Alright, Oatmeal Story Time.

About 7 months into my year at my preschool STEM teacher job, one of the toddler teachers quit outright. Being a teacher not assigned to a specific year, it was decided that I would fill in. I thought that it would be temporary, and later learned my boss had no intention of getting me back into the STEM so she could "save money", but that's neither here nor there.

Another poorly made decision by higher ups was the choice to "healthify" the menu. (This was a private school that provided breakfast, lunch, and afternoon snack, mind you.) Like I say "healthify" in quotes not because I think it's a bad idea, but because the menu was ALREADY super healthy. It was expected, since this school was in a VERY good neighborhood filled with lawyers and plastic surgeons and doctors.

(Conspiracy theory time: I think the idea was to get cheaper foods because quality went DOWN.)

I forget if it was pancake day or yogurt-and-fruits day that saw the breakfast replaced with Oatmeal.

Now. Understand. This is grey stuff. This oatmeal LOOKED bad. It looked both lifeless and as if it would grab me and absorb my flesh into its skin for sustenance simultaneously. This oatmeal was Wrong.

My toddlers co-teacher (I'll call her M--we had a full class size of 14, 7 for each teacher because Ratios. but at that time we had about... maybe 8 kids) and I had to introduce these children, sitting at their little shin-height tables expectantly, to the Grey Slop. 1.5 to 2 years old, never seen shit like this before. They all stared at us like we were crazy.

Hoping to convince them the stuff was fine, we picked up the plastic spoons and ate some ourselves, and I could tell straight away that M was thinking the EXACT same thing.

It was horrible. There wasn't NO flavor, per se. They hadn't seasoned it at ALL, but not only that, it waa BAD. It had BAD flavor.

But we fought through it, hoping to get the kids to eat something to prevent future grumpiness.

Of course, the most capricious of the bunch, I'll call him S, tries first. Smacks it around in his little mouth thoughtfully for a second, pauses, and his face sours.

Thwack--plop.

S had sweeped it off the table and it landed sticky oatmeal side down on the tile.

The other children stare at him for a moment before the rest follow. Plop. Plop. Plop. Plop. Plop. Plop. Plop. Eight Breakfastime Casualties. The twins got it on each other. It was in another girl's hair. Chaos ensues.

It was the Great Oatmeal Day Protest of 2018.

And every oatmeal day after that, we'd have to try to keep the kids from yeeting their bowls.

And the thing was, THEY WERE RIGHT TO DO IT.

Divine Principle was continually reinforced by community life, especially in Family Meetings. These were a time for brothers and sisters in the centers to share their realizations of God, their conquests of their own selfishness, or their dreams. Sometimes Onni would speak words of fire. Because of this, the call for Family Meeting struck like lightning.

“Quick, pali-pali!” (Pali meaning hurry in Korean.) “Onni’s coming tonight for a Family Meeting. Clean up now!” Teresa ordered. Teresa, who was responsible for preparing the worshipful atmosphere, assigned an older sister to prepare fruit and Ginseng tea for Onni and Dr. Durst, tasks accepted with honor and fear. Tensions ran high to meet Onni’s standard of perfection. Windows were opened because we all knew Onni’s “spiritual smell” was very sensitive to “low spirits” from recently departed guests still dwelling in the Satanic world. Hair combed, faces washed, shirts tucked in, the Family gathered in full circle around a pillow or sofa prepared for Onni. Teresa would lead us in singing before the magisterial arrival.

Onni and Dr. Durst would sweep in. Onni’s presence commanded full obedience. Meetings would usually start with a ritual passing of fortune cookies, which we read out loud. Seen as a barometer of our spiritual states of mind, the ones I saved were memorable: “Great thoughts come from the heart,” “Life to you is a dashing and bold adventure,” or “He that falls in love with himself [which I publicly read, “God”] will have no rivals.”

I also lived at the Hearst Street mansion, a stately old Georgian ex-fraternity house near the University of California campus; at The Gardens, elegant and palatial home of Onni and Dr. Durst, for a few months; up in the Boonville trailers; and at the dignified Victorian Washington Street center in San Francisco.

The most complete responsibility in center life I ever assumed was during two months in summer of 1975 when I moved back to Oakland’s modest but historic Dana Street center. Jonah directed that house with bursting momentum, consistent as a reliably wound clock. My duties as his “object,” or assistant, included cooking for thirty each day and night, buying food and provisions, and in “spare” hours leading a recruiting team in downtown Oakland in which our goal was a “date” for dinner each night. (I still recall those unsuspecting sidewalk innocents on whom we lunged in desperation a few minutes before dinner.) I also hostessed evening lecture programs, gave lectures and slide presentations, kept the finances and the family history, answered telephones, drove flower-selling missions at night, conducted prayer meetings and trinity meetings, group-assisted at Boonville on weekends, and, above all, served Jonah with total obedience.

