Archovember 2024 Day 30 - Iguanodon bernissartensis

Our final species for Archovember is Iguanodon bernissartensis! As one of the more famous dinosaurs, Iguanodon is known for being one of the first dinosaurs to recieve a life-sized model, while now outdated and with the thumb spike placed on its nose. This has made Iguanodon a public example of how our scientific advances have improved our understanding of these ancient animals.
A very successful species in life, Iguanodon bernissartensis lived from the Late Jurassic all the way into the Early Cretaceous. Remains have been found in Belgium, Germany, England, and Spain. It is the type species of its own family of ornithopods: the Iguanodontids. They were large, bulky, muscular animals that could shift between quadrupedality to bipedality when needed, but were probably more quadrupedal as they got older and heavier. Their long arms supported conical thumb-spikes that could have been used for defense and/or for foraging. It used its cropping beak and grinding teeth for chewing up tough plant matter. Its long outer fingers were flexible, and may have aided in grabbing onto food as well.

Due to its wide range across Europe and across eons, Iguanodon bernissartensis would have lived alongside a variety of different species in different time periods and habitats. Formations where it has been found include the Sainte-Barbe Clays Formation, the Arcillas de Morella Formation, and the Wessex Formation. In Early Cretaceous Europe, it would have lived alongside fellow iguanodonts like Mantellisaurus and Valdosaurus. Other ornithischians included ornithopods like Morelladon, ankylosaurs like Polacanthus and Vectipelta, and smaller ornithischians like Hypsilophodon and Vectidromeus. It would have also come across sauropods like Garumbatitan, Oplosaurus, Eucamerotus, and Ornithopsis, spinosaurids like Protathlitis, Vallibonavenatrix, Ceratosuchops, and Riparovenator, other carnosaurs like Altispinax and Neovenator, compsognathids like Aristosuchus, and dromaeosaurids like Ornithodesmus and Vectiraptor. Iguanodon would have also shared Early Cretaceous Europe with pterosaurs like Coloborhynchus and pseudosuchians like Anteophthalmosuchus and Bernissartia.

Chapter 7 - Greece
The Greek breeze felt amazing against Dalia's skin, like a cool splash of refreshment. Syros, a lesser-known gem compared to the more famous Santorini, was just the right spot for celebrities wanting to escape the spotlight. Its charming streets, vibrant culture, and serene beaches offered a perfect retreat from the relentless attention of the media.Carlos, Lando, Oscar, and Alex had booked a spacious villa on the outskirts of Ermoupoli for their summer getaway. The villa, with its traditional Cycladic architecture, boasted whitewashed walls and blue shutters that mirrored the colors of the Aegean Sea. As they stepped out of the car, the intoxicating scent of blooming bougainvillea and jasmine filled the air, wrapping around them like a warm embrace."Finally!" Lando shouted, his voice echoing with excitement as he parked the car beside the stunning villa. The sight before them was breathtaking: the place was nestled among gorgeous plants and flowers, with a sprawling terrace that overlooked the sparkling sea. Lily, Alex's girlfriend,  dashed toward the terrace, her eyes wide with wonder. "Look at this view!" she exclaimed, leaning over the railing to take in the panorama of the coastline. The azure waters stretched endlessly, dotted with small boats bobbing gently in the harbor.
Carlos chuckled, shaking his head at Lily's enthusiasm. "Just wait until you see the sunset from here. It's like the sky is on fire," he said, joining her at the railing. Alex, meanwhile, was already unpacking their bags, his mind racing with plans for the week ahead. "We should hit the beach" he suggested, glancing back at the others. "I heard there's a secluded cove not far from here. Perfect for some sunbathing and swimming without the crowds."Oscar nodded, already envisioning the adventures that awaited them. "And we can explore the local tavernas for some authentic Greek food. I'm craving moussaka and fresh seafood!". "Hey Carlos, how did you end up with this place?" Lando asked as he stepped onto the porch. "I thought you already knew," Carlos replied, looking a bit puzzled. "It was your buddy Max who suggested it." Lando just shrugged. Meanwhile, Lily had left with her boyfriend to pick out their room. Carlos leaned in closer to Lando, still gazing at the stunning view. "Looks like this is your chance," he said with a grin. "I'm not so sure," Lando admitted, looking confused. "Last time she called our situation a 'friendship,'" he said, rubbing the back of his neck. "And you want to keep it that way?" Carlos shot back, giving Lando a playful jab in the groin and chuckling. "Come on, Lano, grow some cojones!"
