Generic food cost reference-
-in west coast USA, at least.
I live 55 miles from the nearest grocery store, so food costs also factor in buying more expensive produce that has a longer shelf-life. I can't eat legumes so my food costs are a little higher because that shuts me out of a huge range of cheap-and-easy foods, but on the other hand I don't have to buy meat because I was successful in hunting last year.
So, if we take all that and average it out, I can feed myself well on $40-50 a week, shopping every three weeks or so. That's fresh food for one week, mix of fresh and longer shelf-life stuff for week 2, and frozen foods/canned foods for week 3. I have week 4 food stocked, just in case, and can do six weeks if necessary but by then I'll be down to eggs, apples and canned tuna. Been there, done that.
If you want to have a character "open the fridge and nothing's there," they're looking in the wrong place. The fridge has been empty for ten days. The canned food pantry is down to olives and tomato paste, and the freezer has an unidentifiable orange frosted lump in a Tupperware, two heels of bread in a bag and a box of Eggos that expired three years ago. That is an empty kitchen.

Stupid question but do you ever feel like a Fake Working Class person for being vegan? I haven't seen a dentist in at least ten years and I feel shamefully extravagant buying canned beans instead of dry, but I feel like because I'm buying beans instead of beef I'm a stupid, overly-privileged hipster, and I'm wondering if anyone else can relate lol
Historically meat has been a symbol of affluence often exclusive to the upper class, and the English language itself has been shaped by this relationship. Anglo-Saxon peasantry who raised animals would use the ancestor of words we associate with the animals - sheep, cow, pig, and so on. However the Norman French who had become the aristocracy used their native terms to described what they ate - the ancestors of words like beef, mutton, and pork. (Compare to modern French words such as Boeuf, Mouton, and Porc) 
For almost all of history, meat has been a rarity. Human diets - especially those of average people - have heavily consisted of vegetables, grains, fruit, and so on, subsidized by the milk, eggs, and similar products which did not require killing the animals in question. 
There are many places where this remains common - particularly in Asia where vegetarian diets have been standard for working people for both practical and spiritual reasons. (On a related note, Kashrut food laws in Judaism could also be seen as guiding us toward vegetarianism.) 
The idea of meat as a working class food is somewhat uniquely American - which I’m assuming you live in the USA given how you worded this. Here meat has a strange economy due to the fact it is heavily subsidized to the point that meat is often cheaper than vegetables. This fact twists the public perception of vegetables toward being a luxury, whereas frozen chicken nuggets become an affordable meal. If we were to end the subsidization programs however, the cost of meat would rapidly increase until Americans could no longer afford to eat it with every meal. 
Personally I do not share your experience - given the asian side of my family I see things like tofu being “traditional food” rather than “vegetarian food” and thus I’m not inclined to see it in the same light as many Americans.

Is there a long-term solution to America’s weight problem?
More than half of all American adults are overweight and it's hard to turn on the TV without encountering a commercial for another weight loss remedy. This growing epidemic of obesity has not spared even the young school children who are showing high blood pressure, and other psychological and social problems related to overweight.
 Overweight is not only a personal problem but has become a national crisis that drains our financial resources. Over 30 billion dollars are spent annually on weight reduction efforts in the United States, and the 30 billion dollar figure does not include the medical costs resulting from obesity-related diseases. For example, approximately 100,000 coronary by-passes are performed yearly at an average cost of over $70,000 each (i.e. $7 billion per year), and about 1,000 people in the U.S. alone die every day of cancer.
 Weight control can help with many of the health-related problems which can reduce insurance and medical bills; and help solve the national health care crises.
 Many of us know that to maintain a desirable weight is good, not only in terms of good looks, but more importantly, in terms of good health. However, the relationship between proper weight and health is more complicated than you think. The scales and scientific methods for calculating overweight and over all fat amounts are important, but more important in terms of health is where you carry the fat more than how much extra fat you carry. One of our aims is to tackle this problem, and to provide an effective technique to lose weight. Overweight or obesity is probably one of the most important dietary problems talked about and written about today.
