Ingredients:
For the nuggets:
1 - 1 Œ pounds chicken breast
1 teaspoon onion powder (or minced onion)
1 teaspoon garlic powder (or minced garlic)
1 teaspoon black pepper (omit if acid free)
1 teaspoon paprika (omit if acid free)
1 teaspoon salt
1 teaspoon coconut sugar (personally I leave this out, but I’ve been sugar free for a long time, so my taste buds are very sensitive to sweets)
Œ cup cornstarch
Œ cup water
For the breading
1 cup all-purpose flour (or oat flour if gluten free)
2 large eggs
1 cup plain breadcrumbs (or oat flour if gluten free)
For frying
3 - 4 cups extra virgin olive oil (or just enough to cover the bottom of the pan)
Instructions:
Place the chicken in the food processor and blend until the chicken is minced. Next, add the spices, cornstarch, and water. Process until combined, or mix by hand if preferred. I keep ground chicken on hand, so I just mix mine in a bowl.
Using a 1-1/2 tablespoon measure, shape the chicken mixture into a rectangular (or any shape, really) in your hand and place it on a baking tray with parchment paper and freeze in the freezer for 30 minutes. They should be solid but peel off of the parchment paper in a satisfying matter. If they’re still goopy, freeze them longer. I place mine in the upper/middle part of the freezer.
Heat approximately 3-4 cups of vegetable oil in a frying pan or deep fryer, or just enough oil to fully cover the bottom of your pan.
Dredge each nugget in the flour to cover, then into the egg, and finally, coat it in bread crumbs.
Fry the nuggets in batches, if necessary, in oil for about 6-8 minutes on each side, or until golden brown, flipping halfway through the time if necessary. If you’re using a small amount of oil, fry for 3 1/2 minutes on each side.
Remove to a paper towel-lined platter or tray briefly to absorb some of the excess oil before serving.