The hallway seemed to go on forever, filled with tons of rooms. Dalia peeked into each one, searching for the right choice. On her fifth attempt, she flung the door open wider and was blown away by the stunning room. The decor was pretty minimal, featuring white walls and a spacious double bed. A classic wooden nightstand fit right in with the dresser. There was a window showcasing a beautiful vase of colorful flowers and a balcony that offered a direct view of the sea. In its simplicity, the room radiated elegance, comfort, and a refreshing vibe. "Have you set up you mind ?" Oscar asked leaning against the frame. Dalia nodded in contempt. "How about you ?" she asked. He sighed heavily and plopped down on the bed. "I'm really trying to steer clear of the room next to Carlos. That guy gets up at the crack of dawn and starts working out. Plus, I want to avoid Alex and Lily too, you know," he said, making a face at Dalia. "Those... weird noises." Dalia chuckled at his words. "What about the room at the end of the hall?" she suggested. "Ghosts," he shot back, looking dead serious. "Wait, you actually believe in ghosts?" Dalia laughed as he went on about how every horror movie shows those rooms as haunted. Just then, they heard a voice. "Have you made your choice?" Lando asked, standing by the door. "Yeah, I'm taking this one," Dalia said. "Cool, then the next one is mine," Lando replied. "No way, I already called dibs on that one," Oscar interrupted, chasing after him. The two guys bickered for a while, while Alex and Carlos just watched, clearly entertained. Eventually, they all decided to settle it with a card game.
The private villa beach was just a short stroll from the back garden. The chairs and sunshades were already set up, ready for a day of fun. The guys took off first, sprinting toward the sparkling blue water, while Lily and Dalia decided to whip up some lemonades and snacks before joining in. Dalia felt lucky to have Lily by her side; she was such a sweet girl and had opened up to her pretty quickly on the way here. Unlike the typical image people might have of F1 drivers' girlfriends, Lily seemed like someone Dalia could really connect with. "So, are you and Lando a thing?" Lily asked, slicing a lemon. Dalia felt her cheeks heat up at the question and replied, "No, no, we're just friends." "Hmm," Lily said, taking a bite of a lemon slice. "The way he talked about you was a bit different." Dalia's heart raced at the implication, and she couldn't help but ask what Lando had said. "I don't know, things like 'Oh, Dalia is such a gorgeous woman; you all are going to love her. '" Lily waved her arms around, trying to imitate Lando's voice. "You know, not in a 'just friends' kind of way, but more like an 'I find her attractive' vibe," she said, giving Dalia a cheeky smirk and a playful wink. Dalia's eyes lit up with curiosity. "You should totally make the first move!" Then she sat up straight, her face turning serious. "I mean, I know Lando, and even though he seems all confident, he's actually pretty shy around girls." Lily shot Dalia a playful grin. "He just needs a little nudge."
The water felt amazing, and Dalia just couldn't get enough. While everyone else headed back to the beach to soak up some sun, she chose to stay a little longer. With her eyes shut, she soaked in the soothing sounds of the cool waves and the warmth of the sun on her skin. It was like she had found her own little slice of paradise. The water started to ripple a bit more, and Dalia spotted Lando swimming her way. He flashed her a smile and said a quick hello as he reached her side. His eyes, reflecting the blue and green of the water and his sun-kissed skin made him look even more attractive. The way the water cascaded off his toned arms and shoulders only added to his allure, making her heart race a little faster. "Hey," she replied, trying to keep her tone casual, though her cheeks felt warm. She brushed a strand of hair behind her ear, suddenly aware of how the sunlight danced on the surface of the water, creating a shimmering backdrop for their conversation. "So do you like it here?" he asked his eyes not leaving hers. "Yes I do, thank you for the invite" she smiled shily, "Of course" he whispered as if his thoughts were trailing away.