 Weight problems are rare in populations where a lot of natural fruits, vegetables and whole grains are consumed. But excess weight is a common problem in developed countries like the United States, where the progress of scientific and technical development has led to the common use of processed and refined foods, as well as use of growth hormones for profitable animal farming. One of the obvious effects of this move is the high caloric intake resulting from the decreased volume of processed foods. In other words, over-consumption of calories to fill the stomach that leads to an overweight. Traces of growth hormones from farm animals are also a contributing factor for the overweight problem.
 Not only the diet but life style, whether sitting on a computer or watching TV or using a car or phone, is equally responsible for overweight crises. The problem is a new one; never before has man had so wide a choice-or so regular a supply-of good food; or such easy access to vehicles or phones that even natural exercise such as walking requires a special effort.
 All kind of diets, exercise programs and other solutions have not worked even though it has become a billion dollar industry. If it did, we will not have all these grim statistics and over-weight people walking around.
 I have known whatever is to know about weight, health, yoga, meditation from East as well as scientific approach from West. I have studied at Yale University, USA in the West, and Punjab University, India in the East. I have written 12 guides combining Eastern and Western approach to health from happiness to longevity.
 However, I could not reduce even 5 pounds with typical diet and exercise. Look below my daily eating habits and other life style that many of us including medical and scientific experts can call ideal. Here it is my typical day:
After getting up in the morning:
1 cup of tea with no sugar but little skim milk
Breakfast: ¼ cup Oatmeal cereal
Snack: Apple, Banana or other fruit
Lunch: About one cup Frozen Vegetables microwaved, plus egg-white from boiled egg.
Evening Snack: Mostly Tea only (rarely a bran muffin).
Super: Two whole wheat (or millet) chapattis equivalent to about 2 slices of bread. Vegetable cooked Indian style with spices and little olive oil.
Drink plenty of water, 2 cups skim milk, no soda, no alcoholic drink (except in a company or at a party).
Exercise: About 5-10 minutes of yoga stretches in the morning. 3-4 miles walk in the evening.
 This schedule is quite healthy and has kept me disease free, pain free and youthful in all aspects so far in my 70s now.
 You will wonder what is left to tell that can reduce weight and stomach after following the above schedule. I was thinking the same till I tried something very simple and very effective. It can be done anywhere, anytime and requires no special equipment. And this is not even any diet or vigorous exercise or some nutrient, vitamin, hormone, and drug that I am promoting. Recovery From an Eating Disorder When You Can't Afford to Buy Much Food
I found myself in the position where I had finally decided I wanted to recover and...I couldn't afford the food I needed. This is my perspective of living in Florida, USA on a 'poverty' income, so my resorces might be different than yours, but I wanted to share how I figured it out so you can maybe take another look at your options. Also, canned or dried beans make me terribly ill, so this is a 'bean-free list!!'