Jonah treated me with stern instruction, ever ready to correct. He’d catapult out of the house for meetings at The Gardens with Onni, sticking his head back in the door to yell about all the errors in judgment I’d committed that day. With no chance to plead for justice, I’d trot to Onni’s prayer room to faithfully pray for inner strength to humble myself to his holy tyranny, to feel “married for eternity” to his will. I tried to sense our bond as unending, the only way I could force myself to submit temporarily. After unlocking it with a hidden key, I’d slip into the Dana prayer room. One for each center, this one was immaculate with quiet light, translucent curtains gently blowing, photos of True Parents and Jesus, mementos from Korea, holy books, and the fragrance of fresh-cut roses. These moments were the few times when Reverend Moon’s wife, my True Mother, emerged as more important to me than “Father” himself. I had been told that her course in restoring the world set the example for all sisters. She lived an absolute shadow existence to Reverend Moon, an obedient birth-giver to “perfect” children, one after another. Kneeling under her unreadable face posed beside Father’s, I identified with her intense struggle to endure her life.

At Dana Street, while I was assistant, our main mission consisted of recruiting eight hours a day in places like the San Francisco wharf, Golden Gate Park, on Berkeley’s campus, or on the new subway system, BART. Working with a small team of partners, we would approach and invite to dinner as many bright, capable passers-by as we could manage to engage in conversation. Onni instructed us to avoid talking too long to any one person, especially to avoid talking philosophy about the Church. She herself had set the standard when, in the early movement, she had reached out to one hundred people in one day. “Make friends, offer them whatever they are seeking, pray for Heavenly Father to guide them to dinner,”' Onni would teach. “Sisters get handsome men, brothers attract pretty girls. It’s good if they come because they like you. Once in God’s house, they learn to love God instead.” By spoken and unspoken understandings, we knew what we were looking for: capable, healthy, restless, young, white people like ourselves, preferably lonely and traveling, uprooted. They might respond to our approach: “Beautiful day, isn’t it? Been traveling long? Where are you from? Have you ever met our Family? We live on a huge farm together. You should come visit us; you’re always welcome. By the way, are you hungry?”

Two Family buses, called the “Coffee-Break-Bus” and the “Elephant Bus,” were strategically located in tourist areas as recruiting centers for “hitchhikers with knapsacks.” Our teams would look for young prospects, bring them back to the bus for coffee and doughnuts, and introduce them to the Family. Our psychological approach was irresistible. Members of the Church “radiated” love and kindness to strangers. Many conscientious, open people felt obliged to respond to us on a personal and social level because we made it seem too cruel to resist.

After a full day of recruitment, reaching out to people we believed we could save, our dinners at the center consisted of more intense relating to individuals. We fed them, entertained them, and suggested to them an “amazing set of ideas that would change their lives and make them happy.” We insisted they stay with us. The success of the day was measured by how many guests “signed up” and paid for a weekend training session up on our isolated 680 acres of land, the Boonville farm.

After guests left the centers at nine-thirty at night, the house was cleaned. Moneymaking teams prepared to “blitz the bars.” Everyone else visited prospective “spiritual children,” or held trinity meetings to read “Master Speaks,” a series of tracts based on Moon’s speeches. Prayer and chanting was at eleven sharp. Anyone who had fasted, to bring more people or money in, would break that fast at midnight with soup and ice cream. By 12:30 younger Family members were in their sleeping bags, men side by side on one floor, women on the next level in strict segregation. Carpet cleaning or auto repair crews might come in at four or five o’clock after working all night.

After midnight, as center assistant, I planned menus, incorporating Boonville farm produce into rice, soup, or potato combinations for next night’s dinner. (Breakfast had been juice, coffee, oatmeal; lunch was peanut butter and jelly sandwiches, raisins, carrots, cookies.) One-thirty a.m. found me still making lists of workshop signups and fund-raising accounts, and trying to locate used clothes in the “extra clothes room” for new sisters.

By two o’clock, Jonah would either stagger in or bluster in, depending on Onni’s mood, from a staff meeting at The Gardens. Over his milkshake or a stack of gooey jelly and peanut butter sandwiches I’d prepared, I would try to guess from him the content of the meetings. I later read through a staff brother’s notebook and learned what a tight ship Onni ran. The following are quotes from Onni, as recorded in his notebook:

“If one person doubts then no good. If on staff and drop out, this creates disunity because can’t trust you. Such people are betrayers. You know heavenly secrets. If you go away, you dangerous because you know too much. You can’t zig-zag. If you fight it out, you can overcome.” (2/13/74).

