Dinner is prepped! It’s Wednesday again and I am working til 8pm! I had so many things on my to-do-list for this morning but it did not turn out as planned...a couple nights ago a pipe broke in our ceiling so yesterday we had only cold water as the plumber had to go find the right pipe! Then this morning, due to water damage, our oven/stove no longer works 🙈 I wanted to bake some cupcakes to bring to work tomorrow for a mini bday celebration...and prep some quinoa and make oats on the stove etc...couldn’t do any of that! But hubby and I will go find a new stove/oven tonight and then let the baking begin! 🤣 it’s going to be a longggg night! Who else loves peanut butter? It’s probably my all time favourite thing to eat....on bread....in oats...in smoothies...as a dip for apple slices...on its own! Chicken Fajita Bowls for dinner! This was so good and SO easy, makes for the perfect weeknight dinner! I cut a couple chicken breasts into strips and sautéed them in a pan with some low sodium fajita spice. I also sautéed green and yellow peppers and separately some corn kernels and red kidney beans! I added all these in a bowl and added some fresh cut tomatoes and 1/4 avocado slices and fresh cilantro! There are so many times where I overthink going “out” on a work night! Yes, hubby and I are both working early tomorrow morning but my brother and sis-in-law invited us to go up Burj Khalifa with them tonight! Guys we only live once!
