This is my all-time favorite Beaucastel. And this phenomenon of preferring a *lesser* wine is something which–although bling-bro will shake his heads in disgust–happens frequently with me, and I have observed it throughout the ranks of the wine 1% too many times to count. Sunday is Prime Rib night at @thehatchrotisserie and this perfectly-rare baby came on a bed of BUTTERY smashed taters and topped with horseradish creme fraîche. The Tablas was showing well tonight, young and actually a little closed in, but dinally coming around to fat slathers of dried fruit and a brilliantly acidic core and a little heat.