“You staff have Satanic evil mouths. Have to knock off—don’t say too much. And when you talk to people, talk only about their needs, their benefits, find out what will get them in. In witnessing, if people get negative toward you, just say that we support all churches.” (2/3/74).

(And a few days later): “We never tell any lie, never give any untruth. Who accuse us of that?” (2/21/74).

“If you don’t listen to me [Onni], no way for you to be restored. Bind with Onni. Do or die for purpose. Get rid of own ego. Our own will or desires must be last.” (2/14/74).

In January Onni had given instructions to Teresa about a sister who had complained of seeing evil spirits: “Teresa, must ask Abbey honestly heart to heart, pray together. Then talk. If no good, then chase evil spirit out of her. If not we’ll send her to hospital. She should do laundry each day.”

Onni had said of a brother, a young insurance salesman noted for his spunk and independence of mind: “Never let Don drive again. I don’t like him. Smash his ego. Or put him in Heavenly jail to change his attitude!” (2/21/74).

Other provisos: “Everyone must raise hand and share experience at Family meeting. If you can’t raise hand you are living selfishly. No good.” Or: “When you go out and witness, witness to the people for Dr. Durst; they respect Ph.D. bag. But when people come into Family to stay, then you witness for Onni.” And, “No one want elderly people around for dinner because they are not needed.” (2/20/74).

Onni also made clear in staff meetings: “No German travelers for workshop; they too scientific and heady. And black people don’t fit in so well. Hard for them. Not right time in God’s providence for them. Father says if whites don’t accomplish then use blacks to shame whites in America, but not yet.”

When I started learning to drive at 17, I decided to buy my self a cheap car so that I'd be able to get more experience behind the wheel, pass my test quicker and have a car as soon as I passed my test. I was insured on my provisional license with an insurance company which specialised in learner drivers. However, I ended up getting 3 points on my license the week before I passed my test, in what I still think were pretty unfair circumstances. My house doesn't have a drive or a garage and so I had to park my car on the road in front of my house, or on a street round the corner when there were no spaces. I could have appealed but that would have meant going to court and I was only 17 and that terrified me. I declared the points to my insurance company straght away, but due to the nature of the offence my insurance was invalidated and void. I've only just now realised how serious having insurance voided in the past is. I'm supposed to be moving a 5 hours away in a few months for a job, and I have plenty of money saved for car insurance and a car, as without a car, the move is completely unrealistic. Without a car I won't be able to get to work as the hours are unsocial and my job isn't very well connected with public transport at all and so relying on public transport or taxis is simply not an option. Bevin just published a new book Spice Apothecary: Blending and Using Common Spices for Everyday Health, and I was excited to dig deeper into this topic.

Bevin is a clinical herbalist, nutritionist, plant lover, and a Professor at the Maryland University of Integrative Health.

Selecting 19 plants for Spice Apothecary

In her new book, Bevin described in depth 19 specific plants including cinnamon, ginger, turmeric, black pepper, vanilla, cumin, garlic, mustard and a number of others.

This is the main reason they made it into the book — all 19 of these spices are accessible, commonly available, and relatively low cost.

Many of us have played with them at some point whether for cooking or baking (apple pie, nutmeg cookies, chili and other).

Most of these plants been studied for a variety of medicinal uses including immune protection, healthy bones and skin, healthy joints, sharp focus and mental health and many more.

Because of how prevalent these plants are in the market, it’s reasonably easy for most of us to incorporate them into our diets.

I know you might think not everyone loves spicy food, but that’s where you got it wrong. I was born in Eastern Europe where I was familiar with salt, pepper and cinnamon for the first 16 years of my life.

Today, I’m excited to report that your desire for spicy food can change during your lifetime based on your new preferences and exploration. And yes, heat in does not need to be the only ingredient you are working with when integrating spices into your life.

Plant parts

Spices we use come in many ways — you’re probably familiar with rosemary and oregano leaves, cinnamon bark, mustard and cumin seeds, ginger and turmeric roots.

Depending on what part is used, volumes can vary — for example, a tablespoon of dried chili is a lot different than a tablespoon of basil.

Typically, fluffier parts of the plant, like leaves and flowers, are less compact and more voluminous. Additionally, roots and seeds are more likely to come or be used as powders.

Knowing what to expect in terms of volume and weight is important. This is where spice research intersects with your everyday life.

For example, if a study says that 1 gram of cinnamon is good with your breakfast to help with postprandial cognitive function (or feeling of grogginess), would you know how much to put into your oatmeal or coffee instead of rushing buy to cinnamon capsules?

