dear lord i am not going to survive this martini
#my goal this year is to build up my big girl liquor cabinet starting today because 1) new school year and 2) bc liquor store august sale#ends today#so what's on sale this month? gin. great ill start with a martini. classic cocktail right? this cannot possibly go wrong.#no one fucking warned me. this tastes like. so in covid when hand sanitizer was scarce my mom bought 99% industrial alcohol and mixed it#with aloe vera gel and some essential oils for scent to make her own. and this tastes how i imagine that would taste#i also got some disaronno and made an amaretto sour which was delightful. a bit perfumey but it was my first time making one ill get better#so not a total waste but oh my god#“just dump it out” i paid good money for this and im no quitter i Will finish it. but this has been the worst kind of learning experience#eve.txt

Rose Raspberry and Cream Pastry
This beautiful and delicate Rose Raspberry and Cream Pastry makes a lovely dessert or a nice mid-arvo treat on a cloudy Spring day. Happy Tuesday!
Ingredients (serves 1):
1 1/2 heaped tablespoons crème fraîche or sour cream
1 teaspoon Rose Sugar
1/4 teaspoon Rosie Gin Liqueur
90 grams/3 ounces Pâte Brisée (Water Shortcrust Pastry)
1/3 cup fresh or frozen raspberries
1 egg yolk
Preheat oven to 200°C/395°F. Line a baking tray with baking paper.
Spoon crème fraîche into a small bowl. Add half of the Rose Sugar and all of the Rosie Gin Liqueur. Give a good, gentle stir until combined.
Roll Pâte Brisée thinly onto a lightly floured surface, into a roughly 16,5cm/6.5″ square. Place Pâte Brisée square onto prepared baking tray.
Spoon Rose cream onto Pâte Brisée square, spreading it into a thick layer (in a circle). Top with fresh or frozen raspberries.
Ligthly beat egg yolk.
Fold one pointy end of the Pâte Brisée square onto the raspberry and cream filling. Brush pastry with egg yolk, and fold the opposite end on top, pressing gently to seal. Brush with egg yolk, and proceed likewise with remaining ends, until the parcel is closed. Brush generously with egg yolk and sprinkle with remaining Rose Sugar.
Place baking tray in the middle of the oven, and bake, at, 15 minutes until pastry is beautifully crisp and golden brown.
Enjoy Rose Raspberry and Cream Pastry warm, with a nice cup of tea.

Negroni Sour
1.5 oz Gin
0.5 oz Campari
0.5 oz Sweet Vermouth
0.75 oz Simple Syrup
0.5 oz Lime Juice
0.25 oz Lemon Juice
3 dashes Fee Foam
Combine all ingredients in a shaker tin with ice and shake vigorously. Double strain into chilled coupe or martini glass. Garnish with Angostura Bitters.
