The coffee shop was filled with an array of people overflowing onto the polished wooden tables which cascaded with chatter and laughter.
Christmas decorations adorned the walls and golden tinsel had been carefully taped along the ceilings. A pretty garland of lush red berries and deep green holly hung below the counters and on top of the cakes. Mistletoe had been appended below the entrance door (an incentive for couples that were in a romantic mood.) A small green Christmas tree stood on the counter next to the till and was embellished with a variety of colourful quaint trinkets and baubles.
The fireplace, which had been lit to combat the unforgiving snowy weather was thriving in the heat of the fire, its ruby red flames licking the logs provided and enveloping anything in its path. Although wild and untamed, the fire still seemed to dance in a captivating manner. The bright yellows and oranges meandered with the reds creating a powerful hue which constantly changed and shifted in the light.
In front of you, an arrangement of freshly baked cakes had just been deposited on the counters. Warm gingerbread cookies, sea-salted gift-shaped caramel swirls and Christmas tree brownies decorated with white spiralling icing all lay in front of you. The sweet and irresistible flavours of spiced cinnamon and aromatic chocolate wafted leisurely up your nose.
You heard the bell of the front door jingle, indicating the entrance of a new customer, and being pulled back into reality, you looked up and saw a familiar-looking face.
A man with maroon hair tired loosely back in a ponytail, vibrant, emerald green eyes and the hint of a smile tugging at his mouth sauntered towards the counters.
“May I have the spiced gingerbread latte?”
You raised your eyebrow “Suprised to see you here, I thought you had that assignment on the history of criminology to complete?” Veering around the counter, you stepped towards the espresso machine.
Heizou nodded.
“I still need to start it, but I needed a break from the same environment and I wanted to visit you so I figured I could revise here.”
Swiftly measuring out and smoothing the dark coffee grinds in the portafilter, you tapped lightly on it and tamped by pressing into the espresso grounds. You apacely inserted the porta filler back into the machine and pressed the gauge button, watching as the previously dust-like coffee grinds transformed into liquid which poured and submerged into the latte glass.
Laying his arm on the counter, Heizou quirked an eyebrow. “When does your shift end?”
Hearing his voice, You glanced up at him and sighed.
“Two hours, unfortunately.”
You quickly grabbed the milk from the mini fridge below the coffee machine, pouring it into the milk jug. Then you turned back towards the espresso machine with the milk in hand and pulled down on the steam arm into the jug. You watched as the jug replenished itself with steam which overflowed out of the container and floated torpidly up in the air.
Heizou’s brows creased hearing your unenthusiastic response.
“You don’t seem too happy about this job.”
Wiping your hand with a handkerchief, you turned quickly back towards him.
“Well, I need the money for university funds and bills.”
You spun back towards the coffee cup adding the espresso first and mixing it with a bag of gingerbread flavouring into the mug. You began to pour the frothed milk into the coffee lowering the milk and steeping your angle to swirl it with the milk. Lastly, you grabbed the cinnamon shaker and tapped lightly onto it as the cinnamon sprinkled onto the coffee.
Tucking the loose strand of hair behind your ear and brushing off the coffee granules on your apron, you handed Heizou his coffee.
“A spiced gingerbread latte, hope you enjoy it.”
Heizou beamed, the dimples on his face revealing themselves.
“Why thank you.”
Hearing him say that, a warm smile spread across your face. However, you were quickly pulled away to attend the next person in line. In a momentary glance, you caught sight of Heizou and conveyed your regret with a subtle expression of "I'm busy" and "sorry" Heizou returned your silent apology with a reassuring nod and a mouthed "No worries.”
As you worked diligently, Heizou watched you with a grin that radiated pride. For a brief moment, you disappeared behind the counters, leaving Heizou to take in the coffee shop's ambience. He gazed at the glittering decorations, the colourful atmosphere, and the lights that hung from the ceiling. Holding his drink in hand, he scanned the wooden tables, searching for one that was unoccupied. When he found an empty table, he strolled over to it, pulled a sleek laptop from his bag, and settled into the chair.