Fresh vs dried vs powdered vs cut and sifted

In addition to doses, concepts of shelf stability and palatability of your spices are also important.

When you shopping for herbs and spices, you’ll learn they come in many different ways — cut and sifted versus dried versus fresh.

Fresh for the most part has a lot to do with our ability to acquire things fresh and in season. Therefore, fresh will be different in various parts of the world or even an urban areas — turmeric can be fresh India, whereas in a lot of other places, this is something that’s always comes only as a dry powder.

Most commonly available fresh spices you’d find at a grocery store include cilantro, parsley, maybe mint, fennel and other. If you can get those leafy greens fresh, use them and get most in terms of their vitality and vitamins right there. The dosages are going to be a little bit different because they are fresh and watery, almost like a half vegetable.

The dose for all of those fresh herbs is just as much as you can put in your food, you don’t really need to stop. Basil or parsley flakes are examples of the same plants we get dried. They come uniformly cut and sifted for the sake of consistency which is typically done by the industry.

If you buy your leafy spices dry or get them from your garden to dry and safe for winter, keep them as big as possible. Whole plants have less surface area (less of the plant is exposed to oxygen), therefore, they don’t degrade as quickly. You can crumble these up before you cook them. Once powdered, that process of decomposition happens a lot quicker.

The powders are great for spices that aren’t palatable whole, or too crunchy or chunky whole and the cuisine isn’t prepared to deal with them. A lot of spices that are sold whole can be ground up with a mortar and pestle or a small coffee grinder. I keep one specifically for spices, and clean it with a handful of white rice between different spices.

Additionally, you can keep some seeds whole, and add into hot oil and then remove later. This is a pretty common strategy for a lot of cuisines (for example, a number of Indian dishes will ask you to heat oil or ghee with spices that way).

When thinking of shelf stability, ginger is one of those indestructible herbs. You can have really old ginger and it’s still going to work well as a far as a powder. But when looking at leafy greens like basil, really old basil will not work at all.

Over the years, Bevin tested and collected many recipes that showcase a brilliant use of spices.

Some of them are sweet (like apple pie), while other ones are savory (like spiced hummus or chili). All have been tested by herbal students and colleagues who recommend spices to patients and friends.

One of my personal favorites is dark chocolate synergy fudge that uses turmeric, cinnamon and black pepper in a vehicle of dark chocolate. I know of no better ways of getting your turmeric in on a daily basis.

The best place to start is with your spice rack. We often have old spices that have been there for some time.

Learning how to evaluate your spices (their color, aroma and potency) will be essential for determining what’s still good versus what should be composted.

As a rule of thumb, leafy spices will lose their potency faster (6–12 months) than harder roots and seeds (1–2 years.) Powdered spices, those sitting in plastic bags, or those exposed to air will also decompose faster.

A typical recommendation is to get small bottles of new spices, so they are rotated quickly.

Why Do Seventh-Day Adventists Live Longer Than Most Americans?

I was reheating some leftover cottage cheese loaf the other morning, savoring the phrase “cottage cheese loaf” as I anticipated its delicious, savory crunch, when I wondered if anyone had written a love letter to this or other classic Seventh-Day Adventist dishes.

My wife made this loaf. She grew up Seventh-Day Adventist and introduced me to what I call #LoafLife. Although her parents left the denomination by the time she was 14, much of its community-mindedness stayed with them, along with its food. A healthy diet and exercise are central Adventist tenants, because the group believes in a relationship between physical and spiritual health. This often means vegetarianism. My wife didn’t eat meat regularly until high school, and even after that, she’s always eaten it conservatively. The family’s love of vegetables and salads remains strong. They still make Adventist haystacks. They still make oatmeal-walnut patties. The cottage cheese loaf is a simple mixture of chopped onions, walnuts, parsley, salt, pepper, butter, and cottage cheese bound together with eggs and Wheaties for a nice wholesome texture.

To learn more about the ideas that produced so many wonderful meals for me, a non-practicing Jew, I did some sleuthing and found a few illuminating articles about the Seventh-Day Adventist diet. Howard Markel wrote a good short Smithsonian article entitled “The Secret Ingredient in Kellogg’s Corn Flakes Is Seventh-Day Adventism.” But my favorite is journalist Emily Esfahani Smith‘s 2013 Atlantic piece “The Lovely Hill: Where People Live Longer and Happier.”

Smith focuses on Loma Linda, California, which has one of America’s largest Seventh-Day Adventist communities and, not surprisingly, is known for the health and longevity of its residents. For the Biblical origins of the sect’s dietary practices, Smith quotes Pastor Randy Roberts of Loma Linda University: “In Corinthians, Paul speaking of the human body says specifically, ‘you are the temple of the Holy spirit.’ Therefore, he says, whatever you do in your body, you do it to the honor, the glory and the praise of God.”

