In this post, let's talk about the Dosa and the science behind it. Dosa is a much-loved traditional South Indian breakfast item. It is essentially a crepe or pancake made with a rice batter. Dosa is enjoyed with various side dishes such as sambar, chutneys, pickles or spice powder. Like many other Indian dishes, Dosa's origin is difficult to trace. It dates back at least a thousand years. Special thick Dosas are offered to deities in temples like Tirumala, Alagar Kovil etc.

There are umpteen varieties of the Dosa. For starters, we have the Masala Dosa with fried potatoes or the Podi dosa which is Dosa with fiery spice powder sprinkled on it. Butter dosa, onion dosa (For those who eat), and cheese dosa are also popular. Then, one can change the main grain in the batter from rice to get dishes like Rava Dosa, Pesarattu, Ragi dosa, Millet dosa etc. Adventurous people may like to try dishes like Paneer dosa, Pav bhaji dosa, pizza dosa etc. The possibilities are endless!

This post is neither a recipe for Dosas nor is it a recommendation for the best Dosa eateries to try. Rather let's dive into the science behind this wonderful appetizing dish. Basically, rice (Oryza sativa) and urad dal (Vigna mungo) are soaked in water for 6-8 hours before grinding, and this batter is spread on the pan to make crispy dosas.

To understand the science behind the scenes, we need to know some basics. Respiration is a vital process that is literally keeping us alive. In simple words, the glucose from the food that we eat gets "oxidized" to produce energy. There are 2 main steps in this breakdown: 1. Glucose gets broken down to pyruvic acid 2. Depending on the amount of oxygen, pyruvic acid is further broken down to produce energy. Generally, when there is abundant oxygen, pyruvic acid enters the "Citric acid cycle" to produce energy and release CO2. However, in the absence of oxygen, pyruvic acid gets converted to lactic acid, such as in yeast. This process has been exploited by humans for food production since time immemorial.
Rice is full of carbohydrates arranged in long chains of glucose. Allowing the batter to soak and rest for 6-8 hours gives it enough time to ferment. Bacteria naturally occurring on the grains such as Leuconostoc mesenteroides, Streptococcus faecalis, and Lactobacillus fermentum carry out fermentation in the batter, releasing carbon dioxide and making the batter fluffy. This fermentation is usually "kickstarted" by mixing the batter using bare hands.

Fermentation has quite a few benefits. Firstly, it helps to break down the anti-nutrients like phytic acid present in rice and urad dal. The lactic acid formed during the fermentation process aids the digestion of food like a probiotic. Moreover, useful substances like vitamins and folic acid are also produced during the process.
An interesting fact is that a pinch of fenugreek (Methi) seeds are added to the dosa batter before soaking to provide a slightly alkaline pH for fermentation. They also contain enzymes that break down complex carbs to simple glucose to be used by yeast. Also, optimum temperature is essential for fermentation. A temperature of 25-35 degrees Celsius works best for a good batter.