Things I wish I'd done differently:
1) Applied for SNAP benefits sooner. ED brain is like, 'You don't deserve that.' Guess what, I did deserve help!! I waited until I was recovering from a serious illness and could not physically work to apply and found out that I had been qualified for at least some help all along
2) Used the ibotta app. 'I'm too avant-garde to use a coupon app!' was also my ED lying it's ass off to keep me from recovering. I've earned about $50 in 5 months just buying SNAP food
3) Bought food from the Dollar stores. 'You can't buy food at the Dollar Tree!' is my internalized classism and ED giggling at me while they hug. When you get money in little bursts of $5 and $10, Dollar stores can literally help you survive. I went in there with a notebook and creepered down each isle, writing down possible options. I find it helpful to compare weights and amounts in packages with notes from the bigger stores
Things I was right about:
1) Beans are evil. I have digestive issues, and if I try to eat canned black beans I will be in horrible pain for hours. I knew what meal suggestions do not apply to me, either because that type of food is what led me down the path of restrictive eating in the first place, or my body reacts to it with shock and horror
2) Restaurants aren't bad. McDonald's kept me alive when I was recovering from food posioning and everything I tried to make nauseated me. I have no shame there! But buying food made by other people has become tactical. Tacos from the food truck cost less than I could make them for at home, and give me variety once a week. The Peruvian place has a lunch special that fills me up. I use 50% coupons for pizza and make it last by pairing it with veggies
3) Eating the same thing every day will suck the joy from your life. I recommend having 3 go-to dishes for each meal. 2 is just not enough. It takes the ED brain out of the meal-planning equation and gives you a comforting routine
How I make grocery lists:
I have sticky notes in colors coordinating with stores (i.e. blue for Mal*Wart) which live in a magnetic basket on my fridge, so I can write things as they occur to me. I start with check boxes for 'flyer,' 'ibotta' and 'coupons' so I stop to look at all of those things before I shop. I'll put another check box with 'coupon' under an item to remind me I have a digital or physical coupon for it. If I need something that I'll only buy when it's on sale, I'll write 'os' next to it so I know I'm not buying it unless it's the right time. If I can only afford some of the items that day, I put a star next to the essentials. I peel off the notes for whichever stores I'm going to and stick them on my wallet. I cross off the things I buy and circle the things I need to transfer to the next sticky
Where I shop:
I'm incredibly lucky to have a farmer's market in my city, which has food that's fresher and less expensive than produce from the grocery store. I do the majority of my shopping there, and supplement it with eggs, meat, frozen veggies and dairy from Wally World. I have a list of essentials that I purchase from Dollar Tree, like bread. I keep an eye on the Publix and Dinn ✔ Wixie flyers for BOGOs
It took me literally years to figure out a system. It's a system that keeps things as automated as possible so there's less chance of my ED paying a visit. Hope this helps somebody!

Iowa (USA) is pretty similar to MN in this regard, it seems. Our house is the same way, we have some things we just always have on hand:
-All of the above, especially frozen vegetables. Frozen peas go good in tuna noodle, frozen broccoli is good for stir fry, and a side of steamed vegetables is always good with a meaty meal-- and they rarely take more than 5 minutes in the microwave to make.
-Your protein and fresh produce should be, and I can't emphasize this enough, whatever's on sale. I've never encountered a grocery store that doesn't offer some sort of weekly deals paper or email or whatever, and it's going to be your best friend. Go through the papers (or whatever you get) and take note of the meat and produce on sale- consider if you like it, if it freezes well, if it'll keep well if you can't freeze it, then make your decisions. If nothing is appealing, ground beef, chicken breasts, broccoli, apples, and spinach/lettuce/bagged salad mixes are generally a stable fall-back for relatively low prices.
-Also,
when you look though the ads, keep an eye on crackers, packaged cookies, shelf-stable drinks (Liquids like apple juice tend to be more expensive than drink mixes), coffees and teas, and cereals (depending on your preferences, ofc)-- In other words, things that are often expensive but keep well on the shelf unopened. It's nice to have those sorts of things on hand, and it's way easier on your wallet to grab an extra or two when they're cheap.
-We need more emphasis on pasta! We keep a crate of pasta in the pantry because we use it so often- it's often on sale from $0.99-$2. Rotini gets you pasta salad, spaghetti gets you spaghetti and chicken alfredo, a bag of dried egg noodles gets you tuna noodle (and fresh egg noodles are dead easy to make), macaroni gets you goulash and mac n cheese, lasagna noodles get you... lasagna... (also easier and cheaper to make than you think), and more. Pasta recipes are bountiful on the internet, experiment some with it!
