Tomato Pie Homemade by yours truly! #nofilter #foodie #tomato #pie #tomatopie #savory #homemaker
Tonight I decided to make one of my favorite savory pie dishes for dinner, Tomato Pie. I got the original recipe/idea from Paula Deen, although I have transformed it into my own and trust me, it is amazing.
This pie has the most intense bursting flavor with every bite, I've even had tomato haters LOVE this pie. Now that is impressive!
Tomato Pie | Ingredients
Prebaked Pie Crust
4 larger size tomatoes
1/2 medium red onion
Maple smoked bacon thick sliced
Bunch of green onions
Basil Leaves
1 cup cheddar
1 cup mozzerella or a mozz mix
1 cup mayonnaise (light or full)
Prep Work:
Preheat Oven to 350F
Chop onion into relatively small pieces
Chop green onions
Chop basil leaves
Chop bacon into small pieces
Blend the mayo and cheese together for a topping
Throw pie crust in the oven for a couple minutes until it is slightly browned. I always wrap the top crust area with aluminum foil throughout the entire recipe in order to keep it from burning.
Cut an 'X' on the top area of each tomato and throw them into a pot of boiling water for about 30 seconds or until you can see the skin peeling back. Take the tomatoes out and throw them into ice water to cool them down and keep them from cooking down.
Peel the tomatoes, slice them and then layer them into a colander and sprinkle them with salt. Let them drain for about 10 minutes to get most of their moisture out. We don't want to soggy up our crust!
Take the pie crusts out of the oven, let them cool. While you wait for them to cool, caramelize the onions and throw the bacon on the stove as well. Once those are cooked you are ready to build your pie!
Grab your crusts, begin by layering with tomatoes, top them with bacon pieces, green onions, caramelized onions and basil. Do this for about 3 layers, depending on the depth of your pie crust.
I always end my layers with the bacon, onion and basil leaves. Top the pie with the mayo/cheese mixture, spread evenly and throw this puppy in the oven!
30 minutes at 350F or until you see a night browned color. Take it out, let it sit for a bit and then dig in!
Serve Warm!

I've always been interested with giant squids - mainly because they scare the living bejesus out of me. Could you imagine just swimming around and have this 30 foot long squid swim by you?
I guess you could be positive and think about how much delicious fried calamari you could have for lunch ^_^

Wiśniówka
Not the particularly best day to be standing on an unsteady ladder in a garden, today my father and I teamed up and picked our cherry tree naked.
These cherries in our back yard are not the delicious, deep burgundy, plump cherries from up by Traverse City that you can down an entire crate full ( and regret completely later on when you can't get out of bed ). These cherries are smaller, bright red and have a bitter kick.
So why on earth would be bother with these lame cherries when we live in Michigan and can just get delicious cherries from up north? We bother because of ‎'Wiśniówka'!
'Wiśniówka' is a Polish cherry - let's go ahead and describe it as a- liqueur. It is made with sun soaked cherries and lots of vodka! Being 100% Polish, this is mine and my families alcoholic drink of choice ( besides vodka of course :0) ).
'Wiśniówka' is usually thinner than the average liqueur you can buy at the store to mix in with your drinks, although since you make it at home, the thickness is dependent on the maker. You can drink it as a small shot or even sip it from a nice crystal glass- but be careful- this drink tastes so good and can take you pretty far!
I am ecstatic to try this years batch, since last year our cherries were all eaten over by birds! This is one of my favorite Polish alcoholic drinks and I opt to share it with as many people as possible!