Interestingly, the diet closely resembles the Mediterranean diet. Smith includes some incredible findings about the benefits of eating nuts, avoiding fast food, and the role meat plays in heath:

Adventist men who do not eat meat outlive American men by seven years. Adventist women who do not eat meat outlive American women by five years. Many Adventists do not eat meat, but even those that do outlive their peers thanks to the amount of vegetables, fruits, and other healthy foods they eat. Meat-eating Adventist men live 7.3 years longer while the women live 4.4 years longer than other Californians.

But the correlation between diet and health goes beyond the body, also impacting depression and a nurturing sense of positive well-being:

Ford and her team at Loma Linda University examined the eating patterns of over 9,000 healthy Seventh-Day Adventists in North America over a four-year period. How often did they eat fast food? Did they eat meat? What kinds of dairy products were they consuming? What about nuts? Desserts? Fish? They then examined their self-reported feelings of positive and negative emotions—how often did they feel inspired? Excited? Enthusiastic? Upset? Scared? Distressed?

The researchers found that those who eat like Greeks feel more inspired, alert, excited, active, inspired, determined, attentive, proud, and enthusiastic than those who consume a more typically American diet consisting of highly processed foods, soda, and sweets like cookies and doughnuts. People who eat foods associated with a Mediterranean diet also experienced less negative emotions like being afraid, nervous, upset, irritable, scared, hostile, and distressed. The more people ate those foods that are more typically American — specifically, red meat, sweets, and fast food — the less of these positive emotions they felt.

Smith describes a Loma Linda centenarian named Marge Jetton whose gusto is impossible not to envy, even if you’d rather not share her diet or schedule.

At 100 years old, Jetton, a former nurse, would wake up at 4.30 am each morning. After getting dressed and reading from the Bible, she would work out. When she completed her mile-long walk and 6-8 miles on the stationary bike, she had oatmeal for breakfast. For lunch, she would mix up some raw vegetables and fruit. Occasionally, she would splurge on a treat like waffles made from soy and garbanzo beans. That wasn’t all. The centenarian volunteered regularly, barreled around town in her Cadillac Seville, and pumped iron. She also tended to a garden that grew tomatoes, corn, and hydrangeas.

I’ve always known my wife would outlive me, and not just because I’m older and exercise less —meaning, almost never — but because vegetarian dishes are her comfort foods. Old habits are hard to break: In my family, comfort food is Oklahoma country food like biscuits and gravy, cream pie, and the Sonoran-style Mexican food we grew up on in southern Arizona. For my wife, comfort food is cottage cheese loaf, haystacks, and oatmeal-walnut patties. Although I’ve eaten pretty healthily since college, my time eating her family’s Adventist holdovers has only made me see how much room my lifestyle has for improvement. This particular morning loaf and Atlantic article made me realize that, in midlife, I need to catch up with my wife’s enviable standards of self-care. I’ve been slacking during the last decade.

I was a vegetarian for three years in college, and a vegan for one, so my palate is primed for the Adventist nutty-loafy-patty menu. I shopped on Craigslist for a used stationary bike, I researched machines to make homemade soy milk, and I made a pact to eat less meat and way more tofu. She was like: Duh, I already do.

I always loved the loaf for its flavor, but now it’s a gateway to healthier habits that would likely please Seventh-Day Adventist co-founder Ellen G. White. And when my wife asks, “Want to make cottage cheese loaf this week?” I always say “Hell, yes.” No religious reference intended — I’m just a cursing heathen who wants to live a long life.

Weightlifting nutrition is an individual pursuit – yes, you burn a lot of calories when lifting weights, but how many calories and what your replacement levels are is dependent on your specific metabolism and your goals. For best results you need to start with a specific program and then modify your daily caloric intake based on your results.

Define Your Overall Goal: Why are you lifting weights? Are you trying to lose weight? Are you trying to build muscles? Are you just looking to improve your overall fitness? Each of these goals requires a different daily calorie intake, so it’s important to know what you’re aiming for before you begin.

Start A Food Diary: If you’re like most people, you only have a vague idea, at best, of how many calories you’re presently consuming. Why is that important? Because what you’re currently eating has brought you to your current weight and your current body composition. You’ve been giving your body the right number of calories for the muscle you’re carrying and for the bodyfat level you currently have, assuming your weight has been fairly stable lately.

