The Kyiv Independent celebrated Borshch Day, which annually falls on the second Saturday in September.
Borshch is a staple of Ukrainian cuisine and has been for at least 1,200 years. It was named by UNESCO as part of Ukraine's Intangible Cultural Heritage in Need of Urgent Safeguarding in July 2022.

Ukrainian Borshch (Beetroot Soup)
Beetroot is by far my favourite vegetable and in my opinion, very much underused. I’ve met people who have only ever had pickled beetroots out of a jar, which is a real shame. Anelya, a new Chicago eatery from chefs Johnny Clark and Beverly Kim, offers authentic Ukrainian cuisine like green borshch, pampushky bread, and varenyky. Named after Clark’s grandmother, the restaurant blends nostalgia and modern cooking, honoring his Ukrainian heritage. Clark’s grandmother, Anelya, survived the Holodomor and WWII before immigrating to the U.S. in 1946. The restaurant, which started as a pop-up for humanitarian aid, is now a tribute to preserving Ukrainian culture through food. “We want to share the essence of what Anelya cooked for us.” A highlight of Anelya is the zakusky cart, a tower of appetizers like pickled fish and charcuterie.