Lando couldn't take his eyes off the woman standing before him; it was a feeling he had never experienced. When he caught sight of her in her swimsuit, he was taken aback. She usually wore baggy clothes, so he had no idea her figure would be so appealing. Her skin appeared incredibly smooth, and the blush on her cheeks made her utterly captivating. Those round brown eyes sparkled with a mix of innocence and warmth, drawing him in like a moth to a flame. He couldn't shake the feeling that this was a turning point, a moment that would change everything.  The thought both excited and terrified him. What if she didn't feel the same way? What if he ruined again whatever they had ?
Dalia caught Lando's gaze drifting from her eyes down to her lips, and her heart raced. The world around them faded into a blur, the sounds of water dimming as the intensity of the moment enveloped them. Finally, she thought, he's going to kiss me! The anticipation was electric, sending shivers down her spine. Oh please, just kiss me already! Dalia's pulse quickened, and she bit her lip, a nervous habit that only seemed to draw his attention further. She could see the flicker of desire in his eyes, a silent conversation passing between them that needed no words. Her thoughts spiraled, imagining the softness of his lips against hers, the warmth of his hands cradling her face, the way time would stand still in that perfect moment. But as she waited, the seconds stretched on, and doubt crept in. What if he didn't feel the same? What if she was reading the signs all wrong? No way! I won't let these doubts take over again. Just when she was about to lean in, her heart racing with anticipation, Lando suddenly plunged into the water with a splash that sent droplets flying in all directions. The moment was so unexpected that it startled her, breaking the tension that had been building between them. He stayed submerged for a bit, and Dalia held her breath, half-expecting him to resurface with a serious expression, ready to address the unspoken words hanging in the air. But instead, he popped back up, his hair slicked back and water glistening on his sun-kissed skin. "Come on! It's time for dinner!" he urged as he started swimming back towards the villa.
Lily was spot on; Dalia had to take the initiative. The thought of stepping out of her comfort zone sent a shiver down her spine, but deep down, she knew that she couldn't let fear dictate her life any longer. It was time for a change, she thought as she slipped into her light green dress adorned with tiny white flowers. With Lily's help, she styled her hair into a messy bun that framed her face beautifully, allowing a few delicate strands to cascade down her neck. The casual elegance of her look made her feel more confident, and she could see the excitement in Lily's eyes as she added the final touches. "You look amazing, Dalia! Tonight is your night," Lily encouraged, her voice brimming with enthusiasm. Dalia took a deep breath, feeling a mix of nerves and exhilaration.They decided to have dinner at a cozy outdoor spot in a traditional Greek restaurant, where the air was filled with the tantalizing aroma of grilled meats and fresh herbs. The soft glow of string lights overhead created a warm and inviting atmosphere, perfect for a night of new beginnings. As they arrived, Lando, dressed casually in his white shirt and black shorts, felt his heart race when Dalia appeared.
She looked stunning, and the dress highlighted her complexion perfectly, accentuating her natural beauty. The way the fabric flowed around her as she walked made it seem as if she were gliding rather than simply moving. Her hair pulled up showcased the lovely curve of her neck and shoulders, making it hard for him to catch his breath. As she approached, Lando couldn't help but notice the sparkle in her eyes, a reflection of her newfound determination. "Wow, you look incredible," he managed to say, his voice slightly shaky. Dalia smiled, a hint of shyness creeping in, but there was also a glimmer of confidence that hadn't been there before. "Thank you" she replied, her voice steady and filled with a newfound. They were all gathered around the big table, the atmosphere buzzing with laughter and the clinking of glasses. Oscar and Carlos sat across from Dalia and Lando, while Alex and Lily were at the end of the table enjoying the view from the window. As the conversation flowed, the Australian driver wasted no time in complimenting Dali's appearance. The compliment hung in the air, and Lando felt a slight knot form in his stomach. Without really thinking about it, Lando reached his arm around Dalia, gently brushing against the bare skin of her back. The warmth of her skin sent a jolt of electricity through him, and he immediately regretted the impulsive gesture. Dali was surprised by the unexpected touch, her eyes widening for a brief moment as she processed the intimacy of the action. However, she quickly adjusted to it, leaning slightly into Lando's side, a subtle smile playing on her lips as she turned her attention back to the conversation.