Learn About The Different Food Macronutrients: You don’t need to become a nutritionist necessarily, but you DO need to know the difference between carbohydrates, protein and fats. While all three are important to your daily diet, they’re not the same. As an example, carbohydrates and protein have 4 calories per gram while fats have 9 calories per gram. Part of figuring out the right number of calories for your daily intake will involve knowing what ratio of macronutrients you should be ingesting. One helpful tool is a book of food counts – numerous exist so you shouldn’t have trouble finding a good one in your local bookstore or online.

If you’re looking to build muscle, add in the necessary amount of protein each day to get you to the 1.2 grams per pound of your bodyweight and give your body a week or two to get used to that level of calories. To grow from there, every couple of weeks add in another 200 – 300 calories a day by increasing your complex carbohydrates – sweet potatoes or yams, brown, red or black rice, steel-cut oatmeal, broccoli or brussel sprouts, etc. At first this is easy – simply add a meal with protein & the new carbs an hour before you start lifting weights and/or an hour after your gym session. Keep an eye on your stomach – you can keep increasing your carbs a bit every two weeks or so until you start to see a bit of an increase in belly fat. Once that occurs cut your carbs back that last 200 or 300 calories per day – you’ve found your current effective daily calorie intake. Remember, though, as you continue lifting weights and eating right you’ll be adding new muscle mass, so every month or so add just enough protein and carbs to match your then-current bodyweight.

Losing Body Fat If you’re lifting weights to torch body fat, there are two things you MUST remember up front. First, your goal is NOT weight loss – it’s fat loss. Strictly restricting calories from the start will cause you to lose weight – but a goodly-proportion of that weight loss will be muscle loss, and that’s not your goal. Many people are very surprised when they start lifting weights to find their clothes getting looser, their waistline shrinking but their weight going UP. This is because muscle is much denser than fat, and therefore heavier for the same size. Don’t let that bother you – focus on how your clothes fit or have your bodyfat percentage measured by your doctor or a certified personal trainer.

Second, understand that the calories you eat, and the source of those calories, will determine whether you’re losing fat or not. Yes, you’re burning extra calories when lifting weights. Yes, you’re building muscle and more muscle burns more calories 24/7, even while you’re sleeping. But these will NOT be enough extra calories burned to make a big difference – especially when compared to the difference your nutritional choices can make.

As with those trying to build lean mass, start by getting your protein intake into range. If that means you’re getting more calories each day from protein, cut back the equal amount in the carbohydrates you’re eating daily. You’ve figured out how many calories you’re already eating each day, and 20% of those calories should be coming from healthy fats – especially Omega-3’s. Once you subtract that 20%, plus the calories you’re going to be ingesting from protein, the remainder come from carbohydrates. Every 2 or so reduce your daily carbohydrate intake by 200 – 300 calories. This won’t cause sudden fat loss, but it will slowly force your body to start burning stored energy – body fat – to fuel your daily activities and your weightlifting sessions. Larger or more sudden caloric reductions can trigger your body to slow your metabolism, and that’s not what you want, so keep to the slower reduction. Remember NOT to use the scale to judge your progress – base it on body fat measurements or how your clothes fit around the waist.

You can reach your goals, be it reduced body fat or bigger muscles, as long as you use proper nutrition for lifting weights and keep your daily calorie intake in line with your current body composition, your activity levels and your goals. And with improved health, a stronger system and a better-looking body as the side benefits, it’s certainly worth the effort you’re putting in – see you in the gym!

A couple of weeks ago a lady ran a red light and hit my car. Her insurance company took a week to get me a rental and two weeks later finally go look at my car and determined a total loss. The adjustor was pretty rude about the whole situation (yes I know that's their job) and started in on how my car has extensive hail damage which is not true. There were some dents from hail on the hood and trunk lid but every used car in Oklahoma has hail damage since we have had several storms over the past few years. He said that they would have paid $5900 for the car but because of the hail damage they will only pay $1250 which is ridiculous. I've done my research and the average cost of my car within 200 miles is $6000 and I have received one estimate on repairing all of the damage was $2000 yet he claims it will cost $7000. The dealership I bought the car from just sold a vehicle just like mine with hail damage for $5000. The engine and everything else on the car was perfect. When I told him all of my info he laughed at me and said oh by the way we are only paying for your rental till the 9th so you need to settle quickly, take it or leave it so I said I was calling a lawyer. I'm waiting on the lawyer to call me back but I just want to know, what should I look for to help me. Our real estate agent told us to purchase and insurance policy from Old Republic to cover anything that could be wrong with the house since it was built in the 80's. An inspector looked at the house prior to our purchase and didn't notice anything with the property. Once the house was occupied by our renter, he noticed that the lights would shut off and stay off for a few hours. Old republic sent an electrician over and he told us that the prior owner had replaced a new breaker on top of a broken buster. He reported back to old republic and they stated that the insurance didn't cover anything that was not installed correctly. We were precise to inform our agent of the policy we needed for the house. We were not sure what work the house had done prior to our purchase so that is why we purchased the insurance. The policy we had was Old Republic Home Warranty Plan. That is what our agent advised us to get. Now, what can we legally do to help cover our out of the pocket expense of over a grand. Is there a policy that anyone would recommend for a rental house. Goodmorning!