I suppose I’ll have to start studying at some point.
Sipping his drink, he started to type.

Darkness had unbeknownst crept upon you. The sun had descended beyond the horizon; a blanket of darkness plummeted upon the sky. From the windows of the coffee shop, the world outside was hardly discernible - only the vague outlines of objects could be seen and deep shadows swooped the trees and buildings, smothering them in temporary darkness. The only sources of light were the newly lit street lamps which framed the snow-covered roads and the twinkling stars above, adorning the sky with speckled patterns.
Once a bustling hub of activity and laughter, the coffee shop now lay empty, save for one individual who remained seated, their laptop resting upon the table. The silence was only broken by the low hum of the coffee machine and the sound of fingers tapping away at the keyboard.
As the clock struck 7 pm, signalling the end of your shift, you carefully removed your work badge and placed it in your pocket. Dusting your hands off, you neatly folded your apron and set it down on the counter. You glanced around the nearly empty café and noticed that only Heizou remained. You smiled as you made your way over to him.
“Did you… wait for my shift to end?”
As soon as he heard the sound of your voice, he swiftly turned his face away from the screen and shifted his gaze towards you. His eyes met yours, and for a brief moment, everything else seemed to fade away.
“Mhm.”
He looked back up at you. And in a matter-of-fact tone, he commented“You look stunning today, by the way.”
Despite knowing Heizou for so long, you didn’t expect the sudden compliment and felt a sudden rush of heat from your ears. Instinctively, you pulled the strands of your hair down and tugged them over your ears.
Gaining your composure, you smirked "Of course I’m stunning," you flipped your hair back with your hands.
He closed his laptop lid promptly and slipped it into his bag. His eyes gleamed with a hint of mischief, and his lips curved into a smug smile.
“Are you…blushing?" his tone was laced with a sense of satisfaction and playfulness.
Immediately your masked confidence fell, and about to deny this allegation you opened your mouth to speak, but before you had a chance; Heizou pushed his chair back and stood up from the table “It’s dark outside. We should probably head back to campus soon.”
You nodded.
“Let me put my jacket on.”
You reached for your jacket hanging on the back of your chair. You slipped your arms into the sleeves and pulled the jacket over your body. Hastily, you zipped it up to the top, ensuring that you were well-covered and protected from the chilly air and snow.
You glanced back at Heizou, a look of “I’m ready” in your eyes as he pulled out his hand for you to take. You accepted it and looked outside.
“Let’s go.”
As you both approached the door, you felt a sudden tug on your hand. Looking back, you noticed that Heizou had come to an abrupt halt, causing him to stop in his tracks.
You stared back at him, the words “What are you doing?” About to exit your mouth. You stopped. He was looking up at the wooden frame of the door where the vibrant leaves of the mistletoe hung.
He looked back at you, a smile stretching upon his face.
“Would you like to kiss under the mistletoe?” his question was direct.
You glanced up at the mistletoe, then back at the man in front of you. His big green eyes glittered in the darkness, and a hopeful smile on his face.
You nodded. A soft smile radiated on your face.
Before you had time to react, Heizou leaned forward and embraced you. His heartbeat was thumping loudly against your own. His lips were feathery and cushioned they were smooth and soft and gentle. His hands clasped you and your heart throbbed faster, your head was buzzing, feeling your cheeks grow hot once more. With your eyes closed, you felt his mellow breath against yours, his hair lightly tickling your neck, his eyes half-lidded, eyelashes tickling your face. And then slowly, he stepped back, his face beaming and equally as red as yours.
For a moment, you both stood in silence. Not knowing what to say. The gentle sound of snow falling outside could be heard, accompanied by the temporary howling of the wind as it rustled the branches of the trees.
You looked back at him, with your cheeks still flushing red, and you rubbed the back of your neck. “We should really start heading to campus now, it’s getting late.”
“I agree.”
