My wife made this rather beautiful salad to go with the meatloaf tonight. The cheese is this great soft French cheese (available at Trader Joe’s). The bacon in this case is sugar-free, nitrate, nitrite - free. The meatloaf is classic keto recipe - ground beef, ground pork, ground lamb (but I forgot to take a pic).

Camembert was reputedly first made in 1791 by Marie Harel, a farmer from Normandy, following advice from a priest who came from Brie. She is credited with having refined a previously existing cheese recipe from the Pays d'Auge region and having launched it into the wider world. She passed her secrets on to her daughter, whose husband, Victor Paynel, presented one of his wife's best cheeses to Napoleon III who gave to it his royal seal of approval.
The origin of the cheese known today as Camembert is more likely to rest with the beginnings of the industrialization of the cheesemaking process at the end of the 19th century. In 1890, an engineer, M. Ridel, devised the wooden box that was used to carry the cheese and helped to send it for longer distances, in particular to America, where it became very popular. These boxes are still used today.
Before fungi were understood, the color of Camembert rind was a matter of chance, most commonly blue-grey, with brown spots. From the early 20th century onwards, the rind has been more commonly pure white, but it was not until the mid-1970s that pure white became standard.
The cheese was famously issued to French troops during World War I, becoming firmly fixed in French popular culture as a result. It has many other roles in French culture, literature, and history. It is now internationally known, and many local varieties are made around the world.
The variety named Camembert de Normandie was granted a protected designation of origin in 1992 after the original AOC in 1983. The AOC Camembert can only be made from raw, unpasteurized milk from Normandes cows. Problems with hygiene regulations have caused restrictions on importation and sale in some countries, notably the US.
Brie is a similar soft cheese, also made from cow's milk. However, there are differences such as its origin, typical market shape, size, and flavor. Brie originates from the Île de France while camembert comes from Normandy. Traditionally, brie was produced in large wheels, either 22.9 cm (9 in) or 36.8 cm (14.5 in) in diameter, and thus ripened more slowly than the smaller camembert cheeses. When sold, brie segments typically have been cut from the larger wheels (although some brie is sold as small, flat cylinders), and therefore its sides are not covered by the rind. By contrast, camembert is ripened as a small round cheese 10.2 cm (4 in) in diameter by 3.2 cm (1.26 in) thick and fully covered by rind. This ratio change between rind and paste makes camembert slightly stronger when compared to a brie ripened for the same amount of time. Once the rind is cut on camembert it typically has a more pungent aroma than brie. In terms of taste, camembert has a stronger, slightly sour, and sometimes chalky taste. The texture of camembert is softer than brie, and if warmed camembert will become creamier, whereas brie warms without losing as much structure.
Typically camembert tends to be sold whole in thin, round, wooden containers made from poplar. Modern variations in packaging include cartons and tin cans, with a ring-pull tab for opening (Camembert in metallic boxes does not exist on the French market). The cardboard boxes are reserved for the low-cost camemberts. The product is the same as in the wooden container, wrapped dry in a paper/foil wrapper, and not immersed in brine or oil.

what do you look for in a brie then?
PERSONALLY I prefer a mild, buttery brie. Lots of brie has a kind of “funk” to it, where it’ll stink up your kitchen and have a somewhat bitter taste as you swallow it (a “bitter finish”, if you want to sound like you know what you’re talking about). There is a TENDENCY for Italian brie to be mild and buttery, and for French brie to be earthy and mushroomy. That being said, all my favorite mild bries are in fact, French. So it’s not a hard-and-fast rule.
Here’s a general guide, keeping in mind that there will be exceptions to all of this:
A very pale, white rind and paste (“paste” being fancy-speak for “the middle, soft bit of a brie”) will tend to be mild and buttery. A more golden hue will tend toward to more earthy, funky, bitter brie.
The closer a hand-cut cheese is to its sell-by date, the more flavor it will have. You might like the funky golden brie, but not when it’s TOO ripe, so you’ll want to pick out one farthest from its date. Or you love that stinky cheese flavor, and the closest you can get to it’s date, the better. Mild brie that is super fresh will be borderline bland, but one close to its date will be soft, almost spreadable, and damn near like butter.
Packaged brie with a shelf life of, say, a month or more? That’s going to be an industrially made bulk brie. It will not ripen. Those are “stable curd” brie, and they’re made to have a very long shelf life. This might SEEM like a good thing, but the flavor will absolutely not change or develop. It will probably have a firm texture, never get softer, and the flavor will be exactly the same (read: pretty bland) up until it goes bad, in which case it’ll get FUNKY.
That being said, packaged stable curd brie makes for excellent recipe cheese. If you’re going to bake a brie, or you’re covering it in jam/preserves, then this is a great one to go with. It’s cheaper than a fresh cut brie, and if you’re going to be adding a lot of extra flavor to it, it doesn’t necessarily matter if your cheese is on the milder side, just as long as you have that brie texture.