I woke up this morning at 8am, but I couldn’t get out of my bed. It needed more time, like always, but today I needed 1h15 to get out of bed. It was 9.15am, till I got up and was able to get some breakfast.

All day I can eat this healthy food I want, but for breakfast I always need sugary things.

My plan after breakfast … I went back to bed for another hour. I had no idea that I could do stuff today.

Snow, snow and more snow

Yesterday the snow melted all, and this morning it was snowing hard again. In just a few hours it was all white and dangerous outside.

Around 13pm I went outside to take a walk in the snow and take some pictures of the snow around us. It’s so magic all the snow outside on the trees.

Once outside it was like the cold wind has frozen my muscle pains. Once inside again I needed to go to bed.

Time to bake some … waffles

Oh yess, I’m belgian so waffles are the best here! I really like to bake healthy waffles I can eat for lunch or breakfast. Today I ate some for diner with fresh fruit, peanutbutter and maple sirup.

A few days ago I promised a friend of mine I would sell here my Mickey waffles machine, which was laying here unused for more than 4 years now. And I had to try it to make sure it still works after that long time doing nothing! It still worked !

So time for some oatmeal waffles, the best ever ! Off course I also made some heart shape waffles beside the Mickey ones.

Here are the ingredients I used

And yess, that’s all you need for a great recipe for healthy waffles. Okay not vegan because of the eggs, but you can replace them.

You need :

200 grams of oatmeal

300 ml of rice milk

2 eggs (not the biggest ones)

1 tbsp of backing powder

2 tbsp of honey

1 theespoon of vanille extract

coconut oil for the waffles machine

How to make them ?

blend the oatmeal very fine like flour

put the egg white in a separate bowl and mix it

take another bowl to put all the ingredients in (oatmeal flour, rice milk, honey, vanilla, egg yellow and baking powder)

Mix all those ingredients together

Add the egg white with a spoon

put on the waffle machine while the dough is resting a few minutes

put on the coconut oil on the machine and than the dough

bake the waffles till golden brown and ready

Moment after the baking … PAIN

Oh yess, after I baked the waffles, all of them, it was over and out for today. I couldn’t move my arm after eating some waffles.

So here I am now, in bed trying to make todays blogpost and finish it.

It’s so unfair that I’m having all that pain and my doctor is just saying ” it’s not that bad, get over it, and wait another month”.

Last month I had to take medication for 2 months, but after taking them a month it all is getting so much worst 😥

I really feel like an 82 year old women, and not the 32 year old that should have energy to rase kids, have a fulltime job and still is going out !

I have a beautiful life now and feeling so happy (after some really bad years) but all that pain is so hard to deal with rightnow. I want to do stuff, I want to go to the Christmas marktet or just prepare a meal after a workday. But NO, after a workday I’m just dead, so dead !

Tomorrow I have to work a full day, preparing the store for the Christmas and year end sales that are coming end of this week. So tomorrow night, I will have so much pain again. Not normal, but my doctor says it’s not that bad enough grrr.

I’m ending my blog here, going to see if there’s a Chrismas movie on Netflix that I haven’t seen before.

I usually train in the morning, so I’ll have oatmeal for breakfast an hour before heading to the gym. A green smoothie made with a 2:1 ratio of vegetables to fruit helps me work up an appetite post-workout so I don’t end up overeating for lunch and dinner. It’s a good way to make sure I get my daily recommended vegetable intake, too.

How do you convince yourself not to skip a session?

 Favorite exercise gear?

I wear sweatpants and a pullover hoodie to train sometimes, especially when preparing for a photo shoot, as it helps my body warm up faster and reduce water retention. It also helps me get the most out of my training so I don’t need to spend more than an hour in the gym. Sweating excessively always forces me to drink a ton of water, which helps eliminate toxins and is extremely beneficial not just for recovery, but also for the skin.

My favourite Contigo water bottle—I have about four in different colors and my boyfriend is trying to stop me from buying more! Adidas miCoach Fit Smart watch, Polar heart rate sensor chest strap, either my Jabra Move headphones or JBL Bluetooth speakers—depending on whether I’m training at home or at the gym—iPod Touch, yoga mat, and a towel.