As you pushed the door of the cafe open, a harsh gust of wind slapped your face and penetrated through your skin, sending a sharp prick all over your body. Its icy fingers seemed to crawl into your bones, making you shudder. You quickly wrapped your coat tighter around your body in a desperate attempt to ward off the chill and find some warmth. "It's freezing out here," you shivered.
“Yes, but look up.” he tapped your shoulder, and gently, Heizou turned your head so you could see what he was pointing at.
The night sky was alive with falling snow, each flake gliding down as if performing a delicate dance amongst the stars. The snowflakes landed ever so softly, wrapping the the ground beneath in a blanket of pure white. The warm glow of the lamps along the path cast a shimmering light upon the snow, illuminating the way ahead. As you walked hand in hand with Heizou, gentle snowflakes landed gracefully upon your nose, eliciting a small laugh from you. Feeling his hand tighten around yours, you both continued your journey home, the snowflakes falling steadily around you like a serene, calming melody.

After wandering for a while, you finally arrived at the campus. Heizou had stepped alongside you up the stairs to your dorm until the two of you reached it. You inserted the key into the lock and turned it, feeling a satisfying click as the door unlocked. As you pushed the door open, you turned back to face Heizou and offered him a soft, appreciative smile.
You reached out your hand and gently pulled him towards you, feeling the heat of his body against yours. As you leaned in, you pressed your lips softly against his cheek, savoring the comforting sensation that spread through your body. The moment was fleeting, and you pulled away just as quickly as you had drawn him in.
“Merry Christmas Heizou.”
He grinned.
“Merry Christmas.”

Cafè strays [b.ch][f]
Warnings : ? Slight angst with a happy ending , strangers to lovers , misunderstandings (not proofread)

Home is where the heart is ,but not everyone has the same heart, for some home is where one hangs their hat after a long day , where one paints in the sureness of their four walled apartment daubing kaleidoscope colours onto paper or simply where one feels at ease . Home can be a person so safe and so comforting or the taste of something delicious that fills your senses entirely bursting with flavour and corrupting your integrity of thought . Home is where one truly feels like themselves . Home is the downtown cafe “strays” that offers the most moreish pastries and cakes stacked so pretty in perfect cases beconking your eyes and attracting your tastebuds
Strays cafe was a family owned business , proudly displaying its heritage on its old mosaic walls carrying the scent of coffee that seemed to cling so wonderfully to the cement in between the beige bricks , it was small and cozy, tressel tables accompanied by window seating nooks tangled in the many vines and indoor plants exuding an Arcadian vibe that drifted through the store . It was quiet not much to be heard but the hum and buzz of the coffee machines. Delicately grinding and pouring the brown liquid into cups . It had always been home , comforting you on your worst days like an old sweater soiled with the scent of a lost lover .
Strays cafe always awaited your arrival seemingly ready to welcome your presence as you walked through its unspoilt glass doors into the warmth it has to offer always ordering the same drink and the same slice of pie before absorbing yourself in the lost nooks within the store, today however the usual breezeless atmosphere met you with an unfamiliar face looming over the counter top. He was cordial and tender , eyes fixated on the scones under the cake dome ,arranging them ever so slightly to fit perfectly. hair gently falling across his eyes , peaking up to look at your stoic figure occupying the cafe door
“Welcome to cafe strays “ he spoke his voice thick laden with milk and honey so sweet and soft dripping off his lips and seeping into your skin “can I help you?” He asked jerking your lifeless body away from the door frame and to the counter observing his facial features as you approached His eyes a coffee coloured contrast to the drinks he prepared ,crinkling ever so much at the corners showing off the innocence within him , his lips plum coloured and full smiling at you as you approached him
