Hey guys!
So I’m an avid, yet clumsy baker. I like to experiment and also spend half my time running to the bodega for more ingredients. It was Haele’s idea for me to bake some “faerie cakes” for the Wicked Lovely episode, and of course they had to be Summer Court and Winter Court themed!
Summer Court Cakes
(honey cupcakes with honey cream cheese frosting)
For this one, I basically used this recipe exactly, and they were so good. I want to put honey cream cheese frosting on everything, for the rest of my life, basically.
Winter Court Cake
(chocolate cake with lavender frosting)
This one was a little different! I’ve made chocolate cake a bunch of times, but wanted to make this one extra moist.
I used this recipe for the cake. I had to use white vinegar in milk for the buttermilk, which sounds gross but it worked great! I also replaced the coffee with boiling water. The batter was basically a liquid, but it was really moist once it was baked!
The frosting was a bit more complicated. It was one big, messy, and in the end delicious experiment. I could only find recipes Lavender icing, but I really prefer buttercream, so I made lavender milk an added it to a typical buttercream recipe.
Ingredients
2 tablespoons milk
1 tablespoon dried lavender
3 cups confectioner’s sugar
1 cup butter
violet food coloring (optional)
You only really need 2 tablespoons of lavender milk, but my suggestion would be to make extra. Boil the milk and lavender in a small saucepan. As soon as it starts to boil, remove from heat and strain. I used a loose leaf tea strainer and pressed the milk out of the lavender with the back of a spoon.
Then, mix the sugar and butter until creamy, for about three minutes. Slowly add the lavender milk. This is where it’s tricky. Add enough to taste the lavender but not too much that you loose the fluffy consistency of the frosting.
I also mixed a little red and blue food coloring so it’d be light purple, and sprinkled some lavender on top!
