Today's lunch: Tomatoes stuffed with cauliflower semolina and tomato sauce. Served with brown rice and babies spinach. Prepare the tomatoes to stuff by cutting the top and taking off its pulp carefully. Set aside. For semolina: blend raw cauliflower. For tomato sauce: place some tomatoes (including the pulp mentioned before) and chopped onion in a pan with a little bit of olive oil, cumin, turmeric, black pepper, herbs of Provence and salt. Let it cook for a few minutes and add the cauliflower semolina in the last 5 minutes. Finally, transfer this mixture into the tomatoes previously prepared. Carrot and orange raw cake. I really didn't expect it to be so fantastic!!!😊😋 Besides that, a raw cake may contains a higher amount of nutrients than a baked one! Ingredients: 3 medium carrots, juice of 1 orange, zest of 1/2 orange, 5 pitted dates, 3 tbsp of ground buckwheat flakes, 3 tbsp of grated coconut, 2 dessert spoons of cinammon, 2 tbsp of melted coconut oil, some coarsely chopped walnuts and raisins, a pinch of salt and 1 tbsp of syrup agave. For topping: coconut cream (add a little bit of vanilla powder and syrup agave for sweeter taste). Method: Cut the carrots into thin rounds, place them into a food processor and blend them until getting a soft pulp. Set aside. Blend the buckwheat flakes and the pitted dates and mix them with the carrot pulp. Then, add all the other ingredients and stir them well with a spoon. Transfer this mixture into a springform and press well. Place it in the freezer for about 1 hour. Prepare the coconut cream for filling just before serving. Banana and lemon pancakes A wonderful breakfast to share with the family on this cloudy sunday. Between a lot of delicious options for topping I picked up a homemade cocoa cream and some fresh fruits... so yummy😋 Method for 4 pancakes (+/- 5'' diameter) Ingredients: 1 cup of buckwheat flakes, 2/3 cup of almonds, 2 ripe bananas, 1 lemon zest, 2 flax eggs (2 tbsp flaxseed ground + 5 tbsp water), 2 tsp of honey, a little bit of vanilla powder and enough coconut oil for frying. First of all you should prepare de flax eggs by mixing the water and the flaxseed ground and letting stand for about 10 minutes. Meanwhile place the other ingredients into a food processor and blend them. Add the flax eggs and stir well with a spoon so that everything is sticky. Now it's time to cook the pancakes! Melt coconut oil in a non-stick pan and pour a small portion of the mixture into the pan and shape it into a round form. It takes about 3 minutes each side to cook. Then repeat this procedure until finish the mixture. Beetroot cake!!! So unlikely because I don't really like beetroots but I was attracted by its gorgeous pink color and I felt like creating a new beetroot dessert recipe and the result was excellent! I'm in love with this cake! Yummy😋 Here's the method: For crust: 2 handfuls of cashews, 1 handful of pumpkins seeds, 1 tbsp of tahini, 5 pitted dates, 1 tbsp of syrup agave. Process all crust ingredients into a crumble. Transfer this mixture into a springform and press into a crust along the base and sides. Place it in the freezer while working on the filling step. For filling: 1 small baked beetroot, 2 handfuls of cashews, 1 banana, 1/2 lemon juice and 1 tbsp of syrup agave. Blend all filling ingredients until it is smooth. Transfer the mixture into your prepared crust. Freeze for several hours. Cocoa, avocado and banana raw mousse Ingredients to mix in a blender: 4 avocados into pieces, 1 ripe banana, 10 pitted dates, 4 tablespoons of cocoa powder, a little bit of vanilla powder, a little bit of cinnamon and enough rice milk until the preparation is smooth and creamy. Delicious mango dessert You'll eat it at once without shame because it's pretty healthy: only fruit and a little bit of agar-agar (obtained from seaweed which replaces gelatin because of its high gel strength). And it's so simple to prepare! For the base: blend a mango (+/- 400ml) . Meanwhile boil 100ml of water with 2 teaspoons of agar-agar. Then add the water to the blended mango and pour it all inside a large bowl. Place it in the fridge for about 1 hour until it gets solid consistency. Cereals and seeds raw bars These bars taste fantastic😋 and are excellent to boost your energy!😄 Method - Place the following ingredients into a food processor and blend them: 1cup of oat flakes, 1 cup of almonds, 1 cup of hazelnuts, 5 dates, 2 tsp tahini, 3 tsp coconut oil and a little bit of salt. Set aside. Put the following ingredients in a separate bowl: a handful of sunflower seeds, sesame seeds, pumpkin seeds, chia seeds, goji berries, millet and oat flakes. Then mix both parts and add 3 tsp of honey. Stir well so that everything is sticky. After that, place it all into a rectangular tray with baking paper and put it in the freezer for about 1 hour. Finally cut the bars into rectangular shapes using a knife. They may be stored in the freezer and taken off just a few minutes before served. Two layers sweet potato cake with banana cream. This cake is made with 2 big sweet potatoes, 2 cups of buckwheat flour, 2 cups of almonds, 24 dates, agave syrup (facultative) and the following ingredients: For the brown layer: 4 tsp of cocoa powder, 1 cup of raspberries, 1 cup of blueberries For orange layer: 1 orange juice, 1 orange zest For filling (banana cream): 1 cup of cashews, 1 banana, a little bit of lemon juice Method: Bake the sweet potatoes in water. Meanwhile, place the almonds and dates into a food processor and blend them. Add the sweet potatoes when they're baked and blend again. Then join the buckwheat flour and mix them well so that everything is sticky. After that, divide the mixture in 2 equal parts. Add the cocoa powder, the raspberries and blueberries in one of the parts and mix everything. Add the orange juice and zest orange in the other part and mix again. After that, place each part (layer) separately into a suitable baking tray with baking paper and put it in the oven for about 30 minutes. When it is baked, let it cool down and finally you cut round shapes. For the filling, you blend the cashews, the banana and the lemon juice. Now you're ready to assemble the cake. If you want to complete this beauty you can put some fruit jam as topping. Uau it's yum! Cashew and berries yogurt. Ingredients: cashews, rice milk , agar-agar, vanilla essence, raspberries and blueberries. Preparation: Blend 2 handfuls of cashews. Meanwhile, boil 250ml of rice milk with a dessert spoon of agar-agar. Then mix both parts and add a little bit of vanilla. Place the mixture in glass cups filled with some raspberries and blueberries and put them in the fridge until they get a solid consistency.