“Can I take your order?” He asked breaking the silence you now brought upon the two of you as you idolised his features “oh yes sorry yes you can “ you began ,trembling over your words repeating yourself like a nervous school girl who forgot her homework . He laughed ,it was breathy and sweet striking your heart with its harsh blow as he looked at you expectantly “ I’ll have a tall , a tall black uh coffee please “ you said fishing around your bag for your wallet desperate to end the awkward encounter you catalysed . You watched as he made your drink , fingers cradling the plunger wrapping so carefully around its handle pouring the coffee out iodising it’s scent with that of the coffee shop “ do you come here often ?” He asked eyes trailing over you “I think I’ve seen you before ?on monday maybe ? “ he asked ,you nodded too afraid to let your voice slip past your lips disturbing the tranquilly of the shop with your ravenous thoughts “ you ordered the same thing didn’t you , with a slice of that pie over there “ he said craning his head over to the apple pastry ,coated so deliciously in a sheen of white sugar “ no pie today? “ he asked tilting his head like a puppy , eyes big and curious “how bout you have a slice on me of course “ he said waving off your protests cutting you a chunk and placing it on the counter with your order “it’s fresh too , Minho took it out the oven a couple minutes ago” he smiled hoping you would recognise the familiar name of one of the workers
“try it “ he said voice filled relish as he handed you a fork ,you complied digging the teeth of the fork into the crumbly pastry situated so perfectly in the middle of the plate . You thrummed with whim, the pastry coating your mouth in a layer of buttery syurupy goodness , that couldn’t be found nowhere else but strays cafe . The nook closest to the window had always been your spot , it overlooked the busy street shielding you from the elation of outside world , the barista at the counter leaning over ever so slightly observing your every move , he watched you sip the drink sinking further into the cozy cushions below you as your drew out a your novel flicking through the pages , you had thanked him for the pie leaving without telling or exchanging names , it was quite the scenario really it felt like love at first sight , like a flame being lit and throw off into a field itching to grow bigger , consume more of the land and coat it in its heat , he hoped he would see you again .
A week or two had passed without you visiting the cafe , too absorbed in the life you were leading to spare a moment to enjoy yourself ,but as the afternoon sun set coating everything in a golden glow ,romatisizimh the ordinary life you , your feet picked up paced leading you to a familiar place that your heart ached for
The scent of peaches and apples soaked in sugar welcomed you as you made your way in , he stood at the counter smile clad on his face dropping slightly as he took in your worn out appearance , sulken eyes and fragmented lips that smiled so sweetly at him drawing him closer to your tugging on his heart strings lien two magnets attracting each other never opposing the force
“Rough week “he asked beginning your order watching as you rubbed the temples on your head aching in pain “ something like that “ you said wavering off the topic too tired to explain the events of the week and too engrossed in him to let him talk about you “I never got your name “ he began “not that I need too , if you. Prefer not to tell me that’s alright too “he trutted off words grumbling and squishing themselves into his sentence in hopes of coming off less intimidating “ yn” you spoke catching his attention “ and you are..?” You trailed “bang chan .. but my friends call me chan” he said smiling blazingly too absorbed in the way your eyes lit up at the name to notice the hot liquid in his hands overflowing spattering on the floor scorching his hand , he hissed dropping the cup down sparking your worry as you leaned over the counter making sure he was alright .
“It didn’t burn you too bad” you said gently cascading the ointment over the violent red patch forming at the bottom of his hand “I don’t know what got into me” he said , it was a lie , a white lie in attempts to protect his honour , he knew what got into him it was your , your conspicuous smile
And fluttering eyes caused him to loose his train of thought paralysing his body surrounding him in your presence . He just met you , barely acquainted he didn’t want to scare you off , lose the tainted heart he had discovered and urged to fix , to coat in a sheen of his love , marinate it with his words would be too much too soon so he stuck to the basics of incompetency . Weeks passed as the seasons overtook each other changing diligently from autumn to winter ,coating the sky it a familiar grey hue and ice my cold wind that swarmed through the streets . Strays cafe had been your sanctuary calming your bruised soul when needed . Chan usually the instigator attending to your needs whenever you visited always making sure your drink was made perfectly and you have a slice of pie to accompany it .