As the night wore on, the conversation ebbed and flowed, with jokes and playful teasing filling the air. Lando and Dalia found themselves gravitating toward each other, their connection deepening with each passing moment. They shared plenty of close moments, their conversations punctuated by playful nudges and knowing smiles. Occasionally, Lando's hand would lightly brush against hers, a fleeting touch that lingered just a bit longer than necessary, sending a ripple of warmth through them both. Sometimes, she'd notice him gazing at her, his eyes twinkling with delight as he absorbed the sound of her laughter. There were also times when he'd lean in to whisper something in her ear, his breath warm against her skin, sending delightful shivers down her spine. The intimacy of those moments was intoxicating; she could feel the heat radiating from his body, and the way his voice danced just above a whisper made her pulse quicken. Each time he leaned closer, he couldn't resist taking in the sweet scent that surrounded her—a delicate blend of floral notes and something uniquely her, a fragrance that lingered in the air long after he had moved away. 
As the evening stretched on, the group figured it was time to head back to the villa since exhaustion was starting to set in. When they arrived back to the villa, Dalia grabbed Lando's hand, halting him from joining the others inside. The suddenness of her grip surprised him, and he turned to her, a bit confused, waiting for her to say something. Dalia felt a wave of panic wash over her, fidgeting nervously as she tried to muster the courage to go for that kiss she had been dreaming about for weeks. "Are you alright?" Lando asked, puzzled, his brow furrowing slightly as he searched her face for answers. "No, please don't say anything," she begged, her voice barely above a whisper, as she gazed up into his eyes. The intensity of his gaze made her heart flutter, and she felt as if the world around them had faded away, leaving just the two of them in this suspended moment. She could see the concern etched on his features, but all she could think about was the way his lips curved when he smiled, the way his laughter echoed in her mind long after it had faded.
Without further thinking, she leaned in closer, closing the distance between them. Lando's breath hitched as their lips met, a spark igniting between them that felt like fireworks exploding in the night sky. In that moment, everything else faded away, leaving only the two of them lost in the intensity of their connection. Dalia jerked back, laughing nervously, "Oh my god, I actually did it!" Her heart raced as the adrenaline of the moment coursed through her veins. The thrill of spontaneity had taken over, and she couldn't believe she had just kissed him. Lando, still in shock from the moment, blinked rapidly, trying to process what had just happened. "No way, that doesn't count," he replied. he moved with a quickness that took her by surprise. In a fluid motion, he wrapped his arm around her waist, pulling her closer. The warmth of his body enveloped her, and she felt a rush of electricity at the contact. He closed the distance between them, capturing her lips with his. The kiss was soft at first, a tentative exploration, but it quickly deepened as they both surrendered to the moment. Dalia felt herself melting into him, her worries and doubts dissipating like mist in the morning sun.
His hands found their way to her waist, pulling her closer, and she could feel the steady rhythm of his heartbeat against her chest. Each gentle caress sent shivers down her spine, awakening a longing she hadn't realized was there. Dalia's fingers tangled in his hair, feeling the softness of each strand as she deepened the kiss, her heart racing with a mix of excitement and vulnerability.Time seemed to stand still as they explored this new territory together, their breaths mingling in the cool air. She could taste the sweetness of his lips, a flavor that was intoxicating and addictive.
In that moment, nothing else mattered. The chaos of life, the expectations, the fears—all of it faded into the background as they lost themselves in each other.
As they finally pulled away, breathless and wide-eyed, Dalia searched his gaze for reassurance. The warmth in his eyes mirrored her own feelings, a silent promise that this was just the beginning. She knew that whatever challenges lay ahead, they would face them together, emboldened by the spark that had ignited between them.

The last post I reblogged reminded me of my favourite type of wordplay ever and it happens, how else, in French (because wordplay in French is so fucking easy).
Anyways, contrepèteries.
You exchange two sounds in a phrase to create a new phrase with a different meaning. Practically, this means you have what seems to be a very normal phrase but hidden in it, there is another one. Obviously, many of them are sexual or obscene in some way because that is always funny, but there are plenty of them that are just interesting or literary. Here are some examples. I will mark the sounds you should exchange and give the answer:
Je te laisse le choix dans la datte - Je te laisse le doigt dans la chatte
Il faut brasser le béton à la tonne - Il faut brasser le téton à la bonne
Ah ! Beaux-Arts ! Quel mythe ! - Ah ! Mozart ! Quelle bite !
