What Is Ceremonial-Grade Matcha Tea, And How Is It Different From Culinary-Grade Matcha
Matcha tea has taken the world by storm—most people, particularly those into health and fitness, reap its benefits and recommend others to try it. But what type of matcha tea is beneficial—ceremonial grade or culinary grade? Since there are two types, it always creates confusion among consumers. If you have been in the same dilemma and wondering about the difference between the two matcha types, we have mentioned what you need to know below. 
Most brands promote ceremonial-grade matcha, claiming it is superior to culinary grade. Although the ceremonial grade is made of tea leaves of higher quality than the culinary grade, both types are cultivated and processed for different purposes and preparations. Japanese tea farmers intentionally cultivate both types of tea leaves in different periods because tea leaves yield different characteristics when harvested in different seasons. 
Farmers shade Camellia Sinensis, the green plant, in darkness for a month before harvest to protect delicate leaves from frostbite. Shading plants also boost nutrient production by suppressing photosynthesis, preventing amino acids from converting into catechins. Lack of sunlight during shading produces thinner, dark-colored delicate tea leaves. 
Ceremonial-grade matcha leaves and buds are picked during Ichibancha, meaning ‘first tea,’ between April and May. Young tea leaves are found on tea bushes’ tops and are extremely delicate. These leaves contain more chlorophyll than older ones, often harvested for the culinary grade. On the other hand, culinary-grade matcha leaves are harvested during Nibancha, meaning ‘second tea,’ or Sanbancha, meaning ‘third tea,’ between June and July. These older leaves are exposed to more sunlight and have a bolder flavor than younger ones. 
The ceremonial grade has a more vibrant and darker green shade because tea leaves contain higher chlorophyll concentrations. So, it’s never a good idea to judge the quality of matcha tea solely on its color. Another crucial thing to remember is oxidation turns green tea leaves or powder brown. Chemical reactions occur naturally when matcha tea leaves or powder are exposed to oxygen, light, and heat. It’s best to store them in airtight containers in the refrigerator or freezer. 
Regarding health benefits, ceremonial-grade matcha tea has a higher caffeine and l-theanine content, while culinary-grade matcha has higher catechin (an antioxidant) content. Though most people prefer ceremonial-grade matcha tea over culinary-grade matcha, you should choose the grade that suits you best and matches your preference. While many people drink matcha tea, others prepare cookies and desserts. We suggest purchasing the ceremonial grade if you’re a coffee drinker who wants to switch to a beverage that contains caffeine but doesn’t give you a jittery feeling. Though caffeine is higher in matcha tea than in coffee, it keeps you calm; no wonder it’s a perfect tea for meditation. Look for online sellers well-known for preparing premium ceremonial-grade matcha teas in small batches to the taste and freshness of this Japanese tea.