The relationship between the two of you gradually blooming like tea leaves soaked in water , gradually coating the cup in its iridescent red diffusing its colour beyond the cup. Chan from what you had gathered was a friend of the owner , one that he took in accompanied by a few of his friends out of college, giving them a job I order to combat the heavy education fees . He had worked here for most of his life , rarely ever running the cash register and opting to do inventory instead , claiming he liked the peace it brought him but upon new opportunities the older barista had received left chan without choice but to work upfront , it wasn’t that he was shy or lacked skill , chan just preferred to keep to himself it was odd really when he first saw you the entire idea of keeping to himself flew over his head crowding his mind with thoughts of you craving the intimacy that your presence offered . Chan never told you he liked you , never bothered to , you who seemed so pure and innocent occupying every space of his mind seemed out of reach to him .
You pushed open the door , snow coating the top of your puffer falling ever so slightly to the ground as you walked into he cafe , chan smiled at you checking the clock , you usually arrived at the same hour ,after work clad in your work attire ,hair tussled and heels scoring into the back of your feet . “The usual?” He asked already fishing out a cup for you , you shook your head “no” chan hummed turning to make your drink , freezing upon realisation “no?” He said turning to face you his eyes slightly wide , you laughed unraveling the scarf that coated your nose ,chin and neck shielding you from the outside “no I want you to make me something different “ you said now crinkling up your red nose as you smiled “ different ? I can do that ..what did you have in mind ?” He asked “ whatever’s your favourite!” You said clasping your hands together watching his face drop “ my favourite?” He asked nervously chuckling , chan didn’t know what to say , he never expected you to ask him that “I don’t drink coffee “ he mumbled his words getting lost
As he spoke”huh?” You said drawing your eyes over his face “you don’t drink coffee? But you literally work kn a coffee shop” you said your tone unbelieving of his statement “ there’s no way you’ve worked here for years -“ chan chuckled “ I know it’s just I don’t like it that much “ he said placing the cup he once picked up down in the stack “ so what is your favourite drink then… if it’s not some variation of a cup of coffee “ chan smiled “ I’ll show you “ he said playful smirk evident on his lips
Chans shift ended as he bid goodbye to the owner who may you were engaged in conversation with , tugging the sleeve of your puffer as he pulled you out the store into the cold streets “chan..” you laughed at his excitement as he slightly bounced when he walked. It didn’t take long for you to arrive outside a food stall , it was small accommodating a smaller older lady who smiled brightly upon seeing chan “ channie is that you?” She asked her frail figure standing to wrap the larger man in a hug , her arms barely clasping around him as he held her close . He smiled turning to face you “this is my friend yn” he said he smiled taking your hands in hers “ yn..oh yes channie speaks about you all the time , always talking about how much he likes-“ she trailed off “ahhh that’s enough “ chan said nervously laughing putting a stop to her commentary . Chan ordered the drinks while you spoke to the older woman . She was quiet , lovely and very friendly , asking how know chan and where you work and study . Her warm aura accompanied by the cool breeze outside made the small shop homey,reeling your attention to her exclusively silently wishing you could stay here forever .
Chan brought you to a near by park the water iced over the little ponds and the snow sitting upright in the grass coating it in a diamond like sheen under the sun . Chan handed you the drink watching as you placed the straw inside careful not to spill any of the liquid as you raised it to your lips , it was sweet and salty , it’s strawberry flavour resfreshing your palate and sparking a shiver down your body from Its cold nature , it was delicious and light a contrast to the usual bitter coffee you so often loved to enjoy that blinded your taste buds in its scorching heat . Chan smiled as he watched your expression , eyes closed and cheeks turning up in delight from the drink “do you like it?” Chan asked turning to face you , you nodded occupying yourself with the scenery “yea I really like it too” chan said never tearing his eyes away from you smiling fondly at the way your eyes focused on the frozen pond ahead .
Strays was warm the hearing providing just enough warmth to keep the chill out . Walking in expecting to see chan waiting patiently at the counter welcoming you into the warm store your eyes were met with an odd sight , Chan as per usual , apron around his waist stood behind the counter but the woman infront of him usually wasn’t there , her arms clung loosely around chains neck as she leaned forward placing a wet kiss to the side of his cheek , chan turned his head stepping back upon noticing your figure shadowing through the door , chan never mentioned having a girlfriend but the woman who stood in front of you arms so proudly touching chains chest proved her infatuation with him indeed wasn’t friendly .