-Spices. If your spice cabinet looks kind of sad (or nonexistent), toss a new spice into your cart occasionally, they rarely cost more than 3 or 4 dollars. A google search will give you an outline on what it's good for, then you're free to try some wherever you'd like. It's also worth seeing if your grocery store sells fresh herbs (usually in the produce aisle). They're usually expensive, but sales roll around occasionally that get me some fresh basil or mint for 2 or 3 dollars. If you've got a green thumb, an herb on a windowsill can brighten most meals and can range from free via recycling to a few bucks for a fairly young plant- I'd reccomend green onions, chives, cilantro/coriander, and thyme to a beginner.
-Jarred sauces, oh man. They're the best for a lazy meal (Boil some noodles, pour a jar of alfredo over them, add the peas you just steamed in-bag in the microwave, voila), can supplement those protein and rice dishes, and are fairly shelf stable. Again, keep an eye on the ads and grab any prego, alfredo, or pesto your heart desires. Depending on where you live, your grocery's "ethnic" section might have some Indian sauces like kofta sauce and korma that warm up nicely with leftover cooked chicken and some rice.
-Also a good idea to keep an eye on baking supply sales if you bake (or are interested)-- there's no feeling like walking out of the Hyvee with a 99 cent bag of flour the weight of a baby and then turning it into. So much bread.

*I work at a grocery store here in Northern Nevada (USA) and see pricing for these items every day, although the prices for produce change depending on the season. Always look for seasonal produce to make your money stretch further. Also these are reasonable and common prices for the town I live in. I realize some regions are much more expensive.
This list was created assuming that you don’t have a completely bare pantry. I would assume that you already have a few staples like seasonings, Soy sauce (or tamari), sweetener, nut butter and other condiments. Try to buy things like rice in bulk on weeks you have a few extra bucks to spend! It’ll save you money and save on packaging over time!

These can be made in place of eating oatmeal every day. You just mash some banana and mix in some applesauce. (If you don’t already have applesauce you can cook down some apples until they are super soft and then mash them up.)  Add some cinnamon and sweetener to your taste. Also feel free to add nut butter at this point. Stir in the oats a little bit at a time. Make sure the mixture is still pretty wet because the oats will absorb all the moisture. Bake at 350 F.  Check after 20 minutes. Keep baking at 5 min increments until done.
2.       Oatmeal
Everyone knows how to make this. Oats + water (or Alt milk) and add everything you like. Cinnamon, sweetener, chopped apples, banana, or nut butter.
3.       Breakfast cookies
These basically involve smashing together banana and oats and pressing them into cookie form and baking them at 350 degrees. I’d probably add a bit of cinnamon and nut butter to these too. I haven’t actually made these yet, but I keep seeing recipes for them!
Salad, Baked potatoes, and pastas are foods we all know how to make! However cabbage is so cheap and so versatile so here are a few examples of meals:
1.       Egg roll in a bowl
Dice ½ onion. Add to pan and sauté for 1 minute. Chop up the cabbage and add to pan. Stir fry until beginning to wilt a bit. Add in grated or chopped carrot (depends on how much crunch you want in your dish) and let cook for 10 minutes or so. Drizzle vegetables with soy sauce. If you have dried spices you’re gonna want to add garlic and ginger to this. If you happen to have any other frozen or canned veggies this would be a good time to add them.  Also if you have a pretty big appetite or need to feed more than 1 person, you could cook up some rice and make a big meal out of this!
2.       Cabbage steaks are my go-to broke meal. I cut up cabbage into steaks and then I just lather them a bit in olive oil and throw some seasoning on them. Sometimes I have breadcrumbs in my pantry and sprinkle those on top. Bake at 350 and just keep an eye on them. The edges will start to get toasty and then they’re done. Cut up some potatoes in wedges and bake them up to add some bulk to this meal!