Notice, I wrote "sounds" and not "letters". Again, they don't need to be sexual but I chose on purpose. However, my most favourite is the so called "contrepèterie belge" that is actually a joke where you ask if they've heard of it and then tell it: "il fait beau et chaud" (it's sunny and warm). And when you try to change the sounds, you are left with "il fait chaud et beau", so basically the same. Usually, when people realise they say "mais ça change rien !" (it changes nothing!) and that's the joke, because it doesn't matter how you say it, it's never sunny and warm in Belgium.
There are ways of making the contrepèteries explicit, so to say, where you actually state where the change is: il disait qu’il n’y avait qu’un antistrophe entre femme folle à la messe et femme molle à la fesse.
That is something that exists in more languages too, and in Spanish it has a very cool name that sounds like a traditional grandma food from the post-war: retruécano.
The most famous one is "tanto monta, monta tanto, Isabel como Fernando", but there are some humorous ones and some even work as pure contrepèteries like "se avecina una tormenta" (se atormenta una vecina) even though we tend not to leave it as that. In Spanish, when we want to make those jokes, we actually state them in full as in: "no es lo mismo dos tazas de té, que dos tetazas", whereas the French prefer to let you know it's a contrepèterie and let you guess where the change goes.

In the morning we did a sightseeing tour in a taxi and a driver named „Mambo“. The weather was nice and we drove up to the cable car at „Table Mountain“ as the first stop. It was quite busy already but with „Fast Lane“ tickets we got up there in no time at all. The walkways on top of the mountain are neatly laid out and the views are fantastic in every direction. Mambo told us the stories of the various wars between the English, the Dutch (Boers or now Afrikaner), the Germans and French. It all explains why the various regions in South Africa are strongholds of the languages of the colonialists. Afrikaans in the Cape region, German in Namibia, English on the Garden Route towards Kwa Zulu Land and French in the wine regions.
We then continued to the City Centre and walked through the „Bokaap“ quarter and downtown. The „Bookap“ quarter was inhabited in the past by Asian slaves brought in to work on the Dutch farms. Now the quarter is known for its Muslim population. The support for the Palestinian case can be seen everywhere. Mambo argued the case with the similarity of the Palestinian situation with Apartheid. Downtown is a mixture of English colonial style, Dutch and modern buildings. We walked through a wonderful park with trees from all over the world. Everything was very clean and well kept. We ended the tour at the Dutch fortress in the middle of the towns. Entrance was free. Inside there were various stands selling all sorts of local crafts, music, food stands, etc.
After coming back to the hotel it started pouring down and we opted for a light lunch before checking on the car. We were relived when Bruno showed us a picture of it loaded onto a trailer and sure enough it arrived in one piece 15 minutes later! After unloading it we met some new rally people. Most of them are from Belgium. We have to brush up our French!
In the evening we have a reservation at the the „Pot Luck Club“ an offspring of the famous „Test Kitchen“ which closed its doors during the pandemic. Thanks Don Alfredo for the recommendation!

Let’s talk about my country, shall we?
General    Where is your country?
In Western Europe. The area is commonly known as Benelux.
   How big is your country?
30,528 km2. It’s tiny.
   What is the population of your country?
More than 11.5 million.
   How would you describe the landscape?
Mostly flat with no real forests on the north, more forests and hills on the south.
   Which part of your country do most people live in?
Flanders. It’s smaller than Wallonia, yet more populated.
   Tell me about the main industries there.
Metallurgy, steel, textiles, chemicals, glass, paper, and food processing.
   How easy is it to travel around your country?
Pretty easy. Except that De Lijn and NMBS are faulty sometimes, most of the time they go. And you can move within the country easily, especially that it’s so small.
Food and drink    What is the food like in your country? Is it based around meat, fish or vegetables?
Our cuisine seems to be “borrowed” from Dutch and French, but we have our own dishes as well. It’s based on all three. My favourite is waterzooi, it’s a dish native to the city of Ghent and made of vegetables and chicken or fish, cooked in cream.
   What agricultural products are produced by your country?
Dairy for sure; eggs, butter, and milk. Timber industry as well.
   What traditional dishes are served in your country? Which is your favorite? What’s the recipe?
