Aaron is back at work in the city, so we can talk about him now. 😉😁
We both self-isolated for more than 30 days so we could safely spend time together. ❤
He was here helping me with painting & car things n stuff this week - and you know, movies & cuddles too. 🥰

I've mentioned he doesn't eat beef or pork - so when he's over we have turkey bacon. 🍳
He did bake me an entire sheet pan of pork bacon while I was working though. 🥓😍
We're otherwise VERY food compatible: we're both sugar free, keto, eat super simple, and both LOVE spinach and eggs. 🥚

Russell Stover Candy
Don't be a sugar-free sucker! These sugar-free candies are sweetened with maltitol which effects blood sugar almost as much as regular white sugar. These are not keto-friendly. Watch our video on maltitol and other sweeteners.
Margarine
Margarine is made with refined vegetable oils which increase inflammation in the body. Inflammation can lead to heart disease, joint pain, and cancer. Check out our post on vegetable oils to learn more.
Gatorade and Powerade
You may think you're getting in your electrolytes when drinking these zero-calorie sports drinks, but there's really not a lot of electrolytes in them. Check out our supplements post for the electrolyte products we recommend.
Halo Top Ice Cream
If you have good portion control, then Halo Top can be a decent low-carb ice cream option once and while. We aren't big fans of the ingredients and prefer higher quality keto brands that are sugar-free like Killer Whey and Rebel Creamery.

Ever scroll on Instagram and one of those amazing looking cookie dough ice cream sandwiches pops up on your feed? Did you instantly start drooling? Because I definitely do….ALL. THE. TIME. My brain got to thinking about how in the world I could make this macro friendly, and then I remembered my friends from Halo Top Creamery and Enlightened.
I took to the kitchen, playing around with different ingredient replacements for butter and came up with this odd combination. Butter beans (as you’ve seen in my Chewy Protein “Butter” Cookies) are very versatile with a mild flavor, making this the perfect base for the cookie dough. DO NOT BE AFRAID. I swear you can’t even taste them.
Prep time: 1.5 hours | Freeze Time: 3 hours | Yield: 8 – 2inx2in Sandwiches
Macros for 1 square without toppings: 6.3F 7.3C 10.2P
  Ingredients
125g Butter Beans (with the liquid, I use about 90g beans, 35g liquid)
50g (2tbsp +1tsp) Sunflower Butter
1tsp Vanilla Extract
35g Vanilla Whey Isolate (I used Cytosport Muscle Milk, but any brand will do)
10g Vanilla Casein Powder (I used Optimum Nutrition Gold Standard)
15g (1tbsp) Enjoy Life Dairy, Soy, Nut Free Mini Chocolate Chips
1 Pint Vanilla Halo Top (or ice cream of choice)
Begin by lining your loaf pans with plastic wrap. Make sure all inside edges are covered!
In the food processor, blend together butter beans until a fine grain like consistency has been reached
Add in the Sunbutter, vanilla extract, and protein powders and blend until a smooth cookie dough consistency is achieved. THIS WILL BE A BIT STICKY!
Transfer dough to a bowl and mix in chocolate chips with a rubber spatula
Pour 115g (half the mixture) into each prepared loaf pan
Spread mixture out evenly onto the plastic wrap using a mini offset spatula or a knife by gently pulling the dough to the corners (If necessary, it’s easier to do this by removing the plastic wrap from the pan so you can hold it down)
Place the plastic wrap with the dough back in the pan and in the freezer until dough is firm and able to handle (about 1 hour)
Remove your Vanilla Cake Halo Top from the freezer to allow to thaw when there’s about 20 min left on your timer
TO BUILD
When the dough is firm and the Halo Top has thawed it is now time to build
Remove one pan of dough from the freezer
Gently peel it from the plastic wrap and flip over back onto the plastic wrap. Leave it in the pan
Using a spoon, spread out the thawed Halo Top onto the dough in an even layer 
Remove the second pan of dough from the freezer
Gently peel it from the plastic wrap and place that side onto the ice cream
Press down gently to ensure the layers stick together
Place back in freezer for at least two hours to allow ice cream to set
Once set, cut the brick into 8 squares (about 2in x 2in) and enjoy immediately or store in the freezer for the rest of the week!

This is how you enjoy half a pint of Mammoth Creameries low carb ice cream. 😉
The chocolate peanut butter is 2 carbs per serving, 4 net carbs for half a pint. The vanilla bean is only 1 net carb per serving, 4 net carbs for the whole pint. 🍦
With those numbers, you could just grab a spoon 🥄 but I can't make it through a whole pint of Mammoth. It's rich and satisfying.
Although I used to easily eat two pints of Halo Top, or nonketo ice creams in the past. 👀
I thought maybe my appetite has just changed, but nope... I tested that a month or so ago. I can still down 1-2 pints of anything else. 😜
It has to be about the quality... ✅
