs, 1,684,212,442 bacon strips, 1,359,881,590 orders of grits, 1,289,801,887 cups of coffee, 877,388,027 waffles, 729,065,401 glasses of Coca-Cola, 661,031,274 sausage patties, 264,925,814 omelets, 201,228,687 quarter hamburgers, 164,980,986 orders of Cheese N’ Eggs, 134,842,441 T-bone steaks, 32,215,481 slices of pie, 29,898,595 slices of ham, and 1,800,286,157 orders of hash browns,—and all those numbers are still going up to this day!
Considering the amount of hashbrowns Waffle House has dished out, the kitchen staff made their own code for the toppings.

Hailing back to the glory days of the 50s diners, the codes for the hashbrowns toppings are smothered (sautéed with onions), covered (with melted American cheese), chunked (with chunks of hickory smoked ham), diced (some grilled tomatoes for juice), peppered (fired up with spicy jalapeño peppers), capped (adorned with grilled button mushrooms), topped (prepared with Bert's Chili, a combination of chili beans, Jimmy Dean sausage, tomato, onions, etc), and country (with sausage gravy poured atop). You can even have your hash browns with all eight toppings by asking for it “all the way”.
Now, you wouldn’t have guessed from its diner-esque design and it’s delicious food, but Waffle House hasn’t always been the epitome of culinary wholesomeness that it is now. Between 1995 and 2000 alone, Waffle House had been sued 90 times on charges alternating between sexual sexual harassment and racism. However, Joe Rogers Sr openly apologized about the socio-ethical state of his and his bestie’s creation, stating that he never intended for things to end up like this and that Waffle House had served persons of all ethnicities, genders, and sexual orientations since its founding and had sought to be a haven for all. Unfortunately, that apology fell on deaf ears, with the amount of allegations having already left a dent in their reputation. And dragging behind this was its reputation for being the Wrath Ring of the fast food industry, but its not their fault entirely, if at all; because let’s face it—most (if not all) of the fights/crimes that happen here are started by drunk/high/mentally unstable college-age individuals looking for hell to raise. Still, if you ever go to Waffle House after dark, be careful.
On a brighter note, perhaps you would like to listen to some music by Waffle Records. “Whoa-holdup!” you say. “Waffle Records?” Well, you see, back in the 1980s, Rogers Sr made the genius decision that the Waffle House should put out its own line of records, complete with jukeboxes in every restaurant. And they cover every genre known to man, with most of the songs the produce related to the restaurant or breakfast food in general, from “Waffle House Family” to “There are Raisins in my Toast” to “Special Lady at the Waffle House”. Though these songs all sound like cheesy jingles, they’re all real songs from popular genres like rock and country, and all of them pretty catchy.
In diving down this waffley rabbit hole, I’ve kinda come to realize that maybe Waffle House is the most homey among fast food joints. It has its good sides and its bad sides, it started out with humble origins, its a place for everyone to meet and gather in times of trial or prosperity. So, in spite of everything that’s happening, we still have Waffle House.

My husband loves making me cream cheese omelettes with hash browns if he has the potatoes. He took me to a restaurant over 20 years ago that had "That Omelette With Those Potatoes" and I fell in love with cream cheese omelettes so hard that anytime he makes me one it takes us both back to the Hamburger Hamlet.

'The FBI will crush you': Suspended Special Agent Garret O'Boyle risks it all to warn Americans about politicized agency
Two years after being wrongly accused of a media leak, O’Boyle waits on the DOJ Office of Inspector General for redemption.
WAUKESHA, Wis.— Contemplating the hellish past two years he and his family have endured at the hands of the FBI, indefinitely suspended Special Agent Garret O’Boyle paused for a moment over his breakfast plate at a favorite local diner.
How does one sum up such a nightmare roller coaster?
Bumped from his upward career-track FBI job based on provably bogus charges, O’Boyle was suspended and lost his security clearance, his salary, his health insurance, his home, and his peace of mind. All thanks to the FBI, which he says knew the charges that started it all were false — but proceeded against him anyway. Who has words for that?
As it turns out, O’Boyle does.
“It’s evil,” he said.
During his days as a patrol officer with the Waukesha Police Department, O’Boyle sometimes walked a beat downtown near the end of his overnight shift. One of his favorite breakfast haunts was Dave’s Family Restaurant on West Broadway.
More than seven years later, O’Boyle, 38, found himself back in a booth at Dave’s, enjoying a hamburger steak, eggs, and hash browns while trying to process and verbalize what the past two years have wrought.
Back then, his goal was to become an FBI special agent, a dream he realized in mid-2018. His attempts to rectify serious problems he found at the FBI were met with a weaponized response — an unpaid suspension and a campaign of retaliation that has devastated him, his wife of 14 years, and their growing family of four daughters.
“I’ve been telling my wife since the beginning of the suspension that we’re different people now,” O’Boyle explained. “We’re changed forever. We’re never going to be the Garret and Heidi that we were. I struggle with that on one end, because we liked our life.”
As a new special agent in July 2018, O’Boyle was assigned to the resident agency in Wichita, Kansas, part of the Kansas City Field Office. He excelled at the work. In his first two years, he was named to the FBI’s Joint Terrorism Task Force, was selected for the Kansas City Division’s SWAT team, and became a defensive-tactics instructor.
When the COVID-19 pandemic swept across the globe, O’Boyle saw cracks form in the facade of the FBI as he once imagined it. There were serious problems with how the FBI handled its response to the virus. Several times O’Boyle spoke to supervisors about FBI practices he believed were civil rights violations that ran afoul of the U.S. Constitution and violated federal law.
“It soon became clear that no one within FBI management or leadership took seriously his good-faith protected disclosures of FBI wrongdoing — much less investigated them, fixed the problems or punished the wrongdoers,” said Tristan Leavitt, president of Empower Oversight, a Virginia-based group that advocates for government whistleblowers.
