In this post, let's talk about the Dosa and the science behind it. Dosa is a much-loved traditional South Indian breakfast item. It is essentially a crepe or pancake made with a rice batter. Dosa is enjoyed with various side dishes such as sambar, chutneys, pickles or spice powder. Like many other Indian dishes, Dosa's origin is difficult to trace. It dates back at least a thousand years. Special thick Dosas are offered to deities in temples like Tirumala, Alagar Kovil etc.
Tirumala Dosa (It is thick compared to the usual Dosa, with a topping of butter. )
There are umpteen varieties of the Dosa. For starters, we have the Masala Dosa with fried potatoes or the Podi dosa which is Dosa with fiery spice powder sprinkled on it. Butter dosa, onion dosa (For those who eat), and cheese dosa are also popular. Then, one can change the main grain in the batter from rice to get dishes like Rava Dosa, Pesarattu, Ragi dosa, Millet dosa etc. Adventurous people may like to try dishes like Paneer dosa, Pav bhaji dosa, pizza dosa etc. The possibilities are endless!
Varieties of Dosa
This post is neither a recipe for Dosas nor is it a recommendation for the best Dosa eateries to try. Rather let's dive into the science behind this wonderful appetizing dish. Basically, rice (Oryza sativa) and urad dal (Vigna mungo) are soaked in water for 6-8 hours before grinding, and this batter is spread on the pan to make crispy dosas.
Dosa batter
To understand the science behind the scenes, we need to know some basics. Respiration is a vital process that is literally keeping us alive. In simple words, the glucose from the food that we eat gets "oxidized" to produce energy. There are 2 main steps in this breakdown: 1. Glucose gets broken down to pyruvic acid 2. Depending on the amount of oxygen, pyruvic acid is further broken down to produce energy. Generally, when there is abundant oxygen, pyruvic acid enters the "Citric acid cycle" to produce energy and release CO2. However, in the absence of oxygen, pyruvic acid gets converted to lactic acid, such as in yeast. This process has been exploited by humans for food production since time immemorial.
Rice is full of carbohydrates arranged in long chains of glucose. Allowing the batter to soak and rest for 6-8 hours gives it enough time to ferment. Bacteria naturally occurring on the grains such as Leuconostoc mesenteroides, Streptococcus faecalis, and Lactobacillus fermentum carry out fermentation in the batter, releasing carbon dioxide and making the batter fluffy. This fermentation is usually "kickstarted" by mixing the batter using bare hands.

Fermentation has quite a few benefits. Firstly, it helps to break down the anti-nutrients like phytic acid present in rice and urad dal. The lactic acid formed during the fermentation process aids the digestion of food like a probiotic. Moreover, useful substances like vitamins and folic acid are also produced during the process.
An interesting fact is that a pinch of fenugreek (Methi) seeds are added to the dosa batter before soaking to provide a slightly alkaline pH for fermentation. They also contain enzymes that break down complex carbs to simple glucose to be used by yeast. Also, optimum temperature is essential for fermentation. A temperature of 25-35 degrees Celsius works best for a good batter.