 And for those of you with a sweet tooth you should always have a bunch of ripe bananas in the freezer to make banana nice cream! cheapest and healthiest dessert EVER :D

  More than half of all American adults are overweight and it's hard to turn on the TV without encountering a commercial for another weight loss remedy. This growing epidemic of obesity has not spared even the young school children who are showing high blood pressure, and other psychological and social problems related to overweight.
 Overweight is not only a personal problem but has become a national crises that drains our financial resources. Over 30 billion dollars are spent annually on weight reduction efforts in the United States, and the 30 billion dollar figure does not include the medical costs resulting from obesity-related diseases. For example, approximately 100,000 coronary by-passes are performed yearly at an average cost of over $70,000 each (i.e. $7 billion per year), and about 1,000 people in the U.S. alone die everyday of cancer.
 Weight control can help with many of the health-related problems which can reduce insurance and medical bills; and help solve the national health care crises.
 Many of us know that to maintain a desirable weight is good, not only in terms of good looks, but more importantly, in terms of good health. However, the relationship between proper weight and health is more complicated than you think. The scales and scientific methods for calculating overweight and over all fat amount are important, but more important in terms of health is where you carry the fat more than how much extra fat you carry. One of our aim is to tackle this problem, and to provide an effective technique to lose weight. Overweight or obesity is Probably one of the most important dietary problems talked about and written about today.
 Weight problems are rare in populations where a lot of natural fruits, vegetables and whole grains are consumed. But excess weight is a common problem in developed countries like the United States, where the progress of scientific and technical development has led to the common use of processed and refined foods, as well as use of growth hormones for profitable animal farming. One of the obvious effects of this move is the high caloric intake resulting from the decreased volume of processed foods. In other words, over-consumption of calories to fill the stomach, which leads to an overweight. Traces of growth hormones from farm animals is also a contributing factor for the overweight problem.
 Not only the diet but life style, whether sitting on a computer or watching TV or using a car, is equally responsible for overweight crises. The problem is a new one; never before has man had so wide a choice-or so regular a supply-of good food; or such easy access to vehicles that even natural exercise such as walking requires a special effort.
 All kind of diets, exercise programs and other solutions have not worked even though it has become a billion dollar industry. If it did, we will not have all these grim statistics and over-weight people walking around.
 I have known whatever is to know about weight, health, yoga, meditation from East as well as from West. Because I have an advanced degree in science in the west at Yale University in USA and had my earlier education in the East at Punjab University in India. I have written 12 guides combining Eastern and Western approach to health from happiness to longevity.
 However, I could not reduce even 5 pounds with typical diet and exercise. Look below my daily eating habits and other life style that many of us including medical and scientific experts can call ideal. Here it is my typical day:
After getting up in the morning:
1 cup of tea with no sugar but little skim milk
Breakfast: ¼ cup Oatmeal cereal
Snack: Apple, Banana or other fruit
Lunch: About one cup Frozen Vegetables microwaved, plus egg-white from boiled egg.
Evening Snack: Mostly Tea only [rarely a bran muffin].
Super: Two whole wheat (or millet) chapattis equivalent to about 2 slices of bread. Vegetable cooked Indian style with spices and little oil.
Drink plenty of water, 2 cups skim milk, no soda, no alcoholic drink (except in a company or at a party).
Exercise: About 5-10 minutes of yoga stretches in the morning. 3-4 miles walk in the evening.
 This schedule is quite healthy and have kept me disease free, pain free, and youthful in all aspects so far in my 70s now.
 You will wonder what is left to tell that can reduce weight and stomach after following the above schedule. I was thinking the same till I tried something very simple and very effective. It can be done anywhere, anytime and requires no special equipment. And this is not even any diet or vigorous exercise or some nutrient, vitamin, hormone, and drug that I am promoting.
 Finally remember "your body is a temple of the soul and the holy spirit, a gift from God." Consider every day what you can do to Care for the Temple. With child obesity rates at national health emergency levels, it is time to treat those fat, unhealthy, undisciplined, drug infested bodies like a temple.
