Ingredients: 1 tri-tip steak 2-3 pounds. 2 tablespoons olive oil. 3 tablespoons soy sauce. 2 tablespoons Worcestershire sauce. 2 teaspoons garlic powder. 2 teaspoons onion powder. 1 teaspoon smoked paprika. 1 teaspoon black pepper. 1 teaspoon dried thyme. 1 teaspoon brown sugar. Wood chips for smoking.
Instructions: Preheat your smoker to 225F 107C using your favorite wood chips for flavor. In a small bowl, mix together olive oil, soy sauce, Worcestershire sauce, garlic powder, onion powder, smoked paprika, black pepper, dried thyme, and brown sugar to create a marinade. Pat the tri-tip steak dry with paper towels and then generously coat it with the marinade, ensuring it covers all sides of the meat. Let it marinate for at least 30 minutes or up to 4 hours in the refrigerator. Remove the tri-tip from the refrigerator and allow it to come to room temperature while you prepare the smoker. Place the marinated tri-tip on the smoker grate and insert a meat thermometer into the thickest part of the steak. Smoke the tri-tip at 225F 107C until the internal temperature reaches your desired level of doneness 135F/57C for medium-rare, 145F/63C for medium, typically taking 1.5 to 2 hours. Once done, remove the tri-tip from the smoker, cover it loosely with aluminum foil, and let it rest for 10-15 minutes before slicing against the grain. Serve the smoked tri-tip steak slices with your favorite sides and enjoy!

Instructions: Preheat your grill to medium-high heat. While the grill is heating, heat olive oil in a skillet over medium-low heat. Add the thinly sliced onions to the skillet and cook, stirring occasionally, until they become caramelized and browned, about 20-25 minutes. Remove from heat and set aside. Season the ground sirloin with salt and black pepper to taste. Divide it into 4 equal portions and shape them into burger patties. Put the pork shoulder in a big plastic bag that can be closed again and again, and then pour the marinade over it. Put the bag in the fridge for at least four hours or overnight, turning it every now and then. Get your grill or smoker hot, about 250F 120C. Take the pork shoulder out of the sauce and let it cool down at room temperature. Slowly roast the pork shoulder on a smoker or grill for about 6 hours, or until the meat is soft and the internal temperature reaches 195F 90C. To make the Mojo Sauce, mix 1/2 cup of the marinade with more minced garlic, salt, and pepper to taste while the pork is roasting. Take out of the heat and let the pork rest for 15 minutes. Then, use two forks to shred it. Put Mojo Sauce on the side and serve the pork shreds. Enjoy your pork shoulder cooked in the Cuban style!