Where Top Chefs Eat in Mumbai
(Bloomberg) – Mumbai is a wonderful city for eating out. There’s history. There’s tradition. There’s luxury hotels with cool international cuisine and icy air-conditioning. And there’s also street food, though some foreign visitors are wary.
But where do Indian chefs like to eat? We asked some of the biggest names in Indian gastronomy for their favorite places and dishes, from cheap snacks to fine gastronomy.
Here are their picks.
Americano
This is the new restaurant of chef Alex Sanchez, who previously won countless fans and a large following at the Table in Mumbai. Here, in a cool bar with a high ceiling, he serves an eclectic menu of things he likes to cook. Bademiya
This street-food stall behind the Taj Mahal Palace hotel traces its history to 1946. It’s a destination and late at night Tulloch Road is jammed with people lining up for the seekh kebabs, many with the food laid out on their car bonnets. Popular dishes include mutton seekh kabab. “It’s very good: It’s an institution,” says Vivek Singh, of London’s Cinnamon Club. “The kebabs are awesome,” says Surender Mohan, of London’s Jamavar. Bombay Canteen
This fashionable restaurant and bar is a favorite of many chefs, who enjoy the modern cooking of traditional regional dishes as well as the buzz. (The culinary director and co-founder is Floyd Cardoz, who worked for Danny Meyer in New York, and learned much about hospitality along the way.) “I like the rustic way they serve the food: It’s a modern take and it’s a cool place,” says Rohit Ghai of Kutir, in London. “I love it: They are so innovative,” says Ravinder Bhogal of Jikoni, whose favorite dish is Beetroot & Topli Paneer. Britannia & Co
This grand old Parsi cafe was an inspiration for Dishoom restaurant in London. “It was built in the early twenties by George Wittet, the architect who also built the Gateway of India,” according to Dishoom. This inexpensive seafood restaurant is a favorite of chef Cyrus Todiwala of Cafe Spice Namaste in London, who particularly enjoys the Clam Sukka with coconut; and the Bombay Duck at the Bandra West outlet. “I love the way they do their seafood,” he says. “It’s very fresh and light, with the right amount of pungency, and amazing flavors. This seafood restaurant, founded in 1977, serves the Mangalorean cuisine of South India, known for its fish curries and the use of coconut and curry leaves. O Pedro
This Goan bar and restaurant in northern Mumbai is fashionable and buzzy, with creative cocktails and cooking. Bar snacks such as burrata salad with slow-roasted winter carrots, pumpkin-seed granola & toasted chilli oil set the standard. O Pedro is the pick of the restaurateur and writer Camellia Panjabi, who says, “It’s a playful restaurant from the founders of Bombay Canteen.” She enjoys the modern Goan cooking and the cocktails. Sea Lounge at the Taj Mahal
The Taj Mahal Palace opened in 1903 and is a beautiful landmark in Mumbai. The afternoon tea at the Sea Lounge is not to be missed, according to Quilon’s Sriram, who particularly recommends the Bhel Puri (puffed rice, crispies, potatoes, onion and chillies) and the Pani Puri. “It is a whole great experience,” he says, recommending the breakfast, too. Shree Thaker Bhojanalay
This marvelous and inexpensive vegetarian restaurant is difficult to find. My driver had no clue (But it might become considerably easier soon as chef David Chang and actor Aziz Ansari filmed there recently.) You are served a tray of small Gujarati dishes and freshly made breads. The food is delicious and there are endless refills for about $7. Swati Snacks
Some visitors worry about the hygiene of street food in India. Swati takes that food and serves it on bright yellow plates in the cleanest of rooms. You enjoy a number of plates, such as the pani puri, crispy pastry balls that you fill with lentils and tangy sauces. Asma Khan, recently featured on Netflix’s Chef’s Table, is a particular fan of the Bhel Puri (chaat Indian snack.) “It is just incredible,” she says. “I am very fussy. There is a classic amount of chutney-to-crunch ratio and they get it exactly right. But those yellow plates are terrible. The owner must have lost a bet.” (Khan’s London restaurant is Darjeeling Express.) Chef Atul Kochhar of Kanishka restaurant in London is another fan. The Table
This eclectic restaurant has many fans for its modern global cuisine. “They set a trend to do really, really good continental food,” says Ravinder Bhogal, who recommends zucchini spaghetti with almonds and Parmesan; and boneless chicken wings fashioned into cubes with with a ginger glaze. “I love the atmosphere, too,” she says. (I went recently, after the departure of chef Alex Sanchez to Americano, and enjoyed an heirloom-tomato and grilled-strawberry salad with Belper Knolle cheese, basil and sunflower seeds.) Trishna
This small restaurant in the Fort area of south Mumbai is arguably the most famous in the city, particularly for its garlic butter crab. “When you mention Bombay to anyone, the restaurant they will talk about is Trishna,” says Karam Sethi, who likes it so much he went into partnership to open a Trishna in London. “It’s the freshest seafood from the Arabian sea cooked simply but full of flavor and punch,” he says. Other chefs agree: “It’s not chi-chi but everyone goes there and you’ll always see someone there you know,” says Ravinder Bhogal, who is a particular fan of the neer dosa. India is much more than the land of snake charmers. With its huge population and its diversity, it is slowly becoming one of the forces to be reckoned with in the world. One of the major areas where this diversity has actually left a lasting impression is FOOD. Different regions of India have influenced our taste buds over the centuries and after globalization, we have been fortunate enough to experience the influence of the whole world. Different types of Indian cuisines are available in almost all the states owing to the cosmopolitan environment that is prevailing nowadays. One of the most famous cuisines pertaining to the Southern Region of India, but is loved and appreciated all over India and the World is South Indian Cuisine. South Indian food has pushed its Vindhyan borders and has reached almost every nook and cranny of India and also Kolkata.
Steam bowls of sambhars, dal vada are being sold in every alternate lane, under an umbrella, but having street food isn’t everyone’s forte. There are many who prefer to have their favorite south Indian cuisine in a cleaner and hygienic environment which is probably a tastier and healthier version as compared to the ones that are offered in the streets. Among the various patrons of South Indian Food in Kolkata, Garden Cafe, Kolkata has been a brand that has been synonymous is making south Indian food popular among the populous of Kolkata. The chain boasts of more than three outlets all over Kolkata, and thanks to the love from fellow foodies, I am sure it’ll grow by leaps and bounds in the near future with many more outlets.
On one fine evening, Team Panchphoron was invited over to a food tasting event by the owners of Garden Cafe to the newest restaurant of the same name under their banner in Hazara.

