Toasted Coconut Date Bars Ingredients: 1 1/4 cup medjool dates, packed and pitted 2 cups unsweetened toasted coconut flakes (plus more for topping) 1/4 cup almond butter (natural) 1/2 cup vegan dark chocolate, chopped 1 tsp coconut oïl Directions: Blend the dates: In a food processor, blend the pitted dates until they form a sticky ball. Stop the processor, break the date ball into smaller pieces, then add the toasted coconut flakes and almond butter. Blend again until just combined. Be careful not to over-blend, as this may release the oils in the almond butter. Press into pan: Line a 6x6-inch pan with parchment paper. Press the date-coconut mixture evenly into the bottom of the pan. Cover and chill in the refrigerator for 1 hour. Melt the chocolate: In a microwave-safe bowl, melt the dark chocolate and coconut oil together, heating in 15-second increments and stirring in between until the mixture is smooth. Dip the bars: Once the mixture is chilled, cut it into 6 bars. Dip the bottom half of each bar into the melted chocolate, then place the chocolate-dipped bars onto a tray lined with parchment paper. Drizzle the remaining chocolate over the tops of the bars and sprinkle with extra coconut flakes. Chill and serve: Place the bars back in the refrigerator to chill until the chocolate is set. Banana and dry fruits bars with cocoa topping. These bars are lovely!😊 I like to bring them in my bag for a healthy and greedy break! Here's the recipe for about 6 bars: place 1 cup of buckwheat flakes, 1 banana, 5 dates, 1 tsp tahini, 1 tsp coconut oil and a little bit of water into a food processor and blend everything. Set aside and meanwhile prepare a mixture of almonds, hazelnuts and raisins coarsely crushed. Then mix both parties with a spoon and stir well so that everything is sticky. After that, place it all into a suitable baking tray with baking paper and put in the oven for about 30 minutes. Meanwhile, prepare the topping by melting 4 tsp cocoa, 1 tsp coconut oil and 1 tsp agave syrup. Then pour it over the top of the bake and place it in the refrigerator until de topping is solid. Finally score the bars into your desired shapes using a knife. So so delicious, believe me😉! #healthyfood #glutenfreevegan #glutenfree #glutenfreebar #healthybreak

“gluten free” Date Bar
Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40
Ingredients: 3c dried, pitted dates 1.3c water 1 teaspoon pure vanilla extract 3/4c packed light brown sugar 1/2 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon ground cinnamon 1c cold unsalted butter, cut into pieces 2c "gluten free" old fashioned quick rolled oats
1c “gluten free” flour: (0.3c+1T rice flour + 0.6c potato starch)
Directions: 1. Preheat oven to 350 degrees F.
2. Line 9x9 square pan with parchment paper and then spray the pan with a non- stick cooking spray.
3. Remove the pits/seed from the dates and place de-pitted dates and water in a medium saucepan and cook over low heat, stirring occasionally, until the dates are soft and have absorbed the water (8-minutes).
4. Remove saucepan from heat and stir in the vanilla extract.
5. Let the mixture cool to room temperature. Puree the dates in your food processor/blender until smooth.
6. Blend the oats, flour, sugar, baking soda, salt and ground cinnamon in food processor/blender. Pulse to combine; then add the butter and pulse until the mixture is crumbly and just begins to come together.
7. Press about 2/3 of the mixture into the pan as the base.
8. Spread the date puree evenly over the oatmeal crust; use a small offset spatula to even out the date.
9. Sprinkle the remaining dough evenly over the top of the dates, press down gently to compact.
10. Bake for about 30-minutes or until golden brown. Once the squares have cooled, cover with plastic wrap, and place in the refrigerator at least (1-hour) or until firm enough to cut easily into squares.