Combine that with resistance training, which tones the body to increase lean muscle mass and helps create lifted, taut-looking skin. Start with a sun salutation for three rounds and then work on toning the body with weight-bearing exercises such as squats, lunges, and overhead presses. I like to end my workout with Dhanurasana or bow pose, as it lifts and stretches the entire body.

If you could trade bodies with anyone, whose would it be?  Alicia Marie is a celebrity fitness guru who has the body of a comic book superheroine. Think Wonder Woman. 

What is your definition of beauty?  It is in our weaknesses that we truly find our strength, and to me, that’s how beauty is defined. I honestly feel most beautiful when I’ve just crushed a punishing workout and am dripping in sweat. The feeling of being unstoppable is like no other.

“After graduating, I knew I didn’t want a nine-to-five job,” Samantha Rodriguez—who goes by @sambierodriguez on Instagram—declares with conviction. “Since I was already hustling in college, I felt like I could continue that path.” Arriving at this shoot carrying a Nike duffel bag, and displaying a perky disposition despite the late afternoon call time, Rodriguez is one of those people with a seemingly infinite pool of energy—the kind that makes you feel a tiny bit guilty because it’s been a while since you were anywhere near a treadmill. But her enthusiasm is contagious, and hearing her talk about that post-workout high, you can’t help but see fitness as something that’s, well, fun.

Aside from being a Nike Women’s ambassador, she organizes The Organic Market in Bonifacio Global City and is the country manager of GuavaPass, an integrated fitness app that curates the most exciting fitness classes around the metro and provides access to several studios through a single membership. “It’s actually perfect for me and other people who get tired of the same workout,” she says. “Today I could do boxing, tomorrow I’ll try Pilates, and then CrossFit the day after.” She also points out that changing up your routine prevents your body from hitting that dreaded plateau.

Staying true to the spirit of shaking up her fitness regimen, Rodriguez recently ran a 20k race that traversed the Cavitex Expressway: “It’s easy to wing a 10k but winging a 20k, you will definitely pass out two-thirds of the way.” She enlisted her aunt, a fellow athlete, to help her prep, and was happy to report that she survived.

What’s your fitness activity of choice?  

I honestly don't have just one fitness activity. I love changing it up! Boxing, cycling, yoga, circuit... that’s why GuavaPass is perfect for me because it allows me to switch up my routine and take all the different classes.

Do you have a pre-workout routine?

I pick out a cute workout outfit for the day! It’s a real motivation for me when I feel like I look the part.

Best thing to eat before and after a workout?

I wouldn’t suggest eating much right before a workout because you might get a tummy ache or start to feel sick. Personally, I love using coffee as a pre-workout energy booster. After working out, protein is always your friend! It’ll help with those sore muscles.

How do you convince yourself not to skip a session?

I usually book it on my GuavaPass app in advance. Once you book it, canceling it last minute means a penalty. This system seems to really work for me when I’m feeling lazy. But for the most part, I’ve gotten to the point where I really try to make fitness a part of my lifestyle. Once that habit is formed, I can’t help but crave that post-workout endorphin rush. “I regret working out”—said no one ever.

Favorite exercise gear?

Nike by far! The amount of technology that goes into its products is unparalleled. With workout clothes, quality is a big determining factor for me. Because we use them for strenuous activities and wash them so often, quality workout clothes that can withstand multiple washing and stretching without fading or getting worn out right away are a big deal for me. All my sportswear still looks and feels brand spankin’ new.

Workout essentials?

A cute outfit. When running, my Samsung GearIconX wireless earphones. And a water bottle. You can’t hydrate enough in this heat!

Can you name workout routines that are good for your skin?

I think all workouts are good for your skin because they help you sweat out all the toxins in your body. But I guess my skin advice is to always make sure that you work out with a very clean and newly washed face since your pores tend to open from the sweating and the heat. So try to keep dirt and dust away from your face before and after a workout.

If you could trade bodies with anyone, whose would it be?

Oh gosh. I love my body! I don’t think I’d trade it for anyone else’s. I used to be insecure about it and I still have my insecurities sometimes, but I’ve worked so hard to take care of it and mold it into something I feel confident and proud of. Now “Fitspirations” who inspire me, I have a lot. Nike Master Trainer Kirsty Godso (@kirstygodso) is one of my favorites. She’s just so lean and strong!

What is your definition of beauty?

The most beautiful thing a woman can wear is a smile. Beauty is truly an aura that radiates from the inside, something that shows when you’re genuine, generous, and confident. And as much as I strive to take care of the physical aspect of my body by feeding it good food and working out regularly, I try to pay just as much attention to my mind and soul. As cliche as it sounds, it’s what’s on the inside that counts!