I’ve mentioned waterzooi, which is my absolute favourite. Not to mention fries and waffles. We have two main types of waffles, the Liège waffle and the Brussels waffle, among others. The Liège waffle is dense and very sweet, with cristal sugar. The Brussels waffle is lightweight, less sweet, and shaped like rectangle. Real Belgian fries are baked twice. We have things like Cuberdon candies, rijstevlaai, ontbijtkoek, steak with fries (very common here), chicons au gratin (chicory with white sauce and cheese), stoofvlees (beef stew cooked in beer, if I’m not wrong),  moules-frites (mussels cooked in onions and served with fries),  paling in 't groen (eel with green herbs sauce), or filet américain (also known as préparé, it’s our version of tartar steak). These are what I remember from the top of my head.
   What drinks is your country famous for?
Beer, hands down. We have over 2000 types of beer, no kidding. We also drink wine, but it’s not really ours.
   What alcoholic drinks are produced in your country?
Beer and probably jenever. Wait, jenever is ours for sure.
   Are there any stories behind traditional foods?
Fries are not from France, they’re from Belgium. They’ve been introduced to Americans by Wallonian soldiers.
Political    Is it safe to visit your country?
Generally yes, everyone is welcome here. Although sometimes crimes happen, butb it’s the thing everywhere.
   What is the political system in your country?
Constitutional monarchy. Yup I live in a kingdom.
   Who is in power at the moment?
King Philippe. As for the prime minister, it’s currently Alexander De Croo.
   How is your country dealing with the current financial crisis?
Haha lol. Our taxes azre probably the highest in the whole Europe.
   What can you say about the leaders of your country?
Well, this country has no real government and we even broke our own record in longest time without any government. If you wonder how is it possible, look at the tiny trilingual country in Western Europe.
Cities    Where is the capital of your country? Is it on a river, on the coast in the center of the country?
Brussels lol. It’s in between Flanders and Wallonia.
   How would you describe the capital city and any other main cities?
Brussels - the city of two languages. Antwerp - the city of diamonds (and of infamous reputation among Belgians lol). Bruges - the city of bridges. Leuven - the city of universities. Hasselt - the city of food and drinks. Ghent - the city of architecture. Can’t say much about the Wallonian cities because I’m much less familiar with them. Although I’m fond of less known (and definitely underrated) cities like Kortrijk, Sint-Niklaas, Veurne, or Nieuwpoort. Or even Oostende.
   What special attractions can be found in each city?
Museums, that’s for sure. Architecture, that’s another thing.
Sports and games    What is the most popular sport in your country? How do you play it?
Football and cycling. How do people play it? Like everywhere else.
   Are there any sports or games unique to your country?
Both inline skating and cricket were apparently invented by Belgians.
   When is the best time to watch them?
Whenever, I don’t care much. Esoecially when there are cycling competitions through my city.
   How well does your country do in international competitions?
Apparently pretty well.
   Are there any sports that foreign visitors practice in your country?
I don’t get this question, like... our sports are international sports?
   Is football (soccer) popular in your country? If so, which are the best teams?
Yeah, football is The Sport in here. The Red Devils, enough said.
Weather    What is the weather like?
Mellow. Hardly ever above 20°C and below 0°C. Mostly rainy, although we can experience “all four seasons” in one day. Thunderstorms seem to be common here at summer. It rarely snows in winter.
   Is the weather very different in different parts of the country?
No, actually not. It’s more likely to snow in Ardennes, though.
   Can you describe the seasons?
There’s nothing to describe, all the same.
   What is the best time to visit?
Lol. Summer for the beach, winter for Christmas markets. The city I live in is a damn tourist spot.
Language    What languages are spoken in your country?
Dutch, French and German are the official languages here, although German is the minority.
   What language do you usually hear on the streets?
Dutch and Arabic lol. We have lots of immigrants.
   How many people speak English in your country?
Well, in Flanders everyone is like “but you know, my English is not very good...” and yet in the end they’re able to hold a conversation with you XD such a phenomenon. In Wallonia, though, it’s French or nothing.
Customs    Is there a particular national costume? Can you describe it?
The Huntress gown, look it up please.
   Are there any special local dances? What are they like?