Like the other outlets by the same name, this place too is famous for its South Indian Vegetarian food. The restaurant is spacious and can easily be a popular destination of choice for college students for birthday celebrations and hangouts. In a sea of non-vegetarian restaurants all over southern Avenue and Kalighat, this place is a sight for the sore eyes of vegetarians. The staff is very helpful and take care of the tiniest complaints that the customers might have…and plus points to the owner being such a suave and eloquent gentleman.






The menu boasts of some of the most special dishes that aren’t served anywhere else along with your regular sambhar, idli, dosa and so on. Garden Cafe is the patron of the family dosa. the family dosa is four feet long dosa that is as monstrous in size, unlike its name. There are times when we have been left in utter confusion after seeing the unpronounceable names in south Indian restaurants. In such occasion, a family dosa is your caped crusader made of fermented rice and urad dal paste. Its huge size enables it to be the perfect dish to be snacked upon by an entire family of four. Apart from the special Family Dosa, the cafe serves some more varieties of dosas like the chilly cheese dosa, Topi Dosa, Cheese Dosa along with the other varieties of your regular dosas that are generally enjoyed by people in South Indian Eateries. Almost all the dosas come with a serving of potatoes mashed and then mixed with spices, coriander leaves, turmeric, mustard seeds, onions, split beans and much more such spices that give the potatoes a distinct flavor. Sambhar and coconut chutney is served as gratis with all the varieties of dosa and you can request for it as many times as you want. The plain varieties of dosas come with only the serving of sambhar and chutney, but that too tastes wonderful. A beautiful and cheesy version of another food loved by teenagers can also be found here… that is pizza!! yes… you heard me. The pizza that is available here is loaded with toppings and cheese and is quite large in portion, fit to be a meal for two people easily and if you want to stick to the roots of the restaurant, you can opt for a desi south Indian version of your, known as uttapam that is pre[ared using rice flour and has your choice of ingredient as toppings and served with coconut chutney and sambhar.

Another special kind of chutney was served known as the Special Sambhar and Coconut Chutney. This chutney was prepared using freshly ground coconut, mustard seeds, split beans or urad dal, coriander and had an after taste of sambhar to it, which made it quite a confusing yet one of a kind delicious dish.

We have all been fans of Asian, North Indian, and Mughlai starters… but ever heard of South Indian starters? Yeah!! exactly… my point. Another amazing reason to visit this place is some of the tastiest south Indian finger food that you get here. They have given a twist to their idlis. The Finger Fried Idli available here is one of a kind where your regular idli is sliced up and fried and served with tomato ketchup and mustard sauce. The rice flour in the idli gives a crispier texture to your french fries, beware of this french fries… you’ve got competition now. For those who aren’t game to try this experimental dish, you can always opt for the regular version of the Idli which served with chutney and sambhar. The masala dal vada served with chutney and Sambhar is made using a paste of lentils and whole urad dal was crunchy and had a beautiful crunchy affair going on in your mouth.


The food was accompanied by beautiful refreshments in the form of welcome drinks like American Ice-cream soda, Orange blossom, and the famous south Indian filter coffee. If you’re too attached to having coffee from your favorite global coffee giants like Starbucks, CCD and so on, then you might not be too fond of their coffee, but if you keep in mind the south Indian backdrop of the restaurant then probably it serves quite a good one. Kudos to the Garden Cafe for being brave enough and serving a different and unique style of coffee, in the times of global coffee conglomerates. The American Ice cream soda was prepared using strawberry ice cream, rose syrup, and ice cream soda. The use of both strawberry ice cream and rose syrup is what lent the drink such a strong rose flavor. The best of the lot was the orange blossom with its sweet and sour taste. And for those who are hopeless sugar addicts like and just can’t end their meal without desserts, have an option of ending their meal with beautifully flavored ice creams.
In a sea of cafes and restaurants that are opening up nowadays… Garden Cafe has survived and has stood the test of time because of its constant will to stay true to its roots and also because of love from foodies, for in a city catching up with the newest gastro pub trend Garden Cafe is a safe haven for vegetarians who prefer south Indian food. Do give this place a try and enjoy a hearty south indian meal.