Chan smiled as you walked up to the counter “yn “ he said excitedly trying to diminish the tension between you and the mystery woman next to you . She smiled at you her eyes turning up “so you’re yn” she said “you’re so pretty “ she feighed her words so bluntly slaited with sarcasm it became obvious chan cleared his throat trying to disperse the tension
The cafe felt colder with her here . You watched from one of the tables straw pressed to your lips as you dipped gingerly on the latè chan had prepared for you , her friendly demeanour overwhelmed you as she hovered around him occasionally running her fingers through her hair pressing herself up against the counter in attempts to be closer to him . It irked you ,her words like nails against a chalk board as she complimented him gawking over basic tasks . Your fork dragged against your plate as you scooped up the last of your pie , opting to walk out the store without disturbing chan or the woman snug in his arm , chan noticed calling after you waving in your direction to your turned face oblivious to his actions
You tried to avoid the cafe as much as possible , new found feelings making it difficult to figure out why you felt the way you did , you were interested in chan , constantly talking to him , opting to stay late with him and helping occasionally around the store was not something you’d do for just a friend , it felt too serious to you but you couldn’t be aware of GCSEs feelings , asking the question seemed too risky too forward jeprodisinh both your favourite person and your favourite coffee shop . Cafe strays rarely was busy the few usual customers that bothered to come always showed by , to either buy a beloved drink or pay a visit to those who worked there .
Chan never expected to see an old high school friend bursting through the doors , her flamboyant clothing and extroverted personality causing Minho to Hind in the back leaving him shocked , she walsed her way through the doors practically throwing herself over the counter for a hug which chan declined brushing off her advances when she spoke about marriage and her family . Chan and her went way back highschool sweethearts if that’s what you’d call it but it got messy when she inherited her fathers fortune claiming that chan was too poor to be associated with her and that she’d rather marry someone of her status than him who works in a coffee shop serving what she called “jitter juice “ as a living . He never expected to see her again really , never expected her to tell him she still loved him after all these years and needed to get married to him or she’d loose all her money , she however never expected him to decline her offers telling her about the girl he liked and that she meant nothing to him . Chan sighed running his hands through his hair as she threw her arms around his neck begging for him to take her back , he was stoic , could not reason with her and didn’t even bother to try but his head peaked up at the shadow standing in the door way” yn” he said knowing what this looked like hoping you would save him , pinch him even tell him it was all a dream and you did not just witness someone draped over his arm . He hoped really even offering you an extra big slice of pie in hopes that it would butter you up easing the burn that you so evidently felt as the woman before him seemed so friendly smiling so brightly and dressed so expensively sashayed in front of you .
Chan tried to get to her leave telling her he was busy and she was being a nuisance to his work even opting to get Minho to kick her out but she never left , you however sat clad in the corner eyes narrowed in on her as you dipped your drink . The dark aura omitting off of you was enough to scare anyone away as you watched her follow him around . Chin was scared really scared of loosing you , scared of Minho being mad at him because he was uncomfortable and scared of being followed by the creepy lady who so obsessively tried to get back together with him , but his thoughts pushed aside when you left the store not so much as a good bye as you threw your tote bag over your shoulder leaving without trace . Chan felt awful , it wasn’t like that he knew he didn’t like her he knew you thought he did but what could he do when he was held hostage by her claiming that she would leave if he said yes .
Caffeine addictions should be rehab reasonable , the withdraw you were currently feeling sent your head into an avalanche, headaches causing your eyes to burn and mouth to feel dry seemed like a big sacrifice all because chan could potentially be in love with someone else . The break room coffee at your work place wasn’t cutting it the mud coloured sludge clung to the cup filling your senses with dread as you sipped on it there and then deciding it was ridiculous to stay away from the cafe all because of chan promising to yourself to return.