Kuskesdans. Just see for yourself.

   Are the people generally friendly?
Yes, they are. ut at the same time we’re pretty reserved. Even when visiting a friend, you have to announce yourself first.
   What are some special customs or traditions in your country?
Horseback fishing in Oostduinkerke? That’s the first thing that came to my mind immediately.
History    What can you tell me about the history of your country?
Congo. Nothing to brag about.

Dutchman Sergio Herman is often known as the "rock'n'roller" of chefs. With outlets springing up across Flanders this perfectionist has by no means had enough.
You don't have to be interested in good food in Belgium and the Netherlands to know Sergio Herman, the 51-year-old is to be encountered there at every turn: As a legendarily gruff mentor in TV cooking shows ("It smells like ten farts in a plastic bag" / "Sex on a plate!"), as a permanent topic for gossip magazines, as the godfather of his own brand of cookware and tableware and, and, and ...
Herman's main field of activity is as the owner of a gourmet empire; his Sergio Herman Group currently comprises six star-rated and fine-dining restaurants in Belgium and the Netherlands, as well as a premium fast food brand, Frites Atelier, and a constant stream of pop-up locations. However, the speed with which Herman opens new venues or withdraws from them – sometimes after disagreements, such as recently with his long-time companion Nick Bril in the Antwerp two-star restaurant, The Jane – makes the term 'pop-up' relative.
He often questions whether or not he can maintain his current pace. Herman says, "I have seen many examples of people around me who have pushed their limits too far. But I don't have a plan B because I've come to terms with the fact that I'm programmed to work all my life". However, at the beginning it looked different…
Fighters In part as a disciplinary measure, his father sent Sergio, a school drop-out, to hotel management school in Bruges. His father knew what he was doing: together with Sergio's mother, he ran their country inn Oud Sluis, which specialised in mussels, and hoped that the hard daily kitchen routine would bring his son to his senses. The calculation worked, so much so, in fact, that after graduation Sergio completed an unpaid internship with Michelin-starred chef Cas Spijkers, discovering high-end cuisine for himself. Soon he was looking for other culinary mentors, but fate intervened; his father fell ill and called the teenager back to the kitchen of the family inn. At first, this meant cleaning mussels and peeling onions, day in, day out. To this day, a love-hate relationship of astonishing proportions comes to light whenever he is asked about mussels.
Even today, Herman calls his father the "strongest voice" among all those from whom he was able to learn something. "It was he who encouraged me to find my own style and he gave me all the support he could. He was a strict teacher though, harsh at times, but I decided not to be discouraged." That, he says, is what he now teaches to the next generation in his restaurants: "It's worth fighting for a strong career." In Herman's case, that meant he was "cemented in the kitchen of the Oud Sluis as a chef for 20 years".
No half measures In the end, Herman was to transform Oud Sluis into the most famous three-star restaurant in the Flemish-Dutch region. But the beginning was anything but promising: regulars refused to embrace fine dining, while new guests shied away from the address which had a reputation for being conservative. Often the restaurant remained empty. Herman did what he does with every setback, "I try to redirect the negative energy of a loss or failure into something that wrings those feelings down." He never lets grief and disappointment distract him from his goals. "That attitude may be hard at times, but as long as that works for me, I will continue to live that way. My willpower is my anchor." His first anchor point was a Michelin star in 1995 for the then 24-year-old chef of Oud Sluis, his second followed in 1999 and the third in 2006.
The success story could have gone on forever if Herman wasn't Herman: In 2013 he simply closed Oud Sluis, which was booked out for months in advance and which had been immortalised in a documentary entitled Sergio Herman – Fucking Perfect. The chef, who had not come out of his kitchen for decades, reinvented himself as a gourmet big businessman at the age of 42. According to Herman, his life up to that point had given him "the status and respect in the culinary world" that he has built on ever since. But at the same time, he realised that he did not wish to continue living in the kitchen, he wanted a life "that I can change in any direction I want to change...".
He now channels the passion with which he used to work behind the cooker into gastronomic projects of all kinds, "but they have to be something special and unique. I live for that excitement". Herman always keeps a firm grip on the strings. During the Covid restrictions on restaurants and hospitality, for example, he tested all his venues and then handed over to-do lists to the respective chefs.