In the painting by Zdzisław Beksiński, he is a terrifying creature that leaves the ruined area on its cramped limbs. Instead of the face, you can see a bandage through which a blood stain pierces. Instead of a torso, there is a hairy abdomen, similar to that of deadly spiders, and they will always flee from impending danger. Just like death, which also has time to hide from fire.

Beksiński's painting is one of the most terrifying contemporary works of Polish painting. Suffering, anger and resignation permeate them. The artist knows that he is unable to change his fate. He only has pain and the awareness that death will come for him. "Creeping Death" can be a universal picture, presenting the world after war, apocalypse or catastrophe. They can also be the darkest thoughts of every human being that circulate through the mind looking for an outlet. Because everyone is struggling with their own demons, which may appear completely different. It is certain that they cause fear, but they are essential in the fight against the suffering that is part of human life.
2. SALVADOR DALI
There are four clocks in the picture. One hangs from a dry tree, the other, with a blue shield and golden edging, flows down from a brown plinth. There is a fly on it, which can symbolize the "flying" and passing time. The orange watch lying next to it seems to be less soft and melting than the others. Ants crawled over him. The orange clock looks like it's about to be eaten by insects. Ants are here a symbol of rotting, decay. The fourth clock is in the center of the painting. Thanks to vivid imagination, all details have been divided into soft and hard. Clocks are among the soft ones.
3.  RENÉ MAGRITTE
With my popular sympathy for the Belgian painter René Magritte, I have allowed myself to be introduced to you by opening the whole series "Art for Tuesday" with his "Lovers". Together with the blog returning to the expanses of the Internet, let Magritte be the patron of the reactivation of this cycle, this time with her "Son of Man".
The very title "Son of Man" (French: "Le fils de l'homme") is a bit puzzling when confronted with this picture presents itself.

As for the "Son of Man", a stretched (as always), original interpretation appeared in my head.
The apple ripens with its apple tree represented by the man. He is well dressed, which can mean high social status. Or maybe an apple covering a man's face makes him anonymous? is it just a tree from which society grows? And when he dies, will someone eat the forbidden fruit that he has grown, and will continue this process? Another "Son of Man" ..?

4. Max Ernst
"Day and Night" is a work that Max Ernst painted in the years 1941-1942. It presents a gloomy rocky landscape in dark colors. The image of the night is dominant here - the dark blue sky and the outlines of boulders. On the dark background, however, there are traces of the day, resembling daytime photographs of the same space. In these pictures these places appear completely different - they are sunny and full of bright colors. They do not resemble a barren night landscape.
Ernst's work follows surrealist poetics. Its meaning becomes understandable above all in the historical context in which it was created. It is about the tragedy of World War II, which left its mark on the artist's own biography. He miraculously managed to escape from the hands of the Gestapo and emigrate from France to the United States.
The night landscape is a barren land devoid of color and optimism. One gets the impression that we are dealing with a world completely destroyed by some cataclysm. His memories are only optimistic photographs from the past, which show the old face of the landscape. These optimistic incrustations in combination with the dominant gray and sterility not only do not cheer up the whole, but make it even more repulsive. We are dealing here with a world that will never return to its former glory.
The colorful pictures bring to mind illustrations from children's books. Thus, the artist refers to the myth of childhood as a lost paradise. Children's dreams are triggered here, in which reality seems to be a magical and wonderful being. At the same time, the juxtaposition of colored fragments with a gloomy background is also associated with the biblical Eden, where innocence and beauty are destroyed by sin and evil.
You can also understand "Night and Day" as a kind of puzzle. The picture resembles a puzzle that needs to be matched in an appropriate way so that they form a whole together. In this sense, one should see in Ernst's work traces of hope for rebuilding what was destroyed during the war. Picasso's painting exudes an atmosphere of fear and terror, the image of a mother lamenting over a child's corpse is particularly poignant. The claustrophobic narrowness of the room in which the characters find themselves emphasizes the non-exit character of their situation.