I had my mom over for coffee this morning and to show her the ninja creami we bought. I asked her what her favourite flavour of ice cream was and she said strawberry, so I totally winged a strawberry ice cream recipe and hoooooly shit this was by far the best thing I've made in the creami. 128 calories for that bowl of ice cream too, we split the whole pint between the three of us. Unbelievable. Literally the best strawberry ice cream I've ever had.
I filled the pint container half way with fresh strawberries, added a tbsp of sugar, a tbsp of strawberry syrup, then filled the pint to the max fill line with 1% strawberry milk and hand blended it all together. It had such a strong fresh strawberry flavour, and the consistency was perfect. I love this damn machine omfg

coffee-chocolate mousse with a lemon confit insert and a coffee icecream with caramelized hazelnuts
because @silenceandiblog asked, here are the recipes, for probably six people:
lemon confit
- 50g lemon peel
- 150g lemon juice
- 75g sugar
carefully peel the lemon, so that you don't have any of the white parts. put the zests into a small pot, fill it with water halfway and bring to a boil. blanch the lemon peel for a minute. sieve them and repeat two times (this will reduce the bitterness). once you've blanched the lemon peel three times, put them into a pot, add the lemon juice and sugar and let it cook for 40-50 minutes. fill the hot mixture in a marmelade glass.
if you want to serve this the way i did, you can fill some of the lemon confit into a silicone mould (mine contained 30ml per cavity) and freeze it for at least three hours.
coffee mousse:
- 4g gelatine (note: i used this much gelatine because i wanted to fill it into a silicone mould which means the mousse had to be a bit more stable compared to being served in a glass. if you want to serve it differently, you can definitely reduce the amount of gelatine to at least 2g or maybe even go without it completely)
- 125g cream (1)
- 35g coffee beans
- 1 stick (1.8g) instant coffee
- 70g milk chocolate
- pinch of salt
- 125g cream (2)
heat up cream (1) with the coffee beans and bring to a boil. allow it to infuse for at least thirty minutes but you can let it steep for up to two hours.
soak the gelatine in cold water. melt the chocolate with the instant coffee and the salt over warm water. reheat the cream/coffee mixture and let the gelatine dissolve in it. sieve out the coffee beans and add the warm cream to the chocolate. use a hand blender to make sure everything emulsifies. let it cool down a bit (till it's handwarm).
whip up cream (2) and carefully fold it under the chocolate mixture.
option 1: you fill it into a silicone mould (mine had 100ml per cavity). fill the individual cavity up to two third, add the frozen lemon confit insert, press down lightly and add as much mousse as needed. you can leave it like this or add a biscuit base of your choice. freeze over night and unmould it the next day, carefully let it unfreeze in the fridge.
option 2: you serve it as a glass dessert. pick a glass of your choice and fill in the mousse. let it rest in the fridge over night. add as much lemon confit as you want when you serve it.
(note: this cream is relatively bitter and very focused on the coffee flavour. you can leave out the instant coffee and reduce the amount of coffee beans if that's more your taste)
coffee icecream with hazelnuts
(note: i used an icecream machine to make this)
- 600g cream
- 50g coffee beans
- 150g sugar
- pinch of salt (1)
- cinnamon to taste
- 100g chopped hazelnuts
- 25g maple sirup
- pinch of salt (2)
for the hazelnuts, preheat the oven to 160° (fan oven). combine the hazelnuts with the maple sirup and the salt, put it on a baking sheet and bake it for twenty-twentyfive minutes. let it cool.
put 500g of cream in a pot, add the sugar, coffee beans and pinch of salt (1) and bring to boil. let it cool down and let the coffee beans infuse in the fridge over night.
the next day, sieve out the coffee, add the remaining 100g of cream and cinnamon to taste (i added less than a teaspoon but this is individual preference). fill it into an icecream machine and let it cool according to the instructions of the machine. in the last ten minutes, add the hazelnuts. fill the finished ice cream into a container and put it in the freezer till serving.
assemble the mousse and the icecream on a plate of your choice, serve and enjoy :)