So far, Herman's armada of restaurants has been limited to the Flemish-Dutch region so that he can keep track of everything that bears his name. His Frites Atelier brand is probably the most suited to expansion and even franchising, due to its tight culinary snack corset. The first franchise opened last year in the designer outlet Roosendaal, in the Netherlands. Meanwhile, there are four other branches in The Hague, Antwerp, Ghent and Brussels. Soon, there may also be news about Herman's long-planned move to Singapore.
As crazy as possible Before jumping to a new continent, however, Herman takes another look at his neighbourhood: The Strand Hotel sits high up on a sand dune on the Zeelandic coast looking out over the North Sea. Here in this opulent food and well-being hotel in Cadzand-Bad, you can either dine at his two starred restaurant Pure C or in the much smaller relaxed bar-bistro Blueness, with its fresh seafood strongly influenced by Japan. Just across the border in Belgium, two other projects are under negotiation, about which he does not want to reveal any details for the time being, but according to Herman, should be completed later this year. Admittedly, this is "a lot of work. But I try to live as healthy as possible, which is a challenge in this business. And I try to stay as physically and mentally fit as possible". All in all, he says, he is "in for another crazy year ­– but that's just the way we like it!"

Waffles are one of our most popular dessert offerings. We started with Belgian waffles, then added waffles on a stick. Perfect as a walk around whilst you eat kinda food. Currently we are starting a roadshow for a major financial company, with visits to some 20 universities around the UK offering waffles on a stick. But it got me thinking, what do waffles around the world look like. So here is a quick look at some of the weird and wonderful options from around the world. Belgian Waffles Belgian Waffles Carts For Hire Probably the best known of the waffles. Introduced at the 1958 Expo in Brussels. They were introduced into America in 1962 by Belgian Walter Cleyman and served with strawberries and cream. Still a popular option today. They were based on a simplified recipe for the Brussels waffle, legend has it that the name in the States was changed to the Bel-Gem due to the average American being unable to identify Brussels as being in Belgium. Bergische A specialty of the German region of Bergische, these are heart shaped and served with cherries, cream and rice pudding as part of the traditional Sunday's dinner in the region. Less dense and crispier than their Belgian counterparts. Pandan Waffles Or 'Green Vietnamese Waffles', a popular street food in Vietnam. The Pandan flavouring and coconut milk in the batter give it the distinctive green appearance. Unlike most waffles elsewhere these are typically eaten plain. Gofri Waffles Next up is Italy's entry. Or to be more precise the Piedmont region. Containing no egg or milk they are lighter and crispier in texture than other variants. Moffles This one is something different, by the Japanese (Who else). a Mochi rice cake cooked in a waffle iron. A crispy exterior with a glutinous mochi insides. Served both as a dessert with condiments, or as a savoury offering with ham, cheese or cod roe. Stroopwafels From one of our favourite countries (The Netherlands) comes the stroopwafel. Originally from the Dutch city of Gouda. Made from flour, butter, brown sugar, yeast, milk, and eggs. Balls of batter are placed on an iron, whilst it is still warm, it is cut in half, and the filling spread over the surfaces gluing them together. Taiyaki A Japanese entry dating from 1909, this is shaped like a Sea bream fish, and commonly sold as a street food. The most common filling is red bean paste that is made from sweetened adzuki beans. Though Custard, chocolate and cheese are also offered. Kanom Rung Peung Hailing from Thailand, the name means literally 'Bee Hive Snack', and they are made with coconut milk, palm sugar, coconut, and sweet corn. Being sweet they can usually be eaten without additional toppings. Liege Waffles Another entry from that little European country of Belgium. See, they are famous for more than just sprouts. Liege waffles are made using a yeast dough and pearl sugar, giving them mush more of a chewy consistency than most of their competitors. Num Poum Made with coconut and rice water, this hails from Cambodia. Another popular Khmer street food. Pizzelle Italy's take on our favourite food. The Pizzelle, made from flour, eggs, sugar and butter and typically flavoured with anise, lemon or vanilla. These are flat, crispy, and commonly sprinkled with sugar. Hong Kong Bubble Waffle A rather unique shaped snack, called "gai daan jai" in Cantonese these taste a little like a cross between a cookie and a sponge cake.
