Today I decided to make some hummus. It was my second time and so worth it. I paired some of it with carrots and had a nice snack.

I liked the simplicity of this recipe. It used most of the chickpea liquid. It was nice just throwing it all in the food processor to make it.
I also topped with paprika but mixed it up to spread it out.
I still want to try making different types of hummus one day.

This is one of my favorite dishes. It's super easy to make with limited ingredients. The dish is called marry me chickpea. It has garlic, butter, seasonings, sundried tomatoes, chickpea, broth, heavy cream, Parmesan, and basil. Comes together fast and is so fulfilling.

Chickpeas have become one of my favorites to cook with. This dish also made me love sundried tomatoes and now I eagerly eat them. I used to struggle with tomatoes a lot, but I've gotten to love them in different formats.
This is my go to meal when I don't have the energy to cook too long or think much about it. Plus it has so many good nutrients.

This weekend I decided to pull out a new favorite from last year: potato leek soup. It's like a soup version of mashed potatoes but so much better.

For mine, I used 2 lbs of Yukon Gold potatoes. They cook really well and are so tasty. I also use way more garlic than it calls for and it comes out great every time.
The immersion blender is one of my favorite tools for my kitchen now. I love a good blended soup.

Almost forgot to photograph this one because I was so hungry. This was what was left for my lunch the next day. I found this recipe sometime last year and it has been a solid win every time.
If you love salad, then this kale and quinoa salad is a must.
For mine, I do only 1/4 cup of quinoa, only one bell pepper, use maybe a container of the tomatoes (usually a little less), and I chop everything pretty small to make it easy to eat. It turns out beautifully, though.
I was struggling this weekend to drum up the energy to cook, so I fell back on a familiar recipe. I was eager to make it when Sunday rolled around and was super happy to have leftovers for my lunch the next day.
Hopefully, this weekend I'll have the motivation to cook more, but we'll see. Some weeks can be tough and that's okay.

Last week I found a delicious new soup recipe that I'll be making again. This is an easy vegan recipe with so much flavor packed in. Get your veggies and spices ready for this one.

Love and Lemons is one of my favorite sites for new recipes and I was excited to find a new soup last weekend.
This recipe is also nice because it doesn't call for broth, so I got to make it truly vegan. I usually have to use chicken broth in recipes due to a mushroom allergy so I love finding recipes like this.
Maybe next time I'll use my immersion blender and make it a blended soup. That could be fun. I love blended soups.
Now to find stuff to make this weekend or take a break. The self care cooking adventures continue.

Hello Tumblr! This account was previously on Instagram but I removed it due to a disdain for the Oligarchy and people like Zuck.
This blog will be filled with posts of yummy food photos made by me. It's a way for me to chronicle my cooking and motivate me to try new things. I had a blast doing so on Insta and can't wait to share even more here.
I plan to also share some recipes I find to go with the things I cook. Hopefully, it helps others who struggle with cooking.
One big thing you should all know about me is that I love soup and also chocolate. I'm trying to cook vegan or vegetarian most of the time, with a rare meat dish thrown in every few months or so (if that).
I can't wait to share with everyone! Let the self care cooking adventures begin.