I didn’t set out the cheese, above, as part of dinner last night (Thursday); my wife and I thought it would be too much, given the Parmesan in my wife’s homemade Caesar dressing.
We won’t dig into it tonight, either, because we’re having eggs - omelette of some kind, with cheddar cheese and some of Trader Joe’s spreadable goat cheese.

A Toast to Champagne and Sparkling Wines

In December, we travel across the ocean to discuss one of nature's gifts, Champagne! Champagne is a wine region in France, so only wines from this area may be properly called Champagne. Any "champagne" produced outside this region in France should be referred to as Sparkling Wine.
No other beverage in the world symbolizes a celebration better than Champagne/Sparkling wine. These beverages help usher in the New Year as well as weddings, birthdays, promotions and any other special occasions. This time of year is when approximately 80 percent of this beverage is consumed. At holiday parties, my catering company likes to set up a sparkling station near the front door, greeting guests with a festive glass of bubbly.

The Champagne region in France is located about 90 miles northeast of Paris. In the late 17th century, French Champagnes were formally recognized as a new style of wine. Champagne's unique effervescence came about due to the cooler climate of northern France. Grapes from this region generally had not fully ripened nor totally fermented in the Fall when wines are traditionally placed in barrels. Over the winter, the champagne was dormant, then began fermenting once again in the Spring. This led to a fizzy beverage that was cloudy, due to the spent yeast floating in the barrels. At the time, this was considered an inferior product.
The French in the Champagne region created a new process to clarify their beverage. Instead of traditional barrel aging and storage, champagne was the first wine to be stored and aged in individual bottles with corks. This new process, Methode Champenois, (still in use today) involves inverting the bottles in racks and gently turning the bottles (riddling), to help the yeast collect in the neck of the bottle.
Next, the neck of the bottle is submerged in a brine solution that freezes the yeast section. The bottle is popped to expel the plug of yeast (disgorgement), resulting in a clear beverage. The champagne is then topped off with still (non-fermented) wine held in reserve for this purpose. A small amount of yeast and sugar are added to the bottle, then corked. This starts the second fermentation process. As the yeast consumes the sugar, a small amount of alcohol is created, as well as carbon dioxide. This allows the bottle to regain its fizz.
Today there are about 100 Champagne Houses in the Champagne region that are supplied with grapes or grape juice from over 15,000 local growers. There are three different styles of Champagne or Sparkling wines, ranging from light to medium to full body (based on the amount of time the yeast is left in contact with the wine). Also, sparkling wine's sweetness levels ranges from Brut (dry) to Extra Dry (semi-sweet) to Doux (sweet).

A really nice, solitary summer evening after a very frustrating, infuriating afternoon (nobody wanted to go swimming with me and I felt all the feelings and was too stubborn and lazy to go alone - very mature). Reading the new Hank Green novel on the hotel veranda (it's such a good book again). A dip in the luke-warm pool once in a while. Cooling down in our room. Heading out for dinner. Drinking red wine. Falling asleep early.
Climbing up a hill. Watching the sunset on the cliffs with a bottle of rosé. Gorgeous.
Nightswimming (deserves a quiet night). Jumping into the pitch-black Mediterranean in our underwear after eating black paella (with squid ink). Humming the R.E.M. song accordingly.

A huge glass of iced coffee after a long cycling tour. Lots of ice cubes and vanilla ice-cream. Lounging on the outside sofa. After having an outside shower. Nice.

Pizza night at the workshop. a) I love places that smell like wood and oil, places that are really lived in and you can see that people actually spend time and work there. Creative chaos. b) Damian, one of the teachers there, is man candy. Long, black hair and icy blue eyes.

Creative projects. Flow. I was completely in my zone when I was building an octopus out of sand on the beach. Forgetting about time. Discomforts. The sun. Just digging in the sand with my bare hands. But I also played around with watercolour and chalk, made some pencil drawings, for example a still life with grapes and twigs from the garden. I developed some solar photographs, too. Experimenting is fun!
Alone time. I've been craving it so much lately. Being around 4 people all the time is incredibly exhausting for me. I'm not used to it at all.
