🔪🍽Dinner 022521 - Penne with sautéed onions, garlic, capers, burst grape tomatoes added toward the end, and roasted brussel sprouts tossed in. Grated Parmesan, hello!

We also had a salad that featured slivered almonds and dried fruit tossed in a Cabernet vinegar dressing. 🤩

Basic “recipe” if you lovelies are interested:

Put up your water first!

Oven Work

Halved brussel sprouts tossed in olive oil and seasoned with salt & pepper, roasted at 450 for 10-15 minutes. They will be done roasting before the pasta is finished cooking, so set them aside. Saving the best for last, baby! I love brussel sprouts so damn much.

Meanwhile.....

Sautéed together to your liking (I prefer the onions to be browned and super soft - brings out a nice sweetness)

2 yellow onions

5-6 cloves of sliced garlic

2 Tb whole (small) capers

Generous amount of olive oil (I don’t measure these things)

Season with salt

Add whole grape tomatoes when the water is ready to receive the penne

Continue to sauté all of that shit together! When the penne is done and drained, add it to the sautéed things. Mix it all up and toss in the brussel sprouts.

Serve with grated cheese if that’s your thing or fresh parsley. Maybe a squeeze of lemon!

*Whole Foods 365 gluten-free pasta is made up of corn and white rice. Good al dente texture when cooked right. I check the done-ness around 5-6 minutes in; usually done around 7 minutes.*

This a weird day. Because it's light and I'm just happy. I don't know. But after a long time, I don't have any worries on my shoulders. I am not even scared.

I am just...happy.

And grateful.

I hope this little starlight would stay for the rest of my life. I hope I can help him in some ways. I hope I can be a blessing to him.

I don't know.

But for the first damn time,

It feels right.

And that for me is enough. :)

I am not holding back. I am just flowing and I am just being real to him—and especially to myself. I hope he is God's blessing. I hope He gave him to me.

022521 - Day 8 of getting back up

Last night, i went out to drink with an old guy friend. It was a chill inom night. Tropa lang. Like u say ur relationship with her is.

But u know what, hindi na tayo and yet nagguilty pa rin akong lumabas ako with someone else. I know i shouldnt be. But my mind and my heart still lies with you. Loyal and faithful pa rin ako sa relationship natin despite it ending.

And now i realize na baka wala na lang talaga tayo for you. Kasi wala pang 1 month since we broke up, u were going out alone with her already, and u two even booked an airbnb unit to spend a night in. "Tropa lang" but who are you guys kidding. So i'd assume there wasnt a hint of guilt on your part.

And things like this push me to move forward. I miss you, but i'm so much worth more than this.
